Instant Pot Chicken & Rice – Campbell’s Casserole You Love!

I am using an 8 quart Instant pot but you can use a 6 quart. I personally have an Instant Pot and so far I am loving it. If you have been putting off trying an instant pot, I highly recommend going ahead and biting the bullet. I love pressure cooking when I am short on time.

It is perfect for frozen food or meals that normally take a while. You can toss everything in and have dinner ready in no time at all. Those days when you forget to take something out of the freezer or wait until the last minute for dinner, the instant pot is your saving grace.

I am not exaggerating when I say it truly has changed meal time around here. My instant pot has become my favorite kitchen appliance.

Cooking With Frozen Chicken Breasts

This recipe can generally be made with frozen chicken breasts without adding any extra High Pressure cook time.

The only exception would be if multiple chicken breasts are frozen together in a solid piece or if they are particularly thick at any part.

To cook the chicken from frozen, skip the browning step. Saute the onion and add the chicken broth and spices. Spread the frozen chicken breasts out as best you can and pressure cook as directed.

After youve released the pressure, dice the chicken and and return it to the pot. Select Saute and cook for 1 to 3 minutes until the chicken is cooked through. Add the cornstarch slurry and continue as directed.

Just a note on timing: Frozen chicken breasts will take longer to cook, since it will take longer for the pot to come to pressure.

How Chicken & Rice Was Made In The 50s

Instant Pot® Easy Chicken and Rice

My mother, Christene Kirchner, and her sister Lois Epps used to make an easy chicken and rice dish for a quick summer meal. It was one of those Campbells soup casserole dishes that were everywhere in the 1950s.

Early in my married life, I started making this dish but it never seemed to come out right, the rice was either too hard or too soft. Until I discovered I could make this dish hands-free and almost perfect is my Instant Pot.

Spanish & Mexican Chicken And Rice

Spanish and Mexican rice may often be used interchangeably on account of their wide variety of uses as side or main dishes and burrito or enchilada fillings. However, these two are actually different and well help you distinguish the different nuances to impress your friends or family!

Spanish rice is often identified as a more yellow rice because of the saffron or turmeric used with milder flavors from vegetables. Mexican rice uses spicier flavors such as jalapeños, green chilies or cumin and may be made with a combination of tomato sauce and water or broth for a rich red color.

Notes And Adaptations For Creamy Instant Pot Chicken And Rice:

  • I use homemade cream of chicken soup, because its a cinch to make and it really adds a lot of flavor. However, you can substitute a can of cream of chicken soup mixed with a can of water if you prefer.
  • I liked having the shredded cheese melted into the chicken and rice, but if youre counting calories, you can omit the cheese and it will still be very flavorful.
  • If you want to add a topping , just transfer the chicken and rice mixture to a baking dish after it has cooked, top as desired, and pop it in the oven until the topping is crisp or melted.
  • Leftovers can be frozen! Just transfer any leftovers to a freezer safe container, cool to room temperature, and freeze.
  • You can substitute pulled rotisserie chicken if youd like .
  • I wouldnt recommend using brown rice, because it takes a good bit longer to cook than white rice. The white rice has a similar cook time to the chicken, making them ideal to cook together. If you cook the chicken and brown rice together, the chicken will be overcooked by the time the brown rice is finished. Youd have to cook them separately, and that kind of negates the convenience factor of this meal!

Use Condensed Soup If You Can Get It

So for these photos, I used a different manufacturers can of cream of chicken soup for these pictures. .

However, the soup I used here was not condensed so the sauce is slightly different and less thick than usual. So as I mention in the recipe, if you use a non-condensed can of soup, you may want to thicken the sauce before serving, using the optional cornflour mentioned in the recipe.

So my recommendation is, if you can get your hands on some Campbells condensed cream of chicken soup, please do use that. It is just better, and will give you a thicker and tastier sauce in your casserole! Their soups really are the best!

Chicken and rice casserole

I have used chicken breast in this recipe, but if you wish you can also use chicken thighs and cook the chicken on the bone if you prefer. It is up to you.

The secret to getting the nice fluffy rice in the photos is to rinse and soak your rice before you cook it. Check out some tips in my pilau rice recipe, just leave out all the added ingredients and add only a pinch of salt, but follow the same process of rinsing and soaking.

    What I love about Instant Pot recipes is that theyre all basically dump it, set it, eat it!

    Specifically, Ive found that casseroles do much better in my Instant Pot when the meat is on the bottom and the rice is layered on top. This way, the rice doesnt burn before the chicken is cooked through .

    I know it sounds opposite of how youd make a casserole in the oven, but it is foolproof. I also reduced the amount of liquid a bit, since theres less evaporation with pressure cooking.

    We used a 6 Quart Instant Pot to make chicken and rice. This recipe moves fast so have all of your ingredients prepped and ready before you turn on your instant pot. Chop your onion, grate or your carrots , half your garlic head.

  • Set your instant pot to sautee on high heat, add 2 Tbsp oil and 2 Tbsp butter.
  • Add onion, carrots, and salt and saute 5 min.
  • Add chicken and salt and saute 5 min.
  • Pour in broth and rice and stir. Place halved garlic head cut-side-down.
  • Cover with lid and set the lever to sealing position. Cook on manual high pressure 10 minutes with manual pressure release.

    For reference, this is the pressure cooker I have and use for all recipe creations.

    Adding vegetables to this chicken recipe gives it great flavor, texture, and the more I include them in our dinners the more my kids like them. Of course you can omit if you wish.

    Seasoned with just some salt and black pepper, its so easy to throw together. I use frozen vegetables to make things easier.

    Now I generally use boneless skinless chicken breasts diced into bite size pieces. Its the best way for this version, or our Instant Pot teriyaki chicken and rice dish.

    If I find chicken thighs on sale I would use those instead. I find that thighs have more flavor and are more tender than the latter.

    • I get lazy though and if bone-in is all I can find I will opt for whatever is boneless and a decent price.
