Instant Pot 3-Ingredient Rump Roast

The beauty of this isI mean there are many but one specificallythe drippings create that wonderful gravy. It will cook in it the whole time AND then you can thicken it up and serve it on the side too. I mean as is is pretty delicious but pressure cooker gravy really takes this over the top.

  • Start off by pouring 2 cups of beef broth into your pot with meat. Sprinkle with dry onion soup mix packet.
  • Close lid and set steam valve to sealed position. Cook on high pressure for 1 hour 30 minutes followed by a 15 minute natural release.
  • do not quick release or pot roast recipe will not nearly be as moist as youd want this to become
  • Remove the lid and your cooked roast. Cover with foil to keep it warm. Turn pot to saute and add dry gravy packet into liquid, whisk together until smooth. In a small bowl whisk together cornstarch and 1/4 c. water until smooth.
  • Pour in this cornstarch slurry and stir. Allow to thicken stirring slowly in pot. Then turn off and pour into gravy boat.
  • Cut beef after it has rested, serve with gravy.
  • You could chop into smaller pieces and put back into the sauce. This way is great to serve on slider buns. Season with salt and pepper when served and enjoy your tender cuts of meat.

This great recipe is done in 2 hours flat with prep and resting time. If you do have leftovers you can save them quite well to enjoy for the next 2-3 days. Only slice the pieces you will eat immediately, leave the rest whole.

What Makes This Pot Roast Recipe Different From Others

    • Quick. This Instant Pot Classic Pot Roast recipe gives you all the yumminess of a classic, juicy beef pot roast without having to cook it low and slow for hours on end. Thanks to the convenience of pressure cooking , you can get the same end product of cooking a roast in the oven or slow cooker / crock pot for 3-6 hours in under an hour.
    • Delicious. And let me tell you, this Pressure Cooker Beef Pot Roast with fresh vegetables tastes so very good! It’s juicy, savory, and fall-apart tender.
    • Flavor. The veggies are perfectly cooked, and they are infused with so much flavor. Pressure cooking does such an incredible job of infusing the roast and veggies with an abundance of flavor, so much so that I couldn’t possibly imagine making a classic pot roast any other way.
    • Efficient. For starters I dont have you cooking the Instant Pot Pot Roast recipe as one big hunk of meat. Most of the other recipes ask you to cook it for over an hour, only to have you shred the meat at the end.
    • To me cooking the beef roast as one big hunk seems like a highly inefficient way how to cook a roast, not to mention the likelihood that the outside of the meat gets way overdone compared to the inside of the meat.
    • So I think its a lot easier to just go ahead and cut the pot roast meat kind of small to start with. You can have pot roast without having to cook the meat forever if you are OK with cutting it up and shredding the meat before you serve it.

    Now let’s get to cooking!

Why The Instant Pot Is The Best For The Pot Roast

Ive tried a few different methods for cooking a pot roast, but I always come back to my Instant Pot. The pressure cooked version does the best job at infusing flavor and moisture into the entire roast. In my experience, once you find the right cooking time, the pot roast comes out predictably tender each and every time. A pressure cooked pot roast is also a huge time saver when compared to an oven braised or slow cooked version. No more starting your roast cooking 8-12 hours before dinner time! Plus, I just love the fact that you can press a button and walk away until dinner time!

    • Twine: Make sure to remove the twine, if any. It might be preventing meat to become more tender.
    • Large roast: If you have a larger 5 lb roast, I would recommend cutting it in half and cooking it for the amount of time you would a 3 lb roast. It will come out more flavourful this way.
    • Set Sauté to High: For the best chance at a good sear, make sure Sauté is set to hottest. Adjust to select between Less, Normal, and More. For the hottest setting, we want More.
    • To prevent veggies from becoming mushy: Wrap them in parchment paper instead of throwing them into the pot. I am not a fan of cooking in aluminum foil for health reasons but you can.
    • How to cook veggies separately from roast: You can pressure cook potatoes and carrots after in the sauce for 10 minutes on High and Quick Release. Or just roast them in the oven at 425 degrees F and pour the gravy on top after.
    • Slice meat against the grain: I know some people like to shred the pot roast but we like to slice it. We find it juicier and meatier, almost like steak.
    • Small pressure cooker: You could probably fit about a 3 lb roast into a 3 quart Instant Pot.
    • Frozen roast: Technically, you can cook a frozen roast but it doesnt mean you should. You will not be able to sear it which is a major part of this recipe. If you were going to cook from frozen, I recommend using the same amount of time BUT using a Natural Release completely.

All Cures of meat can become more tender in this environment, which is why pressure cooking is such a great way to cook meat. You can get the same results in less time than using a slow cooker. For example, you might need to put a pound of ground beef into a 12-inch cast iron skillet, add 1/2 cup of water, cover, bring to high pressure, cook for about 5 minutes, turn off the heat, let the pressure release naturally, remove the skillet from the pot, place the meat back into the pan, repeat the entire process until all the liquid is gone. To begin making Instant Pot Venison Rump Roast with Potatoes and Cherry Gravy I turned the Instant Pot to the Saute Normal Function for 5 minutes.

Then I added some olive oil and threw in some chopped up yellow onion.

Next I added in the venison rump roast.

I seared the venison roast on all sides before removing it to deglaze the Pot.

After the venison roast was removed I poured in beef broth and deglazed by scraping any brown bits from the bottom of the Instant Pot.

This is a very important step to avoid the Burn message later when the Pot is coming to pressure.

Once deglazing was finished I poured in one can of bing cherries and juice. I also added a bit of black pepper.

    • Make dry rub: Combine seasonings on a large plate and stir together.

My favorite pot roast dry rub is a combination of salt, pepper, thyme, rosemary, onion powder, garlic powder, and paprika. See optional add-ins and variations for other seasoning combinations to try!

    • Season roast: Dip roast in a large shallow plate with homemade dry rub making sure all edges are covered well. It will create a delicious outer crust.
    • Sear the meat on all sides: On the Instant Pot, press Sauté and wait until the display says Hot. Only then add oil and sear for 3-4 minutes per side. I would not recommend skipping this step like you can with Instant Pot pulled pork because it adds a lot of flavor to a pot roast.
    • Cook onions and deglaze the pot: Add the slices from 2 large onions and sauté for 5 minutes or until fragrant. Then add beef stock, red wine, and vinegar to deglaze the pot. Use a wooden spoon to scrape up the brown bits on the bottom. You want to avoid the Burn notice but you also want that extra flavour!
    • Put the roast back and add mushrooms: Once youre done deglazing, press cancel. Add the roast back into the pot and lay the mushrooms on top of the roast.

When Do You Add Potatoes And Carrots

For a complete meal, potatoes and carrots always pair perfectly with a tender pot roast. However, I do not recommend cooking small potato chunks or baby carrots the entire time you cook your pot roast, as your vegetables will turn to mush.

Instead, it is best to cook your potatoes and carrots AFTER the roast has cooked, when the meat is resting. I recommend that once the roast has cooked, remove it from the inner pot. Tent with foil to stay warm while the vegetables cook. Add in the potatoes and carrots and set the cooking time to 10 minutes on high pressure. Once the potatoes and carrots are cooked, you can slice up the roast and serve with the perfectly cooked vegetables.

Alternatively, you can cook your Pot Roast for 10 minutes LESS than the total indicated time. So for a 3-pound fresh roast, cook for 50 minutes on high pressure. Then let the pressure release naturally for 10 minutes. Open up the inner pot and add the potatoes and carrots to the pressure cooker. Seal the pressure cooker and cook for high for an additional 10 minutes. Allow the pressure to release for at least 10 minutes naturally, then do a quick release of any remaining pressure. Let the roast rest for 5-10 minutes before serving with the potatoes and carrots.
