Instant Pot Chicken and Rice | One Pot – 30 min Dinner

You can use any kind of chicken here: chicken breast, thigh meat or chicken tenders. We prefer chicken tenders because they require very little prep , and reheat really well. They are also the most tender. We often use the chicken we have on hand.

The best rice for this recipe is jasmine rice . You could also use Basmati or Texmati without adjusting the cooking time. Brown rice like we used in our Instant Pot Rice with Beef recipe, would require a longer cooking time.

How To Make Chicken And Rice In Instant Pot

  • Saute onion and garlic first, just until fragrant. I like to do so under a hood fan with a stove off, of course.
  • Press Cancel and add dried herbs: Thyme, oregano, cumin and cook another 30 seconds. This step will make them fragrant.
  • Add remaining ingredients in the following order : Chicken, carrot, rice, water, salt, pepper and bay leaves. Do not stir to prevent Burn.
  • Cook on high pressure: For 10 minutes with white rice, for 22 minutes with brown rice.
  • Release pressure using Quick Release, so pretty much right away.
  • Stir gently and discard bay leaves.

How To Make Instant Pot Chicken Legs And Rice

Brown the chicken legs: Sprinkle the chicken drumsticks with salt, paprika, and garlic powder. Heat 1 tablespoon of olive oil in an Instant Pot set to Sauté Mode – High until the oil starts to shimmer. Brown the drumsticks skin side down in 2 batches, about 3 minutes per batch. Transfer the drumsticks to a bowl after browning.

Sauté the aromatics: Add the diced onion, bell pepper, and smashed garlic to the pot, sprinkle with ½ teaspoon of salt, and sauté until the onions soften, about 5 minutes, stirring and scraping with a flat-edged wooden spoon to unstick any browned bits from the bottom of the pot. Stir the tomato paste into the onions and sauté for 1 minute, often scraping the bottom of the pot.

Add the wine and rice: Stir the rice in, coating it with the onion-tomato paste mixture, then add the wine. Simmer the wine for 1 minute or until it evaporates, often scraping the bottom of the pot.

Everything in the pot: Stir in the chicken broth , then scrape the bottom of the pot one last time to ensure nothing is sticking. Set the chicken leg pieces on top of everything.

Pressure Cook for 4 minutes with a 10-minute natural release: Lock the lid and cook at high pressure for 4 minutes in an electric or stovetop pressure cooker. . Let the pressure come down naturally for 10 minutes, then quick release the remaining pressure.

Long Grain Vs Short Grain Rice

I thought it might be the long-grain rice, too. Maybe short-grain rice releases less starch, so it doesn’t stick and burn. In my testing, the rice type didn’t affect the burn warning. Once I switched to the 2:1 ratio of liquid to rice, I could use any rice variety I had on hand. That said, I liked the results with the short grain rice a little better – it comes out a little creamier, like a risotto – but it’s a subtle difference, and only one of my three taste testers noticed.

    We used a 6 Quart Instant Pot to make chicken and rice. This recipe moves fast so have all of your ingredients prepped and ready before you turn on your instant pot. Chop your onion, grate or your carrots , half your garlic head.

  • Set your instant pot to sautee on high heat, add 2 Tbsp oil and 2 Tbsp butter.
  • Add onion, carrots, and salt and saute 5 min.
  • Add chicken and salt and saute 5 min.
  • Pour in broth and rice and stir. Place halved garlic head cut-side-down.
  • Cover with lid and set the lever to sealing position. Cook on manual high pressure 10 minutes with manual pressure release.

    Can I Make This Without Cream Of Mushroom Soup

    I personally love cream of mushroom soup, but many people dont like it. You can make this soup without any cream of mushroom soup it just wont be as creamy.

    If you want to make it without the cream of mushroom soup just leave it out and add a little extra chicken broth at the end to get your desired consistency.

    Leaving out the cream of mushroom soup will also make it gluten free.

    Either way you make it, this soup is comforting and delicious.

    Ingredients In Instant Pot Chicken And Rice:

    • Chicken thighs: I highly recommend chicken thighs, over chicken breasts, because I think they cook much better in the instant pot and are more tender and flavorful. If you want to substitute chicken breasts, cook on high pressure for 8 minutes with a 5 minute natural release.
    • Rice: I use regular long-grain white rice. . Be sure to rinse the rice before adding it to the instant pot to remove the starch, and help keep the rice from sticking to the bottom of the pot.
    • White wine: Ive used white wine in this recipe to deglaze the pan and add great flavor to the dish. The alcohol gets cooked out. If you dont want to use wine, just leave this step out and deglaze the pan when you add the chicken broth.
