  • Start by rinsing your cut of beef in cold water. This removes any excess salt from curing.
  • Next, combine the seasoning, onion, and garlic in your pressure cooking pot. Arrange the meat on the wire rack above the aromatics.
  • Then pour in a quart of beef broth. The broth should come at least halfway up the sides of the meat in your pot.
  • Now, simply seal the lid and cook on High Pressure for 90 minutes. After a 10 minute natural pressure release, you can switch the lever to do a quick release. When you remove the lid, be prepared for a fantastic release of delicious smelling steam.
  • Carefully transfer the meat to a resting area while you cook the potatoes, carrots and cabbage. The veggies have a 3 minutes cook time in the pressure cooker, so you wont have too wait long.

    • Remove onion with a slotted spoon and discard.
    • Drain off all but 2 cups of the cooking liquid. You can also strain the cooking liquid if desired to remove the pickling spices, I do not find that necessary.
    • Add in potatoes and carrots to cooking liquid.
    • Top with cabbage wedges that are still intact.
    • Cook for 5 minutes on high pressure.
    • Let pressure release naturally for at least 5 minutes before doing a quick release of any remaining pressure.
    • To serve, slice the brisket against the grain.
    • Serve with potatoes, carrots, cabbage, and whole grain mustard for dipping, if desired–my personal favorite.

    I adore corned beef and cabbage, and I dont just make it for St. Patricks Day. I make it year round! So, I was happy to adapt it to the Instant Pot. This Instant Pot Corned Beef and Cabbage recipe is based off of my old low and slow favorite corned beef recipe and is really very easy. It does take some extra time in the pot over a lot of every day type of recipes, but it is a lot less time than doing it the low and slow all day way.

    The secret ingredients to this Instant Pot corned beef and cabbage recipe are stout beer and beef stock. So many corned beef and cabbage recipes simply use water, and you can do that too if you desire, but adding beef stock and beer really ups the flavor.

    I used an Imperial Oak brewing company milk stout because I had a few cans of it in the fridge and it is super rich. The recipe calls for a cup, so with a 16 ounce can, I had a bit for myself to sip leftover! Yum! You can actually use any beer for this recipe , although I suggest choosing a malty beer over a hoppy/bitter one. Stout is perfect for that and, if you want to be traditional and go true Irish, you can use Guinness.

    I always buy a corned beef that is already seasoned or that comes with seasoning packet. Most do come that way, and it greatly simplifies things.

    Add the onion and garlic to bottom of the Instant Pot. No need to sear or saute anything!

    I slice my cabbage into 4 wedges, but you can also do eight.

    How To Cook Corned Beef And Cabbage Recipe Instant Pot

    Adding potato , carrot, and cabbage to an Instant Pot corned beef dinner is so easy.

    First, strain the cooking liquid after removing the corned beef from the pot, and discard any pickling spices and solids. Then, just add some of the strained liquid back into the pot with the vegetables, and cook on high pressure for 3-4 minutes, with a quick release.

    The flavor that the pressure cooker seems to infuse into the vegetables from the cooking liquid is great and I even like the steamed cabbage wedges.
