Instant noodles may be the perfect cheap food. Its good by itself, but there are always creative ways to transform it into something better. My favourite thing to do is to crack an egg into the pot while my noodles are cooking.

I started doing this after delicious Korean spicy soft tofu stew, or soondubu jjigae , became a regular meal in my dining out rotation. When they bring you the stew, bubbling hot, it always comes with a raw egg for you to crack open and drop in, which adds an extra layer of flavour and richness to the dish. Its so tasty, it got me thinking of other foods that could benefit from the same concept.

When it comes to noodles, I sometimes add a homemade soy sauce seasoned soft-boiled egg, or shoyu tamago, to my bowl, but I wanted the delicate creaminess of eggs in soondubu jjigae. So I thought why not do the exact same thing with my noodles at home? Heres what I do:

  • I put on a small pot of water to boil.
  • I add the seasoning to the water. I also might add a pinch of Better than Bouillon.
  • I add the noodles, then reduce to a simmer.
  • Once they soften slightly, I create a small opening in the middle of the entangled brick of noodles, then crack an egg right into it. This acts as a cradle for the egg so it doesnt instantly fall apart in your broth.
  • I add any other extras Id like, such as vegetables or sliced meats.

    How to make poached eggs in the InstantPot 7 in 1 pressure cooker

    The exact time can vary depending on the brand of tray you are using, how many eggs you’re poaching, brand of pressure cooker, and even altitude. For the egg bite tray, I use the Popfex brand. This brand is my favorite because it is more sturdy and the pockets are deeper.

    For me, if I’m cooking 4 eggs, I cook them for 4 minutes. More eggs will mean more surrounding heat which requires less cooking time. I suggest starting with 4 minutes then assess your egg. When the white is set, it’s done! If the white is partially clear and runny, cook it for another minute. With a couple of trial runs, you’ll soon know the exact cooking time for your pressure cooker and tray.
