Roasted chicken is great reheated in the oven or instant pot. It helps to crisp up the skin.

Youll want to be careful not to cook the chicken again though. Just heat the chicken until heated through.

If you cook the chicken again, its really common to have it dry out.

You can also simply cook the chicken in the microwave, but be sure to cook in very small bursts to prevent it from drying out.

I find tossing leftover chicken into another creamy recipe is a great way to use it. That way it doesnt dry out and I get an extra use out of that yummy roasted chicken.

Ingredients For Instant Pot Whole Chicken:

Whole Body Chicken: The star of the show! Pick up a whole chicken from the grocery store that is between 3.5 and 4.5 pounds. Youll need to pressure cook the chicken on high heat for 6 minutes per pound. Be sure the chicken is completely thawed before adding it to the pressure cooker for the best results and to ensure the chicken cooks through.

Apples :Because Im a fan of the combination of chicken and apples, I added some chopped apples to the pressure cooker this time around. They become very tender and flavorful and pair nicely with a bite of that crazy tender chicken.

If you arent into apples, feel free to skip them! You could do onion if youd like or just keep it simple and add nothing.

Apple Cider or Chicken Broth: Youll need two cups of liquid for the pressure cooker to do its job. I used apple cider for the liquid, but you can easily use chicken broth, beef broth or even just water if you dont have any juice or broth on hand.

Seasonings: Sea salt, paprika, garlic powder, black pepper, and dried parsley. This combination is so simple yet so flavorful! If you have onion powder on hand, feel free to use that as well. You can use any seasonings or rubs you like.

Instant Pot is an electric pressure cooker that gets the cooking comfortable and quick. While the traditional oven roasted chicken takes a considerably long time than this pressure cooker whole chicken.

First and foremost Instant Pot cooking is perfect and quick and no babysitting. Every single piece of meat falls apart from the bones and is cooked uniformly.     Ingredients For Roast Chicken Dinner

    When roasting a chicken you start with a blank canvas waiting to be sprinkled, smeared, and infused with flavor. Its important to season chicken well! Here is what you need:

    • Whole chicken these differ in size so you have to pick a whole chicken that fits in your pot and that will be sufficient for the number of servings you need. If youre using an 8-quart Instant Pot, you can get away with a larger bird. Free-range is always best!
    • Garlic and butter a combination made in heaven that will flavor your chicken from inside and out. You can use salted or unsalted butter here, adjust the seasoning if needed.
    • Herbs & Spices for the rub, we use a simple All-Seasoning Salt, which is a blend of salt with other spices and herbs, often garlic and onion powder, paprika and pepper. There are many store-bought blends of seasoning salt or all-purpose seasoning so pick whatever youre in the mood for as everything goes with butter and garlic. Mixed dried herbs are added as well you can do Italian mix, French or solo dried thyme or rosemary.
    • Potatoes you can use medium to large brushed potatoes such as Yukon Gold large potatoes can be cut in halves while smaller ones could be left whole but the idea is that they are all similar in size and they shouldnt be cut too small so that they dont overcook as everything is under pressure for the same amount of time.

    Season Chicken For Roasting

    • Peel the garlic. Thinly slice 3 cloves to insert under the chicken skin, smash 2 cloves to place inside the chicken and finely chop the remaining 2 cloves for the basting butter.
    • Sprinkle the inside cavity of the chicken with a teaspoon of seasoning salt and herbs and insert 2 smashed garlic cloves.
    • Using fingers or a spoon, gently peel the skin from the chicken breasts and slide a few slices of garlic underneath, maybe 3-4 pieces around each chicken breast and a couple of garlic slices under the wings.
    • Sprinkle and rub the chicken on both sides with the remaining seasoning salt and herbs and set aside.

    How Long Can Cooked Chicken Last In The Freezer

    As long as cooked chicken hasn’t sat out at room temperature for two hours or more, it can be safely stored in the freezer for up to 3 to 4 months.     I would not recommend rice, since the cook times dont match up. Your rice would most likely get very mushy. One vegetable that I have had luck with are small/medium red potatoes. The trick is to fit them around the chicken. They will get really soft, but they are still good. Larger/ thick carrots may work okay too. Everything else I have tried gets too mushy.

    How To Make This Instant Pot Roast Chicken Step By Step

    1. Combine all seasoning spices in a small bowl and set aside.

    2. Remove the giblets from the chicken. Stuff the chicken cavity with the lemon and onions.

    3. Rub the chicken with the seasoning spices, putting extra on top of the chicken.

    4. Put a metal trivet in the inner stainless steel pot. Add 1 cup water. Place the chicken on the trivet. The chicken should not be touching the water at the bottom of the Instant Pot inner pot.

    5. Put the lid on and close it shut. Make sure the valve is sealed. Set on high pressure for 30 minutes . When its done, allow the pressure to naturally release for 10-15 minutes.

    6. The meat will be really tender , so if you want it intact as a whole chicken to serve carefully remove from the Instant Pot and place on a serving dish. Garnish with parsley and serve with your favorite side dish.

    What Size Instant Pot Can I Use

    Thats the great thing, you can use any size. This will work for 3 quart, 5 quart, 6 quart or 8 quart. I have an 6 quart Instant Pot. With the smaller Instant Pots you may need to cook less chicken breasts at a time because you want to make sure they are in a single layer. Dont pile up the breasts, this could result in undercooked chicken.

    • Check that the chicken has reached a safe internal temperature of at least 165 degrees F in the thickest part of the leg, not touching the bone.

    Tips For The Best Instant Pot Rotisserie Chicken:

    • Cook the chicken for 6 minutes per pound and allow a 15-minute natural pressure release. Releasing the pressure gradually will ensure your chicken is fully cooked through and rested for the juiciest chicken. It also prevents foam from shooting out of the valve.
    • Weigh the chicken to ensure the proper cooking time . Overcooking the bird will cause it to fall apart and will make it difficult to transfer.
    • Make sure your chicken fits your instant pot size. Our 6 qt instant pot fits up to a 5 lb chicken. An 8 qt pressure cooker is better for the larger sized chickens.
    • Use a Trivet for even cooking and to help remove the chicken from the instant pot.
    • Broil the chicken for a crisp salty skin
    • Do not discard the drippings they make the best gravy to pour over your chicken.

    I love to make roasted whole chickens theyre economical, taste great and the leftovers make countless other delicious meals. I dont always have the 90+ minutes it takes to roast a whole chicken, so I tried cooking one in my Instant Pot and I am hooked! In just 30 minutes I had dinner on the table and it was a hit with the whole family!

    The first step to cooking a chicken in your Instant Pot is to mix together some spices to season your bird with. I like a combination of salt, pepper, smoked paprika, garlic powder and onion powder. You can also try a Mexican style chicken with chili powder, cumin, garlic powder and coriander there are so many flavor possibilities! The chicken is first browned in the Instant Pot, then pressure cooked for 25 minutes. I like to put together my side dishes while the chicken cooks. I typically make a simple pasta or rice and a green veggie to go on the side.

    Can I Cook A Frozen Whole Chicken In The Instant Pot

    For this recipe, a fresh or thawed chicken works best. You can cook a frozen whole chicken but it will take significantly longer and we found a thawed or fresh chicken will cook more evenly. Also, you wont be able to pour the flavored butter under the chicken skin. If you want to use a frozen chicken, a dry rub would work better.

    How To Set Time For Cooking Fresh Whole Chicken In Instant Pot

    As a rule of thumb cook for 6 mins for every pound . For eg if your chicken is 4 lbs you must cook for 24 mins . If your chicken is 5 lbs you must cook for 30 mins . The six minutes per pound cooking method works perfectly every single time. Make sure you use a weighing scale for accurate results and the instant pot whole chicken cooking time

    Let the pressure release naturally for 15 mins and then do a quick release. This yields the best tender juicy chicken.
