A Brief History Of Pressure Cooking
The origins of the pressure cooker can be traced to a 17th-century French physicist and mathematician named Denis Papin. Papin, who shared notes with such legendary brainiacs as Christiaan Huygens, Gottfried Leibniz, and Robert Boyle, is best known for his 1679 invention of the steam digester, the precursor to both the pressure cooker and the steam engine. Also known as the bone digester or Papins digester, the device was designed to extract fats and collagen from bones after extraction, the rendered bones could be ground into bone meal, to be used as a dietary supplement or fertilizer.
The steam digester consisted of a closed pot with a tight-fitting lid. As food and water heated up, the vessel trapped steam, raising the pot’s internal pressure. Papins initial designs didnt include any pressure-release mechanism, which resulted in various explosions early on. Fortunately, Papin subsequently invented a steam-release valve to keep such accidents from happening.
Over the next 200 years, intrepid minds refined the concept. But it wasnt until the 1930s that the pressure cooker finally made its way into the home kitchen, with the introduction of Alfred Vischers Flex-Seal Speed Cooker in 1938, and later a model from the National Pressure Cooker Company in 1939.

Acorn squash is similar to butternut squash, but its got an entirely different flavour. Its a bit nutty and a little less sweet, but it is delicious nonetheless. Its large cavity makes it fantastic for stuffing with sausage, meat, grains, and fall flavour infusions with dried fruits, fresh herbs, and more. Its also a healthy side dish. Personally, I love mine with a healthy spoonful of grass-fed butter and cinnamon.
How To Store Instant Pot Chicken
- Leftover cooked, shredded, or diced Instant Pot chicken can be stored in the refrigerator in an airtight container for up to 4 days or frozen for up to 3 months. Let thaw overnight.
- Shredded Instant Pot Chicken is IDEAL for meal prep. Make a big batch at the beginning of the week, divide into individual containers, then use it all week long.

For Instant Pot Mashed Potatoes:
- Begin with the recipe above. If you prefer to have your mashed potatoes without skins, make sure to peel the potatoes prior to cooking.
- When the potatoes are done the cooking, unseal the lid and add in your favourite mashed potato ingredients. You can reserve some of the water in the pot for mashing, or replace it entirely with milk/a milk substitute.
- You can follow any mashed potato recipe you like for the next step. Mash everything together in the pot for a one-pot meal. The residual heat will also make it easy to mash the spuds and blend everything together. Plus, the potatoes will be hot for serving if your pot is set to the warming function.
- Add-in ideas: olive oil, butter, milk, buttermilk, heavy cream, coconut milk, almond milk, salt, pepper, sour cream, chives, Parmesan cheese.
How Long Does It Take Instant Pot To Pressurize
It should take 5 to 15 minutes, depending on the type of food, amount of liquid and the pressure settings.
Until this action happens, the display will show the ON message, without additional messages.
If the lid is not closed correctly or if there is a problem with the liquid, the pot wont reach the point where it is pressurized. As such, it may throw a burn error message or it may stay in the ON state forever and ever.

How Do I Know It Works
When the Instant Pot creates enough pressure, the Instant Pot will beep once, and the cooking time will begin to count down from your setting.
For instance, if you set the cooking time to 6 minutes, the countdown timer will start from 00:06. If you introduced 70 minutes, the timer will start from 01:10.

Natural Vs Manual Pressure Release
When the cook time is up on your Instant Pot, there’s still one more step — releasing the pressure.
There are two ways the pressure can be released. With natural pressure release, the valve on the lid stays in Sealing position and the pressure dissipates naturally over time. This can take anywhere from 20 minutes to more than an hour, depending on what you were cooking. Low-liquid meals take much less time than high-liquid meals, like soup or chili.
The other option is manual pressure release . Here, you’ll carefully move the valve into Venting position and watch as steam shoots out of it, releasing the pressure. This method is much faster, but very high-liquid meals, like soup, can still take about 15 minutes to release pressure manually.
So which one should you use? Consider that with natural pressure release, the Instant Pot is still full of pressure, so the food will continue cooking while the Instant Pot is in Sealing mode. Manual pressure release is useful — and necessary — when you’ve built in enough cooking time and cooking needs to be stopped as fast as possible.
If the goal is to cook a meal quickly, set enough time on the Instant Pot to cook your food and release the pressure manually when the time is up.

How Long To Cook Chicken In The Instant Pot
Boneless chicken breasts and thighs cook in the same amount of timejust 10 minutes at high pressure will do it! Just be sure to arrange the meat in a single, even layer in the pot, as it cooks more evenly that way. It should reach about halfway up the chicken.
This timing works for a 1 1/2 to 2 pound batch of boneless chicken. If youre cooking more meat , increase the cooking time to 15 minutes to ensure that it is cooked through. For a smaller amount of meat , decrease the cooking time to 8 minutes.

I Keep Burning My Fingers When Trying To Release Steam
The release nozzle on the Pots valve is pretty loose, and twitching it open for a fast release after pressure cooking can be painful for even fast fingers. If youve been burnt by steam before, theres a very simple solution that Pot users have found: Just use a wooden spoon. Push the valve open with the spoon to release it and avoid any steam issues.

What Is The Difference Between A Quick Pressure Release Or Natural Pressure Release And When Do I Use Them
Those are often the first questions new pressure cooker users ask. So I thought it would be a perfect time for a post explaining it for all those who have an electric pressure cooker or multi-cooker like the Instant Pot waiting for them under the tree.
When the cook time ends, your pressure cooker will beep. At this point, the recipe will direct you to release the pressure in the cooking pot. You can release the pressure two ways: a quick pressure release or a natural pressure release.

Why Are My Instant Pot Pork Chops Tough
Pork chops are usually quite lean and will become tough once they are overcooked. For best result, you will want to use bone-in pork chops that are well-marbled. The bone will act as a shield for the surrounding meat. A thicker cut of pork chop will work better in the Instant Pot as it is less likely to overcook.

How Much Water Do I Put In Pressure Cooker For Meat
When you use a pressure cooker, you need to have enough liquid in the pot for it to come up to pressure and cook the food properly. The rule of liquids in pressure cooking is to always add at least 1 cup of liquid unless the recipe states otherwise. The liquid will help create enough steam to cook the meal.
How To Make Pot Roast In A Pressure Cooker
In our photos, we are using a 6-quart Instant Pot, which is an electric pressure cooker.
Other brands make electric pressure cookers, too. If you own one of them, you should be able to use this recipe without any problems .
Step 1, Season the beef and bring it to room temperature. Ive already touched on this above, but Ill quickly do it again, here.
After testing, we found that when we left the beef out on the counter to come closer to room temperature before cooking it, the pot roast was much more tender at the end of the cooking time.
I also love that the beef gets a chance to sit with the salt for about an hour before cooking. In this time, the salt seeps into the meat and helps to season and tenderize it.
Step 2, Brown the beef on all sides. By browning the beef on all sides before cooking at high pressure, we add color to the meat and add lots of flavor to the pot.
For a one-pot meal, brown the beef right in the pressure cooker using the Saute function. If your pressure cooker does not have this function, simply brown the beef in a heavy pan on the stove.
After browning, I remove the beef so I can move on to the veggies.
Step 3, Lightly brown vegetables. For extra flavor, we add onions, carrots, and celery to our pot roast, but I like to cook them in the bottom of the pot a bit first.
Step 4, Deglaze the pot and place the beef and vegetables back in. By deglaze, I mean to add liquid and scrape the bottom of the pot until it is clean.

- From frozen: Cook on HIGH pressure for 2 minutes.
- Finish broccoli with a quick pressure release. Season now if youd like or add additional seasonings if youve already done so.

The Instant Pot Is Taking Too Long To Start The Timer
Remember, Instant Pots take time to heat up. For pressure cooking and other modes, the Instant Pot will take a pretty significant amount of time, usually 10 to 15 minutes, to heat up and bring the pressure up to proper levels, and then start the timer. So when a recipe says pressure cook in Instant Pot for 5 minutes, you should always mentally add the extra time beforehand. If it still seems like its taking too long, check your settings carefully to make sure you are in the right mode.
Why Is My Rice Sticky In The Instant Pot
If your rice comes out too sticky when using the Instant Pot, there is often a valid reason for it being so. In many cases, sticky rice is an indication that there is not enough water or liquid in the pot, to begin with. It can be frustrating when even when you follow a recipe, there is still not enough of something.

For Whole Spaghetti Squash:
- Start by cutting the squash in half. My personal preference is to slice the spaghetti squash crosswise rather than lengthwise because it produces longer strands that better resemble spaghetti. Youve gotta get a good twirl on your fork! They also soak up sauce better this way. Then, remove the seeds.
- Place a steamer basket or trivet in the pot along with one cup of water.
- Place the squash halves into the basket or trivet and seal the lid.
- Set the pressure cooker to cook on high for 7 minutes and follow up with a quick release. You can do a natural pressure release for a few minutes if you prefer your pasta well done. A quick-release will give you al dente results.
How Do I Know My Instant Pot Is Pressurizing
To check whether your Instant Pot is fully charged, simply turn it off and wait 10 minutes. If after 10 minutes the indicator light remains lit, your Instant Pot is fully loaded. To see if your Instant Pot is pressurising, turn it on and set the timer for 20 minutes. Once the timer goes off, the indicator light will change from red to green. This explains that your Instant Pot is pressuring.

Is There A Difference To Using Instant Pot Recipes In A Pressure Cooker
Is there any difference?
Well, there are two real differences. Firstly, youll need to decrease the cooking time, and secondly, you may need to agitate the pan.
The reason that youd need to decrease the cooking time on an instant pot recipe for a conventional pressure cooker is that conventional pressure cookers can reach slightly higher pressures internally.
The reason for this is that youre supplying them with a lot of energy , and they will use that energy to generate more pressure. On the other hand, an instant pot will always generate the same amount of pressure every single time, no matter what.
The increase in the internal pressure of a pressure cooker, relative to the pressure in an instant pot, means that the cooking time must be slightly decreased. Therefore, when cooking in a pressure cooker, take one to two minutes off the time written on your instant pot recipes.
The other thing that you might have to consider when using a conventional pressure cooker is agitating the pan. When using an instant pot, the internal surface of the pot is heated evenly. When using a stovetop pressure cooker, however, the heat is being supplied directly from below.
Therefore, you can burn things to the base of the pan if you leave them undisturbed for too long.
How Can I Find Out What Pressure My Pressure Cooker Reaches
Most instruction booklets have this information written in them. The number may be written in kPa, bar or PSI . There may be several terms used in conjunction with those numbers and they include:
- Operating Pressure the pressure at which the pressure cooker cooks the food.
- Valve Release Pressure the pressure at which the main regulating valve releases pressure .
- Warping Pressure the pressure at which the base or components of the pressure cooker deform.
Stove top pressure cookers may also have this information written on the base, and the maximum valve release may be written on or near the valve.
Electric pressure cookers will have the valve release pressure written in very small text on the underside of the pressure release valve either on the plastic housing, or the metal part of the valve.
