If youre looking for a heartier soup, add a can of kidney beans or cooked chicken breastsboth zero point foods. Normally I keep diced grilled chicken on hand in my freezer, but we were out. So I just cooked up some frozen chicken breasts seasoned with garlic and basil! Then I reused the chicken broth I used for cooking the chicken when I cooked this low-fat vegetable soup.
For those not following the Weight Watchers plan in your family, you can add cooked noodles or rice to help fill out the meal. Also, since the soup doesnt specify an amount of salt when cooking, youll need to salt and pepper each bowl to taste when serving
Customize this soup with your favorite seasonings. However, I dont recommend skipping the red pepper flakes! They dont add much heat, but they do add quite a bit of flavor.
How To Freeze It
The key to freezing the soup is to let it cool completely first. Once it is cool, pour it into freezer safe container or into freezer safe bags. You can store it in the freezer for up to 3 months.
When you are ready to eat, let it defrost in the fridge. Then heat it on the stove or in the microwave.

If you want to mix up your leftovers, try stirring in some rice or pasta to this soup! If you are not trying to keep the recipe vegetarian, its also delicious with some rotisserie chicken stirred in before serving.

This soup recipe is super simple to make, all you have to do is follow these quick and easy steps:
Press the saute function on your instant pot and cook the onions and garlic.
Add the chicken, granulated garlic, salt, pepper, diced tomatoes, and chicken stock. Press the cancel function and then pressure cook on high for 7 minutes. Once its done cooking let the steam release completely.
Remove the chicken from the instant pot and shred it or dice it.
Add the vegetables and noodles and cook until the noodles are fully cooked through. Place the chicken back into the instant pot along with the parmesan cheese and lemon juice. Cook for an additional minute or two. Check for seasoning and garnish with fresh parsley if desired.
How To Make Instant Pot Quinoa Vegetable Soup
Making this dump and go quinoa vegetable soup in instant pot is a breeze. It takes just a few minutes to prep the ingredients and there is no monitoring or sauteing involved.
After rinsing the quinoa thoroughly well with cold water, add and mix all the ingredients except spinach, canned tomatoes, and pepper in the instant pot liner.
If you are using fresh diced tomatoes then you can add them along with all the vegetables. Close and lock the instant pot lid with the pressure valve in the sealing position.
Pressure cook on high-pressure mode for 4 minutes followed by 10 minute natural pressure release. It will take about 10-15 minutes to come to pressure.
After 10 minutes NPR, release the remaining pressure manually by turning the knob on venting position until the silver pin drops.

The tricky part about cooking vegetables in the Instant Pot is that they cook so incredibly quickly.
Broccoli and cauliflower are the veggies I just wont touch , so Ive left them out of this soup. They also tend to become overcooked and mushy relatively quickly.
If you like some of your vegetables to have more bite to them, you may want to toss them in at the end, right after opening the pot so they steam and soften somewhat but dont become overcooked.
I opt to chop the firmer vegetables into smaller pieces, and go for a very quick cook time, tossing everything in together from the get to.

If using beef with the bones on (like crosscut beef shank, add it to the Instant Pot. Top with the vegetables, tomato sauce, stock and seasoning.
Cook for 20 minutes on manual high pressure + natural release for 15 minutes. Then you can release the rest of the pressure manually.
Remove the meat, discard the bones and shred the meat. Return to the pot.

How To Make This Beef Vegetable Soup:
Start with the beef that you season with salt and pepper. If you use a 6 quart Instant Pot, select the Saute setting.
Heat the oil in the pot and add the meat. Cook until well browned. . Press Cancel.
Prepare the vegetables for the pot.
Clean, dice, chop everything according to the recipe below.
Add the onions, carrots, potatoes, pepper, celery, parsnip.
Add tomato sauce.
Also, add the water or broth.
If you use beef broth instead of water, go easy on the salt, add it better at the end, when the soup is done.
Lock the lid and close the pressure release valve.
Pressure cook on High pressure, setting the timer for 15 minutes.
The timer will begin counting once the pressure inside the pot is reached, which might take about 10-15 minutes.
When done, press Cancel and use the quick release method to release the pressure. Open the lid and taste the soup.
If you used a big chunk of meat, take it out, shred it or cut it and add it back to the pot. Skip this step if you used chopped beef.
Season to taste and add the parsley.
