I put it off, like I usually do with new kitchen gadgets, because I was afraid it was a funky trend that would fizzle out but after friends raving non stop about theirs, I broke down and got myself one.

Im obsessed! Where has this thing been all of my life?

And just to clear things up, I say Instant Pot because thats the brand that I own and is most familiar with everyone, but these recipes are not sponsored by the brand in any way and any pressure cooker will do just fine! I dont care what brand it is, just get your hands on one pronto. Its seriously takes one pot cooking to a whole new level of awesome.

How To Cook Pot Roast In Instant Pot

  • Generously season all sides of your roast with salt and pepper. Set Instant Pot onto sauté mode. Once the Instant Pot is hot, add in half of your vegetable oil. Once the oil is hot, add your roast in. Sear for 4 minutes on the first side, then flip and sear the opposite side for 4 minutes. Remove roast and set aside.
  • Add remaining vegetable oil to the pot, along with diced onions and minced garlic. Sauté for about 3-4 minutes, stirring frequently. When soft and fragrant, add in red wine and sauté for 5 minutes, stirring frequently, until the wine reduces to half. Add in half of your beef broth, tomato sauce, dried thyme, Italian seasoning, salt, and pepper, and give it a good mix. Carefully add your roast back into the pot along with carrots and potatoes.
  • Secure the Instant Pot lid and pressure cook on high for 70 minutes. Once 70 minutes is up, let your Instant Pot naturally release pressure for 20 minutes. After 20 minutes, you can release any excess steam. Remove the meat from the pot and set it aside.
  • In a small bowl combine cornstarch and beef broth. Slowly add the mixture into the Instant Pot with the drippings from the beef. Stir until the mixture thickens. Serve gravy over your pot roast, and enjoy!

    For this dish, the sauce really comes together from all of the ingredients. From the beef drippings and the mushrooms, garlic, and butter all cooking down together to the broth, worcestershire, and sour cream added at the end, all of these things make the sauce happen. And it makes them so finger-licking-good too!

    Other recipes might call for paprika, white or red wine, or fresh herbs. Others might ask you to add onion, Dijon mustard, or milk. Those are all fine to add as well to suit your own tastes.     Pot roast is more of a method than a specific cut of meat. To make it, sear a large cut of beef until browned on all sides, and then cook it with aromatics like herbs, onions, carrots, and broth until its melt-in-your-mouth tender. You can make this in a Dutch oven on the stove-top, in the oven, in a slow cooker, and a pressure cooker. In this recipe, we are using a pressure cooker to make the pot roast. A pressure cooker takes the cooking time down dramatically.

    How Long Does It Take To Cook Pot Roast In A Pressure Cooker

    The time it takes to cook pot roast in an Instant Pot will vary depending on how large your piece of meat is.

    As a general rule, when cooking beef roasts in a pressure cooker, assume 20 minutes of cook time for every pound of meat.

    You must understand that the time shown above is the actual cooking time, not the total time the recipe will take. For the total time needed, consider the time recommended to bring the beef to room temperature , searing time, and the times required to release pressure built up inside the pressure cooker.

    For a 3-pound piece of beef, the total time required will be about 2 hours and 30 minutes. This includes the time to bring the beef to room temperature , searing time, and the cook time required inside the pressure cooker.

    I know 2 hours and 30 minutes might seem like a long time, but for ultra-tender and juicy beef, we need all of it.

    The great news is that a pressure cooker makes much quicker work of pot roast compared to a slow cooker, oven, or when it is cooked on the stove-top.

    Now, I mentioned there was extra time for bringing the beef to room temperature. After testing this pot roast recipe in our kitchen, we found that if you start with beef straight out of the refrigerator, the roast doesnt become as tender as when you give the beef some time out of the fridge so that it comes up to room temperature before cooking it.

    Firm Carrots Yes Please

    To make sure the carrots stay whole, cut them up in really big chunks . For firmer carrots, dont add them in with the meat. Instead, cook the meat until done, remove from the pressure cooker and then pressure cook the carrots in the remaining sauce for 5 minutes on high.

    You can start with large carrots which you cut down into chunks, or you can make your life even easier by starting with baby carrots. P.S. ==> the same goes for potatoes.

    Why We Love This Pressure Cooker Pot Roast

    This Instant Pot Roast is so tender it falls apart when you try to take it out. It has such great flavor, that you can even skip the searing if you want .

    One thing it is missing? Mushy vegetables.

    Vegetables in the Instant Pot cook very quickly, often just a few minutes or less, so its better to leave them out while the roast cooks, and add them later at the end.
