Why Make Jam in the Instant Pot. Ever since I got my Instant Pot, I prefer to cook jams and chutneys in that instead of the stove. Here’s why: Pressure cooking the fruit and sugar gives me a head start on the cooking process.

Glass canning jars are designed for pressure canning. Unless you have the Instant Pot Max model, you wont be using these jars to can in your Instant Pot. Many Instant Pot owners use canning jars to pressure cook successfully. They are glass, so they can break but they are created to withstand the pressure during canning.

Instant Pot Pasta Sauce

  • 8 Cups Fresh Tomatoes
  • 3 Garlic Cloves
  • 2 Carrots
  • 2 Medium Onions
  • 1 tsp Sea Salt
  • 1 Tbsp Italian Seasoning
  • 6 oz Tomato Paste
  • Add all of your ingredients, except the tomato paste and place inside the inner liner of your pressure cooker.

  • Place your lid on the pressure cooker, turn the toggle to seal and cook on high pressure for 20 minutes. Allow to vent naturally. This should take approximately 40 minutes total.

  • With your Immersion Blender blend all of the ingredients into a smooth sauce. It is going to be loose at this point, and not what you expect of a sauce.

  • Add in the can of tomato paste and blend again. This will thicken up your sauce and will bring in a bit more of the robust taste youre expecting. The carrots will add a natural sweetness and reduce any extra additive you need in your sauce.

  • Enjoy fresh or can to use later.

What To Expect During The Water Test

-The 3 Stages of Pressure Cooking-

  • Heating & Pressurization The cooker will preheat, creating the steam required to build pressure. Once enough steam pressure has accumulated, the float valve will pop up and pressurize the cooker. During the Water Test, this may take 5 15 minutes.Do not press down on the lid; the float valve will rise when sufficient steam pressure has built up. Until the cooker pressurizes and the float valve has popped up, the lid will be removable. Once pressurized, the lid will lock.Note: The time it takes your cooker to pressurize is determined by a variety of factors, including food and liquid volume. It is normal to see steam exit the float valve hole until the float valve pops up and the cooker pressurizes. If you see steam escaping from around the sides of the lid, stop the test to ensure that your sealing ring is properly installed
  • Cook Cycle The cooker will not start the countdown right away. First, the cooker must come to pressure. Within 5 minutes of pressurization, the cooker will beep once and the countdown will appear on the display. When the timer reaches 00:00, the cooker will beep 10 times to signal that cooking has completed.Note: Smart Programs allow you to make changes to time, temperature, and pressure levels during the cook cycle.

The 7 Rules Of Water Bath Canning

  • Use High Acid Foods Weve already touched on this but this is the first rule of safe canning in an Instant Pot. These include most fruits, jams, fruit butter, jellies, marmalade, pickles or tomatoes. Low acid foods include broth, chili, poultry, stew, stock, and vegetables.
  • Use a canning recipe. Instead of canning fruit in its natural state, for example, make jams, lemon curd, apple butter and other.
  • Use pure steam. Water boils at different temperatures depending on your altitude. Steam is produced when water gets to boiling temperature and the temperature of the steam is exactly the same as of the boiling water.
  • Next up, use heated jars and make sure you use hot food in the jars as well. This is the best way of preventing your jars from cracking as well as ensuring that the processing times are not distorted.
  • Adjust the recipe according to your elevation. If you are at a higher altitude, you will need to increase that processing time but this does not need to change if you are at sea level or slightly above it.
  • Processing time for most canning should be 45 minutes or less. 45 minutes is the maximum amount of time you need for canning food.
  • Lastly, put the jars on a cooling rack to cool. Do not put in a fridge or anywhere cold to hurry the process along. Allow the cooling to take place at room temperature. This allows the jars to seal properly.
  • I will now look at how we can achieve both water bath and pressure canning using an Instant Pot.

A Quick Recap Of Key Cooking Stages

As we discussed in this post, there are three key phases to cooking in the Instant Pot. Once you add all ingredients and liquids, secure and lock the lid and choose your setting and time, the following things happen:

  • Preheating & pressurizing stage the pot heats up creating steam and pressure inside. This takes 5-20 minutes depending on how much food and liquid you add. Note: food starts to cook during this stage, kind of like when you boil potatoes on the stove they start to cook even before the pot comes to a boil, although most of the cooking happens once the water is super hot.
  • Cooking stage the built-up pressure pushes all the heat and steam inside the pot into the food, cooking it rather quickly. This is when the time youve selected for cooking under pressure starts counting down.
  • Depressurizing stage once cooking under pressure is done , the pot stops heating allowing the steam and pressure inside to escape through the release pipe. If you leave the pot alone, the pressure will release naturally but this can take 10-20 minutes depending on the volume of food inside. During this time, the food continues to cook at a slower rate. If you want to stop the food from cooking right away or you want to eat asap, you can release the pressure manually, which is known as the quick release .

Test : Rich Bread Vs Lean Bread

Instant Pot Steam Canning: Part Two

Rich loaves of bread have tenderizing agents such as butter, oil, or milk that give them a soft and tender texture. Most of our sandwich bread is rich bread.

Bread made with only flour, salt, and water is called lean bread. There are chewy interiors and crispy exteriors. They usually require 400-500 0 F to bake.

    Type of bread
    ;

So, the lean bread surprised me with the texture, but the rich bread saddened me with the dense texture. All the bread I have seen on the internet is quite similar to that. Denser and doughy!

So, I decided that I do not want to go the rich bread route with my instant pot bread.

Which types of bread can or should I make in Instant Pot ?

Based on test 1, I concluded that: Though, you can make rich or lean either type of bread with satisfactory results in an instant pot. But the rich bread tends to stay a bit denser. So I recommend going for lean bread.

Or anywhere in between. Like not a super-rich bread, but adding just about 2 tbsp of butter. And no other tenderizer. Hmmm, that sounds like another project!

Now Lets See How To Can In An Instant Pot

Before using the jar, you have to make sure there are no cracks in the jar. So it will save you from beforehand while you are canning. The next step is you can sterilize the jar in the instant pot.

Place your jar in the stand after adding the needed amount of water and vinegar. Now close the jar and seal the vent. Begin the steam cycle for 1 minute.

You can add the food in the hot jar leaving 1/4 inch headspace.

Clean the borders of the jar and it makes sure to give you a tight seal each time. Place the lid on tightly then set venting after placing them in the instant pot.

After setting into the stream, wait for the float valve to come up. Once it comes up, start your processing time.

When it finishes off the processing time, switch off the Instant pot so the pressure can come down.

After the float valve comes down, open the instant pot and take the jar out but be careful you might burn your hands. So let it cool down and leave them for 12 hours, now your stream can is done.

    Whole Wheat / Alternative Pasta

    There is no need to make any adjustment to the formula if using whole wheat or alternative pasta. Because this method of cooking pasta is based on the recommended cook time on the package, any type of pasta can be cooked this way.;

We tested this method with several varieties of whole wheat pasta and with several varieties of alternative pasta .

    Canning In An Instant Pot

If you love to can veggies or other foods, and you own an Instant Pot, you may be wondering if you can do canning in an Instant Pot.

The answer is you can, but it is limited, and not all types of canning processes can be done in an Instant Pot.

There are two ways to can foods. One is called water bath canning, and the other is called pressure canning.

The pressure canning is the type used most often for foods with low acid levels, and water bath canning works the best with food that has a high acid level.

Thats because high acid foods will be able to kill any bacteria so you wont get food poisoning. Meanwhile, low acid foods cant do that unless you mix the two types of food together. That can be done by adding in things like vinegar or lemon juice.

So, how can these methods be modified to be safe if you want to can using your Instant Pot? Here are some ways to do that:

    Water Bath Canning

Firstly, you have to make sure your canning jars are sterilized, which can be done in an Instant Pot.

Put some water and vinegar into your Instant Pot, then put the number of jars that will fit onto a rack and put it inside the Instant Pot and close the lid. Then run the Instant Pot steam cycle for at least a full minute.

Next, pour in more water and vinegar into the Instant Pot, then pour the food into the hot jars and be sure to leave at least a quarter-inch of headspace in the jars.

Test 2 Naturally Fermented Vs Yeast

When the lean loaf was decided, the next question was the fermentation method. Please note that both the loaves of bread in Test 1 were baked with active dry yeast.

;So, I wanted to see if, sourdough can make any difference? So this time, I made lean bread with sourdough fermentation and active dry yeast.

As expected, the sourdough bread had a better crumb and texture than the yeast one. But the difference was no biggie. So I think, mode of fermentation does not make much difference.

But the key in fermenting bread for baking in an instant pot is to over-proof the bread, which we will discuss in detail in proofing.

How To Make The Best Instant Pot Ribs

Unlike other rib cooking methods, which take hours and require active tending, making ribs in the Instant Pot is hands free and comparably fast. The Instant Pot locks in moisture and makes the ribs tender in a fraction of the time.

In addition to the use of the Instant Pot itself, I have a few key tips to ensure your Instant Pot rib efforts are richly rewarded.

    • Use a Dry Rub. To start your ribs on a delicious note, cover them generously with a delicious dry rub.

The rib rub recipe Ive included here uses basic pantry staples you probably already have, like chili powder, garlic powder, and cayenne, to give the ribs loads of flavor. If youd like to make the ribs more spicy, feel free to bump up the amount of cayenne.

To balance the spice, I also add brown sugar to my Instant Pot Ribs rub. I grew up loving the brown sugar/molasses flavor of Kansas City BBQ, and the brown sugar reminds me of some of my favorite KC BBQ joints.

The amount of brown sugar isnt overly sweet by any means. Youll love it here.

    • Liquid Smoke. It might sound fancy, but liquid smoke is widely available at most grocery stores . You can also buy it online.

Please dont skip the liquid smoke. Because we are cooking the ribs quickly , the liquid smoke provides flavor that youd typically only get via longer cooking methods .

The two more common types of ribs are baby back ribs and spare ribs.

Test : Bulk Rising And Proofing The Bread In An Instant Pot

Which is the best way to proof the bread in an Instant Pot?

  • There are two ways for proofing the bread in an Instant pot.
  • Number 1: The yogurt mode: I regularly proof my sourdough in the instant pot. I like to use a custom setting in yogurt mode.; In my opinion, it is the best way to proof the bread in the instant pot as it gives you the flexibility to choose the precise temperature. Also, you can just drop the dough into the greased instant pot.

Number 2:; Duo Evo plus have a proofing option in the Bake Mode. I use this method, especially when I am making any quick yeast-risen bread. It proofs the dough in about 40-50 minutes!

Also, when you use the proofing option in Bake mode, do not place the dough directly in the pot of instant pot.; There is no way to tell what temperature settings they use but, one thing is sure that the pot gets hot towards the end.; I had a batch of dough wasted because of that.

So, place the dough in another bowl and place the bowl in the instant pot.

Alright, the point is that the yogurt mode is best for proofing the dough for the instant pot bread or any other bread recipe.

How do I proof the bread in my instant pot?

To bulk rise and proof bread in the Instant pot, yogurt mode is ideal.

I like to grease the pot of the instant pot with cooking oil and directly place the dough in it. Let the dough proof in the ferment option in yogurt mode. And select the custom temperature settings. 85-95 0F is ideal for yeast activity.
