Are Ribs Supposed To Fall Off Of The Bone

Ive seen ribs frequently described as fall of the bone tender but in my opinion theyre overcooked if the meat literally falls off the bone.

Seriously, when I go to remove the ribs from the Instant Pot, I dont want all the meat falling off in a pile before I even get the rack to the baking sheet to prepare for the broiler. The meat on these ribs is tender and pulls easily off of the bone, but stays attached when you remove the rack from the pot .

I totally understand everyones tastes are different, so if you like your ribs falling off the bone then I suggest adding about 5 minutes longer to your cook time.

Its important to remove the membrane from the bone-side of the rack before seasoning and cooking. The membrane is tough and also blocks your seasonings from absorbing into the meat.

How Long Do I Cook Baby Back Ribs In The Pressure Cooker

Easy, Instant Pot BBQ Baby Back Ribs + VIDEO

As a rule of thumb, when making meat in the pressure cooker, if you release the pressure and the meat is too tough for your taste, then you need to increase the cook time. If your meat is drier than you like, decrease the cook time.

Use an instant-read thermometer to verify your baby back ribs have an internal temp of at least 145°F in the thickest part of the ribs after cooking.

Ive found that 15 minutes at High Pressure leads to ribs that are tender yet they still have a bit of bite and hold their shape when grilling.

If you want the ribs more fall off the bone tender, cook them another longer Id start with 5 minutes and go from there.

Removing the membrane from the ribs:

Depending on where you buy your ribs, they may still have the white, shiny membrane connective tissue on the back of the ribs. I buy mine from Costco and they already have the membranes removed. Check to make sure the membrane on your ribs has been removed and if it hasnt, follow these steps to remove it:

  • Just flip the ribs so the top is face down.
  • Slide your fingers or a butter knife under the membrane and rip it off.
  • No special skills needed here, just use your fingers to yank it up and off the ribs.
Consider serving with a Side Dish. Here are some of my favorites:

Last year my mom and dad gave away their grill. My dad had rebuilt that thing at least five times over the years, but as the grill got older as they have too, the good old Char Broil just really didnt see much grilling action anymore. So off to the trash heap it went.

However, my dads love affair with BBQ ribs will always remain strong. So when I was making my weekly meal prep plan that included taking dinner up to their house one night, I was thrilled to see baby back pork ribs were on sale and half price on my Kroger apps 2-day Digital Deal. So with the tap of my finger, the deal was added to my grocery list and off to the grocery store I went.

Because while my dad loves his ribs, he loves a deal even more. And the apple doesnt fall far from the tree.
