Make Two Meatloafs At Once
For this recipe we use two aluminum mini loaf pans in a 6qt Instant Pot. They are the perfect size to fit in the pot and can be purchased at almost all supermarkets and even at discount dollar stores. Because were making 2 meatloafs, we can add additional ingredients to either one if we want. That works out perfectly because if you have picky eaters like I do, you can make one meatloaf exactly as the recipe calls for, and the other with some extras added in. More on that in a minute
How Many Meatloafs Can I Make In The Instant Pot
I use an 8 quart Instant Pot because I have a HUGE family. We typically have big meals and are lucky to have leftovers for the next day. This 8 quart Instant Pot helps.
If you want to use mini meatloaf pans, you can actually place two of those easily inside of an 8 quart pressure cooker. However, I am going to share with you how I make a large, family sized meatloaf that doesnt require any pans at all.

What Is The Best Meatloaf
The best meatloaf is one that sticks together in a loaf, cuts easily, has a good ratio of binder to meat, has amazing flavor, a tasty sauce on top, and is easy to cook.
I really like this Instant Pot Meatloaf recipe because it checks all the boxes. Its not hard, the meat loaf itself is full of flavor, and there is a great use of spices. The added parmesan cheese gives it a little bit of a salty flavor, with a fun twist to a traditional meatloaf.
And that sauce! Oh my goodness. It is not your traditional ketchup and sugar. But had depth of flavor and a tiny bit of kick from the horseradish.

How To Form An Instant Pot Meatloaf
Once you have all of your ingredients together for this keto meatloaf recipes, you need to form the loaf. At this point, you can still change your mind and opt to make meatballs instead of Instant Pot meatloaf.
To cook meatloaf in an Instant Pot, you need to form it into the shape of a round loaf. This recipe calls for the use of an Instant Pot trivet and some pieces of aluminum foil that you will fold and form into a pan in the instant pot.
You need to fold and form the aluminum foil to the sides of the Instant Pot, so shape the loaf of meat outside of the pot and then lower it in.
You could take out the trivet, with the foil to put the loaf in and then reform the foil once it is all in place in the instant pot, but this may be more difficult to manage with the foil. as it is lightweight and air resistant, so it often behaves unpredictably.
The Secret Ingredient To Making Instant Pot Meatloaf
The idea for this meatloaf came about one afternoon when I was halfway into making meatloaf and discovered that I didnt have enough breadcrumbs.
Ack! A frantic search of my pantry revealed nothing but a bag of fried onionsyou know, the kind that go on top of a green beancasserole?
A lightbulb went off in my head. Why not? The results were even better than I hopedextra savory and delicious. And they work perfectly in this Instant Pot recipe, which is done before you could get back from the grocery store with more breadcrumbs!

One thing we really like to do for this recipe is to add ketchup to the top of the meatloaf after its done in the Instant Pot, and place it under the broiler in the oven for about 5 minutes. The sugars in the ketchup will begin to caramelize and bring out a delicious flavor that is so perfect as the finishing touch.

Alternatives For Freezing Your Meatloaf Or Making From Scratch
You can also skip the plastic wrap and freeze your meatloaf right in the aluminum pan . I prefer to freeze my meatloaf in the pan, then remove the pan to be used for other things until it is needed to cook the meatloaf.
If you dont have a cake pan or stainless steel pot for this, no fear. You can shape your meatloaf into a round disk shape that is approximately 8 inches in diameter, wrap, and freeze. When ready to cook, unwrap the plastic wrap from the frozen meatloaf. Place the meatloaf on a large piece of aluminum foil that extends several inches wider than the meatloaf. Then, crimp up the sides of the aluminum foil to create a dish or bowl around the meatloaf.
And of course, you can certainly skip the freezing all together and just make this great meatloaf recipe straight from scratch! In that case, prepare your pan with a light spray of cooking spray , and proceed right to the cooking instructions!

How Do You Make Meatloaf In The Oven
When you cook meatloaf in the oven, it is typically a two step process. You bake the meatloaf and then add the sauce or ketchup and cook for another 10 minutes or so.
When you use this meatloaf recipe, and you dont use the Instant Pot, you should follow the same tactic.
Bake at 350 degrees until cooked through, about 40 minutes. Then add the sauce, and return to the oven for another 10 minutes.
I love that when you cook in the instant pot it is only a one set process, you dont have to later add sauce and put it back in. If the meatloaf is done, then you just add more sauce after you take it out and then serve it.

FREEZE: Wrap the meatloaf in two layers of plastic wrap and foil. Place in a freezer-safe Ziploc bag. Freeze for 2-3 months. Before reheating, defrost the meatloaf overnight in the refrigerator or at room temperature for 4-5 hours.
REHEAT: Place the meatloaf in a 350 degree oven for 20-30 minutes or until heated through.

- Worcestershire sauce. Replace balsamic vinegar with same amount of Worcestershire sauce if that is your usual meatloaf addition.
- Breadcrumbs substitute. You can use equal amount of rolled oats to make meatloaf more wholesome. Whole wheat breadcrumbs add fiber and nutrients as well.
- Lean poultry. Ground turkey will work and thanks to locked in steam during cooking, it comes out just as tender.
- Ketchup. Keep it simple with a ketchup glaze, or add a bit more flavor by making this easy 3-ingredient meatloaf sauce. The addition of BBQ sauce and light brown sugar make it perfectly sweet and tangy.
- Shape. It is important to shape meatloaf round and relatively flat to ensure even cooking.
- Do not vent right away. Wait 10 minutes before releasing pressure to allow the meat to finish cooking and retain its moisture.
- Use a meat thermometer. When inserted in the center and the thermometer reads 160°F, the meatloaf is ready. If it is around 150-155°F, close the lid back on and let it sit for 5-10 minutes to finish cooking.
- Cooking without potatoes. You can cook meatloaf without potatoes on a trivet by following the recipe. Keep 1 cup water and same cook time.

How To Make Meatloaf In The Pressure Cooker
How long to cook meatloaf in the Instant Pot?
Two pounds of meatloaf in the pressure cooker should cook for 25 minutes using high pressure. Once the timer beeps, use quick pressure release.
Its always good practice to check the internal temperature of meat before serving. Meatloaf should reach an internal temperature of 160ºF.
If the meatloaf is not to temperature yet secure on lid and close seal. Bring back up to pressure and cook for 5-10 minutes more. Alternatively, finish cooking meatloaf in a 350ºF on a small baking sheet.

Mashed Potatoes In The Instant Pot
Mashed Potatoes are excellent made in the instant pot. Once your meatloaf is finished cooking, you just carefully remove the meatloaf from the instant pot and let it rest for 10 minutes to reabsorb the juices.

Cooking Meatloaf Bites In The Instant Pot
Cook on High Pressure for 35 minutes.
Once done cooking, manually open the valve using a towel or hot pad to prevent burning from the hot steam.
Once the steam has quit, remove the molds carefully by using a hot pad or towel, and pulling the trivet out. Place each mold on a cooling rack. Allow to cool in the molds for 5 minutes.
Remove and serve with ketchup!
This would make a great party food idea, or you might want to serve these as a main with mash, vegetables and gravy.
How To Make Meatloaf In The Instant Pot
- The best way to mix this up is getting those hands dirty! Well make sure they are clean first, but I find this the best way to put a meatloaf together. Grab all your meatloaf ingredients get to work!
- In the liner of your Instant Pot, place the potatoes in the bottom.
- Pour in chicken or beef stock. Sprinkle in salt and garlic.
- Mix. Place pats of butter on top.
- Put trivet with handles up on top of potatoes.
- Wrap foil around the meatloaf creating a pocket or “pan”.
- Don’t forget a little extra ketchup on top!
- Place the meatloaf in Instant Pot and lock on lid.
- Be sure pressure valve is closed.
- Set to manual high pressure for 30 minutes. Once it is finished cooking you can let it natural release or carefully open the valve to manual release. Once the pins drops open, carefully remove with tongs or pot holders.
- If desired, place on a baking sheet and cook under a broiler to caramelize the topping.
- Remove potatoes with a slotted spoon and serve this deliciousness!

How To Make Pressure Cooker Meatloaf
Add ground beef to large mixing bowl.
In a separate bowl combine dry ingredients.
Add dry ingredients to ground beef and mix well with hands or fork.
In same bowl used for dry ingredients whisk together wet ingredients.
Add wet ingredients to ground beef mixture and mix well to combine.
Form one large circular loaf with the beef mixture and place in a steamer basket. Add 1 cup of water to pot along with a 2-inch trivet. Place basket on top of trivet. Lock lid and cook for 16 minutes at high pressure.
Meanwhile combine ½ cup ketchup and brown sugar with a whisk.
Once cook time is complete, allow pressure to release naturally .
Transfer meatloaf to a baking sheet…
…and generously glaze with ketchup mixture.
Place under high broiler for about 3-5 minutes…
…or until desired caramelization occurs.

When it comes to making meatloaf in the Instant Pot its as easy as 1, 2, 3! I use this Instant Pot here to make this recipe.
1. Place the baby potatoes and broth on the bottom of the Instant Pot.
2. Prepare the meatloaf and place it on a piece of aluminum foil in the Instant Pot right on top of the potatoes .
3. Cook on high. Once cooked, remove from the Instant Pot, brush with topping and broil!
Let meatloaf rest before slicing , and serve with potatoes and steamed broccoli.
