Can I Cook Frozen Roast In The Instant Pot

Short answer: yes you can!

How? Just follow the same instructions except browning and increase high pressure cooking time to 90 minutes.

Long answer: dont do it! It wont turn out the same! Its worth postponing your pot roast dinner to the next day while you wait for the roast to thaw in the fridge. I mean it.

I have experimented with this a couple of times. Believe me, I GET IT, when you say I keep forgetting to place my meat in the fridge to defrost. Im the most forgetful person on the planet. I keep forgetting stuff like that, too.

However, the few experiments I did led me to less delicious results and in the end I felt unhappy. Such a beautiful and delicious piece of meat prepared in a meh way just doesnt give it its due respect.

Refrigerator thawing is really slow BUT when meat is defrosted slowly the moisture is slowly reabsorbed by the muscle fibers. Quick thaw methods result in drier and tougher meat once its cooked because the moisture just flows off and away from the piece.

So, if you are forgetful like me, plaster your kitchen with post its, set alarms in your phone, add reminders to your google calendar. Ask a friend to call you and remind you. Do whatever it takes to remember to place that beautiful piece of meat in the fridge 24 hours earlier or just go to the store and buy a fresh or already thawed one in the first place.

This Instant Pot Pot Roast recipe deserves GOOD meat.

How To Make Pot Roast In Pressure Cooker

  • Turn your pressure cooker to the Saute function and pour in 1 tablespoon oil.
  • While the pressure cooker is heating, liberally season the chuck roast on both sides with salt and pepper.
  • Place the seasoned roast into the heated inner pot, and sear the roast for 3-4 minutes per side or until browned.
  • Turn the instant pot OFF from the saute function and remove the pot roast from the inner pot and place on a platter.
  • Pour in about ½ cup of the beef broth and use a spatula or wooden spoon to scrape up the browned bits on the bottom of the inner pot, so that pressure can build appropriately and you wont get a burn notice.
  • Add seared roast back to the inner pot. Pour in the rest of the beef broth and then sprinkle the with additional salt, pepper, and onion powder. Top the roast with minced garlic and horseradish.
  • pound on high pressure. This would be 60 minutes for a 3 pound roast.
  • Once the cook time has elapsed, let the pressure release naturally for at least 10 minutes. This will keep the pot roast super tender.
  • Remove the pot roast from liquid and place onto a platter or cutting board. It is okay if it falls apart as you are removing the roast–it should be fall-apart tender.
  • Tent the meat with foil and let rest for 5-10 minute befores shredding or slicing and serving with the cooking juices.

Whats The Best Meat For Roast Instant Pot Chuck Roast

For pot roast;chuck or round are the best pieces of meat; regardless of if youre cooking it in the instant pot, slow-cooker or stove-top. My absolute favorite hands down is chuck roast.

The important part to look out for when choosing your meat is the marbling. Marbling;refers to white parts of fat within the meat. Its also called intramuscular fat and is super important for;flavor.

Also, the meat will cook for a long time so you really dont want a lean piece of meat. It will just become incredibly dry.

Make sure you choose a piece of chuck that has the most beautiful marble pattern.

How To Cut Carrots And Potatoes For Pot Roast

To make sure the carrots and potatoes are not falling apart and mushy after pressure cooking, cut each carrot into 3 to 4 large pieces and each potato to 4 to 6 large chunks. I used Russet potatoes and the large chunks were soft but not mushy once the roast was done. You can use small potatoes, just wash them well and place whole in the pot.

Chuck roast is the most commonly used cut of beef used in pot roast recipes. You want to go with marbled chuck roast which is widely available at most grocery stores. This results in a super tender and flavorful meal.

You can also go with other chucks, such as chuck eye, blade roast, shoulder roast, shoulder steak, arm steak, arm roast, cross-rib roast, or seven-bone roast. In addition, brisket will be a great option for this recipe.;

Easy Pressure Cooker Pot Roast

  • 1 boneless beef chuck roast, trimmed
  • ground black pepper to taste
  • 1 pinch seasoned salt, or to taste
  • 1 pinch onion powder, or to taste
  • 1 can beef broth
  • 1½ tablespoons Worcestershire sauce
  • 1 large onion, cut into 4 wedges
  • 4 carrots, peeled and cut into bite-size pieces
  • 4 large potatoes, peeled and cut into bite-size pieces

    Heat oil in a pressure cooker over medium-high heat. Brown roast on all sides in the hot oil; season with pepper, seasoned salt, and onion powder.

As per the Instant Pot cooking chart, you need 20-25 minutes to cook a pound of a large chunk of beef for pot roast. So you can adjust the time based on this.

Ive had great results using 20 minutes per pound, so I stick to that time.;

I prefer to add the potatoes and carrots towards the end because Im not a fan of mushy vegetables.;

  • Pour the water, red wine, and Worcestershire sauce into the stainless steel bowl of the Instant Pot.
  • Add the beef chuck roast and then sprinkle with sea salt, garlic powder, and ground black pepper.

    A quick note about adding potatoes, using baby potatoes are totally the way to go. They are the perfect size and they dont get mushy. Potatoes that are peeled and cut tend to get mushy in the Instant Pot when they cook for a longer amount of time. By keeping the skin on and not cutting them, the potatoes cook thoroughly while remaining firm. If you must use peeled diced potatoes and carrots, you will definitely want to release the pressure a few minutes before the regular cooking time, then add the potatoes and cook on high pressure an additional 8 minutes. 30+ minutes is too long to pressure cook diced potatoes.

  • First, season the meat generously on all sides.
  • Add oil to the pot and set to the saute setting. Sear meat on all sides, then set the pressure cook setting on high.

    When Do You Add Potatoes And Carrots

    For a complete meal, potatoes and carrots always pair perfectly with a tender pot roast. However, I do not recommend cooking small potato chunks or baby carrots the entire time you cook your pot roast, as your vegetables will turn to mush.

    Instead, it is best to cook your potatoes and carrots AFTER the roast has cooked, when the meat is resting. I recommend that once the roast has cooked, remove it from the inner pot. Tent with foil to stay warm while the vegetables cook. Add in the potatoes and carrots and set the cooking time to 10 minutes on high pressure. Once the potatoes and carrots are cooked, you can slice up the roast and serve with the perfectly cooked vegetables.

    Alternatively, you can cook your Pot Roast for 10 minutes LESS than the total indicated time. So for a 3-pound fresh roast, cook for 50 minutes on high pressure. Then let the pressure release naturally for 10 minutes. Open up the inner pot and add the potatoes and carrots to the pressure cooker. Seal the pressure cooker and cook for high for an additional 10 minutes. Allow the pressure to release for at least 10 minutes naturally, then do a quick release of any remaining pressure. Let the roast rest for 5-10 minutes before serving with the potatoes and carrots.
