    Sweet Potato Quick Bread Recipe

    Here’s my favorite quick bread recipe. It tastes amazing when cooked in an Instant Pot. It comes out with a moist, chewy, cake-like texture.

    Ingredients:

    • 1 cup canned sweet potatoes
    • 2 eggs
    • 1 Tbs. pumpkin pie seasoning

    Instructions:

    1. Mix all of the dry ingredients with your stand mixer on low.

    2. Slowly add the wet ingredients with your mixer on medium.

    3. Grease and flour a coffee can.

    4. Pour the mix into the coffee can.

    5. Place the steamer rack upside down in the inner pot.

    6. Add 6 cups of water.

    7. Place the coffee can into the inner pot and cover with a buttered aluminum foil square.

    8. Turn the valve to Sealing.

    9. Turn off the Warming button.

    10. Lock the lid.

    11. Set Pressure Cook to 40 minutes.

    12. Do a natural release of pressure for 10 minutes or until the Instant Pot is ready to open.

    First I start by mixing the flour, yeast, and salt.

    Then I add my yogurt and mix.

    I knead it for 1-2 minutes and shape it into a ball. It doesnt have to look pretty

    Next I add some parchment paper into my Instant Pot and place the ball there. Close the lid, press the yogurt button and proof for 4 hours.

    After 4 hours my dough has doubled its size and is ready to be shaped into a ball

    I remove it from the IP and place it on a floured counter. I knead it lightly to shape into a ball.

    In the meantime, place a dutch pan in the a 450 F. Preheated oven for 30 minutes

    Cover your dough ball on the counter while you wait of use a covered floured proofing basket .

    Next, carefully dump your dough ball in the preheated dutch pan, cover with lid and bake for 25 minutes.

    Uncover and bake until browned. About 8-10 more minutes.

    And voila! your sourdough bread is READY.

    Using The Instant Pot To Make Bread

    Making bread in the Instant Pot is different than baking it in the oven, primarily due to the fact that the Instant Pot is a moist environment and the oven is a dry environment. This does affect the consistency just a bit, particularly the outside crust.

    I use foil to cover the bread during cooking, so that condensation doesnt drip onto the top.

    If you prefer to bake your bread in the oven, you can always use the Instant Pot to rise the dough, then transfer it to the oven for baking.

    This version is VERY similar to English muffin bread in texture. Its fabulous served warm or toasted, then topped with butter and honey, Instant Pot peach jam or strawberry jam, or Instant Pot apple butter.

    Test : Crusting/browning The Bread

    I crusted one bread with the air fryer lid and the other in the oven. I do not own the crisp and air fryer model. But a friend happened to have an air fryer lid compatible with Duo Evo Plus. So she was happy to lend it for my experiment.

    I found that the bread crusted best in Broil mode, at 400 0 F for 12 minutes.

    And this recipe is particularly the best bread you can bake in an instant pot.

    But, the oven-baked bread was better than the air fryer one. It had an even browned crust than the air fryer one

    Alright, so, why should anybody even bother to make bread in Instant pot?

    I know that the instant pot is not the best equipment to make bread. Bread bakers even do not like the home ovens. We have to do multiple manipulations to get the bread right, even in the oven.

    But instant pot as a kitchen tool has a few advantages of its own.

    The pressure-cooked bread gets high gelatinization on its surface. It means that the crust is much thicker than normal bread. It has a tendency to become hard on air frying. That is because of excess moisture while baking. Brushing the bread with melted butter as it comes out of the oven helps to make this instant pot bread recipe perfect.

    Can I Freeze The Dough For Dinner Rolls

    Yes, these can be frozen! Ive written a full tutorial on frozen dinner rolls that you can make ahead and freeze until baking day!

    After shaping the rolls, put them on a parchment-lined cookie sheet and freeze them for about an hour or so. Then they can be stored in a large zip-top bag or other freezer storage container.

    When youre ready to use them, put them on a cookie sheet or into a baking pan. Spray some plastic wrap with cooking spray, then loosely cover the frozen rolls with the plastic wrap .

    Let them thaw/rise for about 3-5 hours, or until theyre roughly doubled in size. Carefully remove the plastic wrap and then bake as directed in the recipe!

    Homemade dinner rolls are perfect for holiday get-togethers, but theyre also just a great staple to enjoy with homemade Instant Pot soups or your favorite comfort food.

    Difference Between Quick Bread & Yeast Bread

    The ingredients used in making bread determines whether it is a yeast bread or quick bread. You need something thatll get the dough to rise. Yeast bread uses yeast which reacts with warm water to create carbon dioxide and helps the bread dough to rise. While quick bread uses a leavening agent other than yeast, such as baking soda or baking powder. In sourdough bread, its the sourdough starter that does the magic.

    This difference determines if the dough needs proofing. The quick bread batter doesnt require proofing time or much kneading. They can be fully cooked using just the Instant Pot, with no need for baking in the oven. Yeast bread dough needs proofing, which can take a bit of time. Fortunately, proofing in an Instant Pot speeds up the process and cuts the overall recipe time to only a few hours including baking time.

    How To Make Bread At Home In The Instant Pot

  • In a medium mixing bowl, combine ½ cup warm water, 1 ½ tablespoons quick rise yeast, and ½ teaspoon sugar. After mixing together, let the mixture sit for 5-10 minutes until it rises and is bubbly.
  • Add 6 cups flour, 2 ¼ teaspoons salt, 2 tablespoons olive oil, 1 tablespoon sugar, and 2 cups of water to a large mixing bowl.
  • Once its bubbly, combine your yeast mixture with the flour mixture.
  • Keep mixing until you can roll the dough easily into a ball with your hands without it sticking.
  • Pour 1 tablespoon olive oil into your Instant Pot. Place the dough inside of the pot and select the Yogurt setting. Roll the dough around in the oil so it will not stick to the pot.
  • The dough will rise for the next 40 minutes. Every 10 minutes, you need to open the Instant Pot to knead the dough.Replace the lid each time after you knead. Tip: To make it easier, set timers for kneading the dough at the 10-minute mark, 20-minute mark, and 30-minute mark.
  • Once 40 minutes is up, your dough will be ready to transfer to a surface coated with flour. Preheat your oven to 425°F.
  • Cut your dough in half. This will make two large loaves of French bread. Cut into four if you would like four smaller loaves.
  • Shape each loaf and score the tops of each one using a knife. Brush an egg wash over the top of each loaf. This is an important step that will help them brown in the oven.

    How To Make Bread

    Add water, yeast and sugar into bowl of a stand mixer. Let rest for 5-10 minutes, until it becomes bubbly.

    Add oil, 3 cups of flour and salt to the yeast mixture. With dough hook attachment, mix all ingredients on low speed for 1 minute.

    Continue mixing on low speed until flour is incorporated. Slowly add remaining flour cup by cup until dough clean itself from the sides of the mixing bowl. The dough may need an additional 1/2 cup of flour . Continue mixing for 5 more minutes to allow time for the dough to become more elastic from activating the gluten.

    Next, proof dough. Choose 1 of the 3 methods to proof the dough: Traditional, Instant Pot Lux or Instant Pot with yogurt button.

    After dough has doubled in size, punch down dough in the bowl/pot. Divide dough in half.

    Grease baking loaf pans.

    Dust counter with a little flour. Using a rolling pin, roll each ball of dough into approximately 8×5 sizes. Roll the bread into loaves, pinching the seams together on the bottom of the bread.

    Put dough in pans and cover with a tea towel. Place in a warm spot for the second rise, and set a timer for about 45-60 minutes. Allow dough to double in size.

    9. Preheat oven to 350F. Bake bread for 25 minutes, until tops are golden brown and sound hollow when tapped on top.

    10. Remove from oven and allow to cool on cooling rack for 5-10 minutes. Remove from pans and allow to cool completely before storing.

    11. Enjoy warm or after cooled. Cut into slices using a bread knife.

    How To Know Your Yeast Is Proofed

    Your yeast when mixed with the water and other ingredients will begin to foam. Generally, this happens within three to five minutes. If you dont see your yeast is getting bubbly it could mean that your yeast has gone bad or expired.

    If your yeast doesnt bubble up it will not rise and cook properly.
