Instant Pot Chicken Soup From Scratch

I am so excited to share an Instant Pot version of this soup recipe…this Instant Pot Chicken Soup version of her soup has all of the same cold and flu busting ingredients as my Grandma’s Jewish Penicillin.

Plump juicy chicken, seasoned with thyme, basil, parsley, garlic, salt and pepper with lots of carrots, celery, and onion. This soup is hearty, filling and makes a fantastic lunch or dinner.

When I shared my Grandmother’s homemade chicken soup recipe on my blog, I didn’t expect such a huge outpouring of emails, notes, and ratings. That chicken soup from scratch recipe has been getting rave reviews everywhere.

The original recipe of my Grandmas chicken soup is made on the stovetop and takes a couple of hours to cook. While the aroma of the soup was phenomenal, my busy lifestyle doesnt always work to prepare it in that manner.

I have transformed the recipe so I can easily make the chicken soup in the Instant Pot. When you make pressure cooker chicken soup, the flavors combine even more to make it out of this world amazing. The chicken is fall off the bone moist!

Our family loves chicken soup…for more delicious chicken soup recipes, check out the best homemade chicken soup recipes on my blog.

There are many people who call this Jewish penicillin because it can help you feel better when you have a cold or flu. I know that when I am sick, there is nothing that makes me feel better like a nice big bowl of yummy soup.

How To Make This Instant Pot Chicken Soup

Altogether this soup is super easy to make without too much hands on action required. Since its all made in the instant pot its going to take only a fraction of the time it would normally take you to get juicy, fall-off-the-bone chicken.

The steps are simple & can be broken down as follows:

  • Cook the aromatics on the saute function.
  • Add your chicken to the bottom of the pot then cover with stock and water. Set the pressure release valve to the sealing position.
  • Cook on high pressure for about 20 minutes, then let the pot depressurise for at least 15 minutes. Use the natural release option before opening the pot.
  • Remove chicken & shred into bite-size pieces.
  • Add chicken back the pot along with your additional soup flavourings
  • Enjoy!

    Why Use The Pressure Cooker

    Instant Pot Chicken Noodle Soup

Pressure cooking in the Instant Pot reduces the cooking time a fair amount. Using an electric one also allows you to leave the pot unattended while it cooks. The cooker will even switch to a Keep Warm setting once cooking has finished so you dont have to worry about turning off the cooker right away when the soup is done.

    Slow Cooker Or Instant Pot

I love the simplicity of making chicken noodle soup in the slow cooker. You add everything, stir, and let it cook. Yes, the noodles are added later but they dont take long to cook. I still consider this chicken noodle soup a good set-it-and-forget-it slow cooker recipe. Of course if youre crunched for time, you can make this in your Instant Pot too. Having made it both ways, I can honestly say that I dont have a preference when it comes to taste. I think it depends more on convenience or which appliance you have/prefer to use. With the Instant Pot, its a little more work because you sauté the vegetables first, but its still easy to make.

How To Cook Chicken From Frozen In The Instant Pot

Cooking times are based on 1-2 pounds of frozen medium-sized boneless, skinless chicken breasts.

We found frozen chicken breasts are at a safe cooking temperature at 15-20 minutes using a quick release method. We always use the manual function . When cooking food from frozen in the Instant Pot, we recommend starting at the shorter end of the time range and then adding more minutes if its not done.

The only variation to this cooking time is when chicken is in a soup. We found that because it takes so much longer for the Instant Pot to come to pressure, the chicken takes LESS time to cook. Likely 5-6 minutes. It feels a bit counter intuitive since there is more in the pot when cooking a soup recipe but we consistently found that chicken was done quicker this way.

    Instant Pot Wonton Soup

The time has come for me to make one of the singular most greatest soups on this planet and do it my way. And that is going to be one of the most wonderful, comforting, yet light soups one can slurp: Wonton Soup.

This classic Chinese staple is as good as soup gets: a delightfully tasty, yet simple and light broth adorned with wonderful, delicate meat-like pillows knows as wontons. And lets not forget a few stunning greens caressing the wontons as well as some strands of chicken floating in the broth and then topped with some crunchy noodles!

Or, if you wish to forego a typical over-the-top description of a recipe like the one above: ITS DARN GOOD.

Youre going to be able to make this either in your Instant Pot or just as simply on the stove. Forget the bland broth and clunky wontons with meat the size of a Skittle. Were talking perfect wontons in a broth so beautiful, it will be one of the most legit, perfect and flavorful wonton soups youve ever enjoyed rivaling even the best of NYC Chinese restaurants. AND, its surprisingly easy to make!

    Heres How I Made It!:

Well begin by making our wonton filling by taking a shallot

    and dicing it up finely.

    Take a bunch of scallions

and slice them up and then divide them into 1/3 and 2/3rd groups.

Take the smaller, 1/3 group and finely chop it up

while reserving the larger, sliced 2/3rds for later.

Take some shiitake mushrooms and remove the stems

and , finely chop those up too.

Why Make Chicken Noodle Soup In The Instant Pot

Over the last handful of years, Ive come to learn the art of making flavorful, delicious soup.

A flavorful soup begins with a veggie medley added to a perfectly hot pot with some melted butter. The flavors are sautéed together to create the building blocks for a delicious soup. This is why the sauté feature on the Instant Pot sold me. Sure, I was intrigued by friends making meals in minutes versus hours, but Ill admit that I was skeptical on how the flavor would turn out. When I learned that I could still layer my flavors and make a fast meal, I was sold.

As much as I truly adore cooking, there are those days or stretches of weeks where projects are due and I just dont have the time to be standing by the stove all day. My Instant Pot has made it possible to still put nourishing, real food on the table despite crazy schedules. Todays recipe uses the Instant Pot to make a nourishing meal in under 15 minutes, from start to finish.

Are you ready to give this easy Instant Pot chicken soup recipe a try?

This is what I call a dump recipe. There is no need to use the fancy sauté button. I literally dump all of the ingredients into my Instant Pot. I use an 8 Qt Instant Pot, which I think you need for this homemade chicken soup recipe.

Step 1: Add your chicken, vegetables, and seasoning to the Instant Pot. Don’t forget to remove the giblets bag!

Step 2: Add in the combination of chicken broth and water. Take note of the fill line!! You do not want to overfill your Instant Pot!!

Step 3: Seal your Instant Pot and set it to Soup/Broth. Add extra time if needed on your model so this soup cooks for 40 minutes. Allow the Instant Pot to depressurize, or use the quick release feature if your model has it.

Step 4: Check the internal temperature to make sure your chicken is at 165º F.

What Ingredients Will I Need For Instant Pot Chicken Soup

    Instant Pot Chicken Noodle Soup

This Instant Pot Chicken Soup is packed full of goodness. Youll need some simple, fresh ingredients to make it. You will, of course, need a whole chicken. Using a whole chicken provides the most flavor. You can use chicken breasts, but it wont be as flavorful and you may have to adjust the cooking time and make it lower.

As far as veggies, youll need baby red potatoes, carrots, celery, and onions. You will also need unsalted chicken stock, olive oil, minced garlic, turmeric, Italian seasoning, salt, and pepper.

The result when I combined all these ingredients in the Instant Pot? A very tasty and nutritious chicken soup that every single person in the family loved! If you are new to Instant Pot cooking, then youll need to know about the two methods to release pressure. The first is natural release meaning the pressure will naturally release over time and there is no need to touch the venting knob.

This method allows for continued cooking and also takes more time. For the very best instant pot chicken noodle soup, use quick release. Its perfect to get dinner on the table in a hurry.

    What Goes Into Italian

How to Make Instant Pot Chicken Vegetable Soup~Easy Cooking
    • Aromatics for flavor: The first step to making this soup is to sauté a combination of onion, garlic, carrot, and celery. This combination gives you a base layer of flavor to build on with the other ingredients.
    • The chicken: We like to use skinless, bone-in chicken thighs to make this soup. The bones are important for developing flavor and removing the skin cuts down on fat. When you make chicken soup on top of the stove you have an opportunity to skim off fat as the soup simmers, but since this wont be possible with the Instant Pot, eliminating the extra fat from the skin is key.
    • The vegetables: Diced tomatoes and healthy greens like escarole or spinach are added halfway through the pasta cooking time, lending both extra flavor and nutritional value to the soup. We favor escarole because its a classic Italian ingredient and it holds up a bit better in the soup than more delicate greens like spinach.
    • The pasta: Ditalini is the perfect cut of pasta for this soup. Its a small cut and cooks in the broth while you shred the chicken. You could also use elbows or mini shells.
