How To Cook Chicken Thighs In The Instant Pot :

Honey Garlic Chicken Thighs | Instant Pot Chicken Recipes

Set instant pot to saute setting. Add oil. Season chicken with desired seasonings. Once the oil is hot, add the chicken, and cook for 3-4 minutes on each side, until skin is crispy brown. Remove the chicken from the pot and set aside.

Add 1 cup of liquid to the bottom of the instant pot, scraping up any browned bites that have stuck from searing the skin.

Place trivet inside and add chicken thighs on top. Place lid on the instant pot and make sure the vent is set to sealed.

Pressure cooking times for fresh and frozen thighs:

  • Boneless Thighs: Pressure cook on high for 8 minutes for fresh or 12 minutes for frozen thighs.
  • Bone-in Thighs: Pressure cook on high for 10 minutes for fresh, or 15 minutes for frozen thighs.

Allow the pressure to release naturally for 5 minutes, then turn the valve to venting to release any remaining steam.

If desired, test chicken with a thermometer it should reach 165 degrees. Allow the chicken to rest for 5 minutes before serving.

Store leftover cooked chicken in the fridge for 3-4 days, or freeze for up to 3 months.

How Do I Get Crispy Chicken Thighs In The Instant Pot Pressure Cooker

When Im cooking bone-in, skin on chicken thighs, I always brown the chicken thighs, skin side down, first.

With all of the steam that the pressure cooker creates, the skin isnt going to stay crispy, but it will be much better than if we had skipped this step altogether.

For truly crispy Instant Pot chicken thighs, you will want to remove the chicken thighs from the Instant Pot after cooking and broil for 2-3 minutes to crisp up the skin, while the sauce finishes in the pressure cooker.

I know this is an extra step, but if crispy skin is important to you, youll find its worth it.

If you, like me, dont eat the skin, you can simply peel it off after cooking , and enjoy!

How To Make Instant Pot Chicken Thighs

When creating this recipe I tried so many different methods for getting the perfect juicy chicken meat, the perfect brown skin with just the right amount of caramelization, and the perfect velvety gravy with tons of flavour. Heres the BEST method for getting the perfect Instant Pot Chicken Thighs every single time:

  • Start on sauté mode. Youll be browning the chicken thighs first before pressure cooking, so use a bit of olive oil and make sure your Instant Pot gets nice and hot.
  • Use a fresh or thawed chicken, not frozen. Starting with frozen chicken wont work here. Be sure to thaw your chicken thighs completely first, before starting this recipe, or use fresh ones .
  • Pat your chicken thighs dry, and season generously. Patting them dry before browning will ensure the skin becomes as brown and crispy as possible. Youre going for colour AND flavour here.
  • Brown the chicken thighs on all sides, turning them gently. Let the skin brown nicely, turning the thighs as they brown Use a pair of tongs for this, and work carefully so you dont rip the skin.
  • Brown the thighs in batches, not all at once. If you crowd the Instant Pot the thighs will steam, not brown, so brown only as many at one time as will fit in one layer in the bottom of the pot. Once theyve browned, remove them to a plate and brown the next batch.
  • Cook for 10 minutes. This amount of time will yield delicious, juicy meat thats cooked through.
  • Do You Have To Use A Trivet In Instant Pot

    Instant Pot Chicken Thighs Recipe

    Technically, you do not HAVE to use the trivet when cooking chicken thighs in the Instant Pot. However, it is helpful for preventing the burn notice from appearing.

    All Instant Pots are different. Our older Instant Pot is much less finicky when it comes to trivets and we usually dont use one when making Instant Pot Chicken Thighs. However, our new one almost always gets the burn notice, so a trivet is a must!

    Instant Pot Chicken Thighs How To

    These chicken thighs are incredibly flavourful and easy to prepare thanks to to a few pantry-friendly and the handy Instant Pot. After quickly browning the chicken and sautéing some onions and peppers, then add in just about a half hour, it is done!

    Here is a visual step-by-step:

    • Season chicken with spices and slice onions and peppers.
    • Brown chicken in two batches in the Instant Pot on one side. Remove the chicken and set aside.
    • Sauté onions and peppers. Deglaze the pan with a few tablespoons of water and scrape up all the browned bits.
    • Place chicken on top of sautéed onions and peppers.
    • Seal the Instant Pot and cook on high pressure for 8 minutes for fresh chicken thighs, and 12 minutes for frozen. If using bone-in thighs, add 2 minutes to cooking time.
    • Allow pressure to naturally release for 10 to 15 minutes then turn the valve to venting to release any remaining steam.
    • Release any remaining pressure. When the steam has released, turn the lid, and carefully remove it. Taste and add salt and pepper to taste, if necessary.
    • Remove the chicken from the Instant Pot, and sauté the sauce to thicken, if desired.

    Make Honey Garlic Sauce

    *Note: If youre using store-bought sauces or other sauces, skip this step & jump to Step 2.

    First, heat up the Instant Pot using Saute Normal function.

    The indicator will switch to ON. Wait until the indicator says HOT .

    Melt 2 tbsp unsalted butter or add vegetable oil in the Instant Pot.

    Add in minced garlic, then saute for 45 seconds to 1 minute.

    Then, pour in 2 tbsp regular soy sauce and cup honey.

    Stir to reduce & thicken the honey garlic sauce a bit for 2 3 minutes.

    Add ¼ cup ketchup to a container, then mix in the honey garlic sauce.

    Give the yummy honey garlic sauce a taste and adjust accordingly.

    *Note: Its important to taste & adjust because different brands & batches of ketchup, honey, or soy sauce can vary in taste. For reference, we added another 1 tbsp ketchup to the honey garlic sauce to fully balance the flavors.

    Set aside and let it cool to thicken a bit.

    1. Season the chicken thighs: Transfer the chicken thighs to a large plate and drizzle with 1 tablespoon of olive oil. Season both sides with salt and pepper and sprinkle with garlic powder. Set aside.

    For best results allow the chicken to rest at room temperature for at least 15 minutes before browning. This will help prevent your chicken from sticking to the surface of your pot, pan, or skillet.

    2. Make your honey mustard sauce: Making homemade honey mustard sauce is super easy to do and requires just six simple ingredients . To prepare, simply add all of the ingredients to a small bowl and whisk well until combined.

    3. Brown the chicken: Set your Instant Pot to sauté high. Once your pot is hot, add the remaining olive oil and swirl to coat the bottom of your pot. Add the chicken, skin-side-down, and cook until the skin is golden brown and crispy . Carefully flip each chicken thigh over and repeat on the other side. Depending on the size of your chicken thighs, you may need to do this in two batches as we dont want to overcrowd the Instant Pot.

    4. Add the sauce and cook: Turn OFF saute mode. Pour the premade mustard mixture directly over the chicken thighs and secure the lid, remembering to check that the steam release is set to sealing. Cook chicken on MANUAL mode at HIGH pressure for 10 minutes. As soon as the 10 minutes is complete, carefully quick-release the pressure and remove the lid.

    How To Make The Perfect Instant Pot Gravy

    Making homemade gravy from chicken drippings in the Instant Pot is SO easy!

  • Start with roast chicken drippings. Pour the drippings from under the chicken thighs into a glass measuring cup or bowl and let the fat rise to the top.
  • Skim the fat. Spoon off most or all of the fat, and return the drippings to the Instant Pot set to sauté mode.
  • Make a flour slurry. Mix some flour and water together in a bowl until no lumps remain and add it to the chicken drippings. This will thicken the gravy. Just be sure to cook the gravy for several minutes to get rid of the raw flour taste.
  • Add some wine. Add a splash of white wine for flavour as the gravy thickens and reduces. This is an optional step, so if you dont consume alcohol just leave out this step, or add a few drops of Worcestershire sauce instead for a more savoury flavour.
  • Season well. Season it to taste with salt and pepper, and add a dash of smoked paprika for flavour .
  • Strain it! Always strain gravy to prevent lumps and remove any chunks or impurities left over from the chicken.
