If you know anything about The South, then you know that all of our favorite things revolve around food. We literally can not make it to a function, a gathering, a party, a get-together without thinking about, or cooking, food. Its one of the things that I love about Louisiana, our food is amazing.
Ive heard a lot about the pressure cooker taking away the fun of cooking. Obviously, these people have never tried cooking a pork roast for 18 hours in an indoor oven when its 1,000 degrees outside in Louisiana. Your house begins to feel like a sauna and it gets old really quick.

Cooking The Roast Until It Shreds
This roast is sliceable, which isnt usually how you want a pork shoulder but the pressure cooking renders such a tender roast that you can eat it like you would a normal roast. If you want a pork roast that shreds, you will need to cook it another 60 minutes. You have two choices with this recipe and both are great!

For The Orange Maple Glaze:
While the pork loin is cooking use a stovetop pan to make your orange maple syrup glaze. Combine the orange juice, brown sugar, and Dijon mustard on medium heat.
In a separate bowl, whisk the water and cornstarch until it has fully dissolved. Then, add it to the orange juice mixture on the stove. Let it come to a boil and then stir for another two minutes.
Now using a meat thermometer, check the pork loin to see if it has come for a 145 degree internal temperature. To do so, quick release the Instant Pot pressure before removing the lid.
Once youve checked the pork loin and its to temperature, remove it from the Instant Pot. Place it on a cutting board or plate and let it sit for about 15 minutes to cool.
Cut away the pork loin netting and place the pork loin on a serving platter and pour the glaze over top.
How Do You Marinate This Pork Loin Instant Pot Recipe
To marinate this pork loin instant pot recipe, first mix your ingredients together in a plastic ziplock bag. Then place the pork loin in the bag and let it marinade anywhere from an hour to overnight in the refrigerator. I do something similar with my London Broil Marinade. It just adds a ton of flavor to the meat, which only gets enhanced when you add it to the pressure cooker! Honestly, this is my favorite way to make this pork loin instant pot recipe. Its only a close second to my BBQ pork loin, which would also work in the instant pot! Just use the same ingredients, but follow the cooking directions below.

Instant Pot Pork Roast Seasoning
- Combine the oil, rosemary, garlic thyme, pepper, and salt in a small bowl
- Dry the meat with paper towels and then rub the herb paste all over the meat
- Heat, your Instant Pot with the Sauté button, add the oil and then sear your pork roast inside the Instant Pot
- Remove the pork, and then pour in the broth and deglaze by scraping the browned bits with a wooden spoon
- Add the onions, add your pork back in on top of the trivet, and cook at high pressure for 60 minutes
- Let the pot naturally release for 20 minutes and serve your pork

What Vegetables Go Well With Pork Roast
Every pork roast dinner has the following ingredients carrots, celery, potatoes, onion, garlic, and of course pork.
For the potatoes, I used red potatoes because thats what I had on hand. However, you can also use gold Yukon or Russet. I usually dont peel red or gold potatoes, but I do for Russet.
Its important you cut the vegetables into 1-inch pieces. If you cut them smaller, they may end up mushy after pressure cooking.

What Is The Difference Between Pork Loin And Pork Tenderloin

Pork loin can be easily confused with pork tenderloin. They may sound similar, but theyre completely different cuts of pork.
Pork tenderloin is the long and very lean backbone cut of pork along the backbone. Its always boneless and though its the most tender cut, its typically a lot pricier than pork loin.

Instant Pot Pulled Pork Recipe:
As far as meat, I typically use a pork loin roast. You can also use a pork shoulder if that is your preference. A lot of people worry about a pork roast becoming tender enough. As long as you use the right method and ingredients, it turns out absolutely perfect every time!
My general method has always been to slow cook pulled pork, like in the recipe I linked to above. But, since I’ve become a huge fan of my instant pot, I wanted to try cooking it that way. Happy to say it turned out great!
If you have time you will add your rub to your cubed pork roast, seal it in a bag, and let it marinate for a good 30-60 minutes before cooking for maximum flavor. When I make pulled pork in my crockpot, I find that marinating isn’t necessary because all of those flavors slow cook together for hours. However, for instant pot pulled pork, marinating really is the way to go.
Next, you will heat up your oil right in your pot, sear the meat in batches until browned on all sides. It won’t need to be cooked through at that point.
Then, you will want to use a small amount of beef broth to deglaze the bottom of your pot. If you don’t you may end up with that dreaded “burn” warning during cooking.
To deglaze, you’ll simply pour the broth right into the bottom of the instant pot and use a wooden spoon to scrape all of those brown bits off. This also adds great flavor to continue seasoning your meat as it cooks.

How To Cook A Pork Roast In An Instant Pot
Before cooking, let your pork loin roast come to room temperature. Take it out of the refrigerator to sit for about 20 minutes.
Set the Instant Pot to the sauté setting. Once it shows as hot, line it with a small layer of olive oil.
If youd like to sauté the outer layer of your pork loin first, place the room temperature pork loin in the pot. Sear it for approximately 4 to 5 minutes per side.
Then, remove it from the pot and place it on a large plate or cutting board. Turn the sauté setting off on the Instant Pot and remove the pork loin to switch the setting to meat/stew.
If you choose to sauté the pork in advance, be sure to deglaze your Instant Pot pan. Remove any of the seared brown bits on the bottom of the pot.
Insert the metal roasting rack and add 1 cup of bone broth to the Instant Pot. Once the meat/stew temperature is ready, place your pork loin on the roasting rack. Twist the lid of the Instant Pot, locked in place.
Let it cook for approximately 25 minutes for a medium-rare pork loin, or to an internal temperature of at least 145 degrees throughout.
