Heat up Instant Pot using the Sauté More function. Wait until the Instant Pot says HOT.

*Pro Tip: Make sure the Instant Pot is as hot as it can be to induce Maillard reaction.

First, pat dry your chicken with a paper towel.

Then, season one side of the chicken with salt & black pepper.

Add 2 tbsp unsalted butter or olive oil in the inner pot, and ensure to coat the butter all over the whole bottom of the pot.

Now, carefully place the seasoned side of the chicken in Instant Pot. Then, season the other side of the chicken with more salt & black pepper.

Brown one side of the chicken for 3 minutes before flipping over, then brown the other side for another 3 minutes.

Finally, set aside the browned chicken.

How To Make It

1. In the following order, add the broth, onion, carrot, celery, salt, thyme, garlic powder, sage, chicken and potatoes to the Instant Pot. Secure the lid, set the vent to sealing and cook on Manual high pressure for 4 minutes. It will take about 15 minutes to come to pressure.

2. At the end of cooking time, allow the pressure to release naturally for 5 minutes, then quick release the remaining pressure. While the pressure is releasing, whisk together the melted butter and flour until you have a smooth paste.

3. Open the lid and stir in the peas, butter/flour paste, Worcestershire sauce and cream. Turn on the Sauté function and simmer, stirring occasionally, until thickened to your desired texture . The potatoes will be very soft and will break down a bit to help thicken the texture. Season with salt and pepper to taste and serve immediately.

You Need A Pressure Cooker For This Recipe

Just a quick heads up that you will need an electric pressure cooker for this recipe. Anymore you can find them just about anywhere you turn.

I personally have an Instant Pot and so far I am loving it. In fact, I have 2. First I bought the 6 quart one and then later I got the 8 quart one. I highly recommend if you are going to purchase an Instant pot you splurge for the 8 quart one. You can find the Instant pot on sale here.

I seriously do love it. However, there are other great electric pressure cookers that will work great for this recipe too.

Assemble Instant Pot Chicken Pot Pie

First, sprinkle your clean surface lightly with all-purpose flour.

Unfold the thawed puff pastry, then carefully roll it out to a 2mm thick square with a rolling pin.

With a knife, cut out a piece of puff pastry thats a bit bigger than your containers top.

Then, cut a small cross in the middle of the puff pastry.

Fill the container with chicken pot pie filling .

Layer the puff pastry on top of the container and seal the edges by gently pressing the puff pastry with a fork.

Brush beaten egg evenly on the puff pastry with a basting brush. This gives them a golden brown color out of the oven.

Sprinkle some salt on the puff pastry to season it a bit.

How To Make The Chicken Pot Pie In The Instant Pot:

  • Place all the ingredients, except for the biscuits in the instant pot.
  • Place the lid on top and make sure your pressure cooker valve is set to the sealing position.
  • Press the manual button and select the pressure time to 25 minutes on high pressure. Cook for 20 minutes if you are using fresh chicken.
  • Allow the instant pot to come to pressure and cook.
  • While youre waiting for the instant pot to come to pressure, prepare homemade biscuits or cook your favorite store bought biscuits. For easy cleanup line your baking sheets with parchment paper.
  • Once the time goes off on the instant pot, do a quick release to remove the pressure. To do this, simply turn the valve on the lid to the venting position and allow the steam to release.
  • Remove the chicken from the pressure cooker and shred using two forks.
  • Return the chicken back to the instant pot and stir to combine.
  • Serve in a bowl with a golden brown biscuit on top and enjoy!

Bring the chicken pot pie filling to a simmer by pressing Cancel button, then Sauté button. Add in ½ cup 1 cup frozen green peas.

Cook the frozen green peas in the chicken pot pie filling for 1 2 minutes.

Then, transfer the shredded chicken back into the Instant Pot.

In a mixing bowl, whisk together ¼ cup cup all-purpose flour and ½ cup heavy cream until the flour is well dissolved.

Finally, thicken the chicken pot pie filling to your desired thickness by mixing in the flour mixture one third at a time.

Can You Use Frozen Chicken In An Instant Pot

It all happened when I was trying to figure out what to make for dinner one day. I didnt have anything thawed out in the middle of the afternoon so I knew I had to do something with my trusty Instant pot and pressure cook something for dinner. I was really craving some comfort food so I decided to give my chicken pot pie with potatoes recipe a try in my instant pot. It was a huge success!

I started with frozen chicken breasts and I was amazed at how quickly the instant pot cooked them up! The chicken was cooked all of the way through and was tender enough to be shredded with two forks! As a general rule, frozen chicken breasts will take about 25 minutes to cook in the pressure cooker, where thawed chicken usually only takes about 15 20 minutes.

Now I can make my easy chicken pot pie recipe that normally takes all day in the slow cooker in less than an hour from start to finish in my electric pressure cooker. If you have no dinner plans at 5:30 and nothing thawed out you can still have this easy pressure cooker chicken pot pie on the table in less than an hour.

Can This Be Cooked In A Pie Crust

Yes this chicken pot pie filling can be transferred to either a homemade pie crust or a ready-made pie crust.

When baking this into a pie crust, preheat the oven to 425 degrees. Prepare the pie crust and place it in a deep-dish pie pan. Transfer the prepared filling to the pie crust, add the top crust. Bake for 20-30 minutes or until the crust is golden brown and cooked through.

Can This Chicken Pot Pie Filling Be Frozen

Yes this pot pie filling can be frozen. Just place it in an airtight container or zip-top bag after it has cooled to room temperature. Keep it frozen for up to 3 months.

To reheat, thaw in the refrigerator overnight and then place it in a large stockpot and heat over medium, stirring frequently until hot.

I dont recommend trying to reheat using the Instant Pot pressure cook setting as the cooker will give you a burn notification when trying to cook something thick like this filling. You could however reheat it using the saute setting.

How To Use An Air Fryer Lid For Baking Directly In The Instant Pot

Instant Pot Chicken Pot Pie (with Pie Crust or Biscuits!)

Before I explain how to do this, Id like to share my personal opinion that the end result will be better by baking this in the oven as directed in the recipe. Not only is there more surface area therefore a higher crust-to-filling ratio but Ive found that its more evenly browned and just tastes better. However, theres something to be said for making it all in the same pot, so heres how to do it if you opt for this method.

  • Lay the pie crust on top of the filling or tuck in the edges.
  • Close the crisping lid, press Broil and set the timer for 10 minutes, then press Start.
  • When the time is up, check to make sure the pie crust is as golden brown as you like it. If not, repeat the process for a minute or two.

Heres an idea for keeping the ratio the same: bake the pie crust in the pot, enjoy it for dinner, then store it in the same container. Reheat the leftovers in your Instant Pot, then simply add another pie crust to the top and bake it again. This assumes youve eaten all of the pie crust the first time around. Note: I havent tried this method, but I dont see any reason why it wouldnt work!

If your heart is set on using puff pastry for your topping, you can bake it separately at 400F on a greased sheet pan or roll it out to fit the top of the baking dish and bake it with the filling. The air fryer lid doesnt work as well with puff pastry.
