Ingredients For Creamy Chicken And Rice Pressure Cooker:

Instant Pot Chicken and Rice | One Pot – 30 min Dinner
  • ChickenBreasts You can use boneless chicken breast or thighs that are fresh or frozen
  • Salt and Pepper
  • Onion or onion powder
  • Chicken Broth We like using low sodium chicken broth or chicken stock. You can use a diluted cube in water
  • Cream of Chicken Soup You can even use cream of mushroom soup.
  • White Rice We usually use white rice but you can also use long grain rice or brown rice
  • Shredded Cheddar Cheese

Paleo Whole30 Keto Variations:

Paleo and Whole30: For a paleo and Whole30 variation, omit the wild rice. Instead, once cooking is complete, toss in 2 cups of cooked cauliflower rice. Instead of cream or half and half, use full fat coconut cream.

Keto: For a keto variation, limit the carrot to just one diced carrot and add an additional stalk of celery. Omit the wild rice and toss in 2 cups of cooked cauliflower rice after IP cooking is complete. Use heavy cream, half and half, or coconut cream to finish it off. You can also top with parmesan cheese!

How To Make Instant Pot Chicken And Rice:

  • Turn the instant pot to the sauté setting. Add the olive oil, diced chicken, onions and salt and pepper to the pot.
  • Cook for 5-7 minutes stirring occasionally until the onions are soft and the chicken is browned slightly. Add in the minced garlic and cook for 1-2 minutes on the sauté setting in the instant pot.
  • Next add in the chicken broth and rice. Stir to combine all the ingredients together. Make sure that the rice is fully covered with the liquid . Then pour the cream of chicken soup on top but do not mix it in with the other ingredients.
  • Seal the instant pot and cook on high pressure for 3 minutes. After the cook time, let the instant pot naturally release the pressure by not moving the valve on the lid.
  • Once the pressure has been fully release, stir in the shredded cheese and serve warm. Enjoy!

How To Make Instant Pot Creamy Chicken And Wild Rice Soup:

Lets gather up these easy ingredients:

  • butter, ghee, or avocado oil

The only thing we really need to prep is chopping our onion, celery, and carrots.

The best part of this recipe is that we toss everything into the Instant Pot without having to cook a thing. In the Instant Pot, toss in the veggies with the chicken and uncooked rice, add in your herbs, and then top with chicken broth. Seal the lid and cook on high pressure for 15 minutes!

When you have about 10 minutes left on your IP timer, start making the mushrooms. Heat up a large skillet to medium high heat. Add in the oil or butter and saute the garlic for 1 minute. Then add the mushrooms. Cook for 5-7 minutes, stirring frequently until the mushrooms are nice and soft, browned, and flavorful. Sprinkle with a little sea salt.

Once the soup is done, use a quick release. Once the steam is completely released, remove the lid. Remove the chicken and shred with a fork, place it back into the pot. Stir in the cream and add in fresh parsley. Let cook on the warm setting for about 5 minutes, then pour into individual bowls. Spoon the mushrooms on top!

I was experimenting as usual and came up with what we are calling pressure cooker creamy chicken and rice casserole. It was meant to be chicken and wild rice soup but it came out much thicker and creamier than I had intended. Actually, we all agreed it was perfection, so I thought Id share it with all of you! Listed as one of our favorite Instant Pot recipes we hope you like it too.

  • If youre looking for chicken rice casserole with no soup in a can needed, this is it! Many recipes call for cream of chicken soup or cream of mushroom and those can be tricky when you pressure cook.

    We actually made something similar years ago. It wasnt quite as dump and go as this one and used white rice instead of boxed. BUT if you want to make Instant Pot chicken and rice without the creamy part we have directions for that too. Some used brown rice with this method and had luck.

    How long do chicken breasts take in the Instant Pot?

    Youll set the timer on the instant pot for 6 minutes. However, the pot will take around 10 minutes to come to pressure. During that time, the chicken will be cooking! If you did not sear the chicken, add 2-3 minutes.If you are using frozen chicken, add 4-5 minutes.

    Can you stack chicken breasts in the Instant Pot?

    Yes! Its okay if the chicken breasts are layered a bit in the instant pot. Just make sure you season them thoroughly all over so you get flavor in every bite.

    Can you use frozen chicken?

    Totally! Frozen chicken works great in this recipe. Just add 4-5 minutes to the cooking time. Keep in mind that frozen chicken breasts will release significantly more liquid during cooking, so you may want to drain some out before adding in the cream, otherwise it will be diluted significantly.

    Can these be made on the stovetop?

    Absolutely! No instant pot? This recipe is as simple as ever to make on the stove as well. Simply sear the chicken in a bit of oil until golden. Meanwhile, whisk together all of the sauce ingredients including the cream and corn starch and add to the chicken. Simmer until sauce is thickened and the chicken reaches an internal temperature of at least 165 degrees F.

    How To Make Instant Pot Chicken And Rice

    • Start by heating up oil in the Instant Pot.
    • Add onion, celery and garlic and saute for 2 to 3 minutes.
    • Add Italian seasoning and rice and saute for 2 minutes, stirring often.
    • Add 1/2 cup of water and deglaze the bottom of the pot by scraping any cooked-on bits with a wooden spoon.
    • Add remaining water, seasoned chicken, frozen veggies and butter. Stir in.
    • Close the lid, press “manual” or “pressure cook” button. Set timer to 5 minutes.
    • Once the cooking cycle is done, press “cancel/off” button and let the Instant Pot release the pressure naturally.
    • Open the lid and stir in the rice. You can add cheese and season with more salt and pepper if needed.

    Can I Use Frozen Chicken

    If you want to use frozen chicken, I recommend as above: cut the chicken into cubes, then freeze. Let it sit on the counter while you prep the veggies and saute them. Then place chicken on top of rice and veggies and pressure cook. The Instant Pot will take longer to build up pressure but the chicken will still be cooked.

    Tips And Tricks For This Easy Instant Pot Recipe

    Make sure your chicken isnt too thick. Chicken breasts these days can be VERY thick. If I happen to buy bigger breasts, I cut them in half so they are no more than an inch and a half thick at the thickest point. This makes them cook more consistently in the Instant POt.

    Set your Instant Pot to Sauté while you are peeling and chopping your carrots. That saves you the time of waiting for it to read Hot.

    Watch your butter carefully once you put it in, moving it around so it does not burn.

    We used a 6 Quart Instant Pot to make chicken and rice. This recipe moves fast so have all of your ingredients prepped and ready before you turn on your instant pot. Chop your onion, grate or your carrots , half your garlic head.

  • Set your instant pot to sautee on high heat, add 2 Tbsp oil and 2 Tbsp butter.
  • Add onion, carrots, and salt and saute 5 min.
  • Add chicken and salt and saute 5 min.

    There are some elements, well one mainly, the rice, that really doesnt freeze well in the soup. It just gets pasty and gummy in my opinion so there are a couple of ways that you can use this soup as a freezer meal that will avoid that whole soggy rice issue.

    Uncooked Freezer Prep Option: The first option for freezing this soup is basically setting it up as a freezer meal that can be all added to the Instant Pot on the night you are ready to prepare it.

    First, make sure you label your freezer bag with the name of the recipe and cooking instructions. Then add in the cut-up chicken, carrots, onions, and celery.

    Next, add the seasoning to the bag and press as much air out of the bag as possible before sealing. At this time youll want to leave out the rice and coconut milk. These two items will be added later when you are cooking the soup, same with broth.

    I always have brown rice, coconut milk, and chicken stock in my pantry so I know it will be there when I need it, but if you want to ensure youll have it when you need it you can add the brown rice portion to a small Ziploc bag and store that and other two ingredients together labeled with instructions that it goes the soup.

    You can use any kind of chicken here: chicken breast, thigh meat or chicken tenders. We prefer chicken tenders because they require very little prep , and reheat really well. They are also the most tender. We often use the chicken we have on hand.

    The best rice for this recipe is jasmine rice . You could also use Basmati or Texmati without adjusting the cooking time. Brown rice like we used in our Instant Pot Rice with Beef recipe, would require a longer cooking time.
