What To Use The Trivet For

The trivet comes with the Instant Pot. This is a simple insert that allows you to get some space between the bottom of the pot and whatever food youre cooking. Generally speaking, any food that you might want to cook without having it come into direct contact with liquid can be made more easily with the trivet. You can place the food directly on top of the trivet or add it to a round heat-proof casserole dish or cake pan and place that on top of the trivet.;

Think of things like chicken breasts, lasagna, breads, meatloaf, and other things that wouldnt taste great if they were super soggy. Its also commonly used for eggs, veggies, potatoes, or pot-in-pot cooking. Using the trivet can prevent burning or overcooking and also ensure even cooking.

My Instant Pot has become my do it all cooking appliance. It’s great for stews, soups, braised vegetables and meats, and sides. To take your Instant Pot skills to the next level, you gotta know how to brown meat.

If youve used the saute mode to brown meat in your Instant Pot then youve likely encountered the seemingly hard to avoid the problem of sticking. This is especially a problem with skin-on chicken.

Browning meat is such a critical step to adding flavor and depth to a dish so skipping the step is not an option unless you want food sub-optimized for flavor.

Straight-up as frustrating as it is to try and flip that chicken, only to leave that delicious and beautiful brown skin behind stuck to the bottom of your pan, there is a simple way around this.

The Most Important Step Add Liquid

No matter what youre using the pot-in-pot method for, dont forget to add liquid to the bottom of the pot. If youre cooking a saucy dish in the bottom at the same time, this should already be covered. If you are only cooking something in the elevated pot, be sure that you add water to the pot first. Otherwise, you will get the burn message as the pot heats up.

Whats The Big Deal With Instant Pots Anyway

Instant Pots are multifunction, programmable electric pressure cookers. Think of them as little cooking robots.

If youre not familiar with pressure cooking, the entire point of an Instant Pot can be confusing.

The big sell here is pressure cooking is up to 70 percent faster than other ways of cooking. Pressure cookers reach higher temperatures because their lids lock into place without steam escaping, which creates a pressurized environment inside the pot. In this environment, the cooker reaches 250°F .

Instant Pots can do other things besides pressure cook, too. With the lid off, you can sauté ingredients before pressure cooking. So How Do Instant Pot Settings Work

Each Instant Pot setting button is essentially a SMART PROGRAM option. Most smart programs, or buttons, simply set the pot to HIGH or LOW pressure for a specific period of time most closely aligned with the food it is meant to cook. For example, the default SOUP button sets the pressure cooker for 30 minutes at HIGH pressure, which you could use to cook any food that requires that much time and pressure.;

If you press each SMART setting button more than once, it will toggle between Normal, Less or More options, which gives you more control of time, temperature or default pressure. For example, the RICE button can be set to Less or More depending on how soft or firm you like your rice or the type of rice you might be cooking.;

Some buttons dont use the pressurizing function of the Instant Pot. For example, Slow Cook and Sauté settings use the heating element that sits underneath the inner pot. They are programmed for heat level and time.;

To keep it super simple, it is possible to use the Instant Pot for all recipes using just a few important buttons. With the Pressure Cook or Manual buttons in addition to the Pressure Level;and and buttons, you can control the time and pressure level which are otherwise preset for the rest of the buttons. This will work for any recipe that requires pressure. For non-pressure cooking, the Sauté, Slow Cook and Yogurt buttons help you accomplish a similarly custom cooking setting.

As usual, heat up Instant Pot Pressure Cooker using Sauté More function, and wait until it says HOT.

*Pro Tip: Make sure the Instant Pot is as hot as it can be in order to induce a maillard reaction.

Then, drizzle 1 tbsp olive oil in the inner pot, and ensure to coat the oil over the whole bottom of the pot.

Add 1lb zucchini chunks and a pinch of salt in the Instant Pot. Give it a quick stir.

Leave the zucchini alone for 1 minute and 30 seconds, then stir again.

*Pro Tip: Stir once every minute for 3 4 minutes until the zucchini are well browned.;

Whats Up With All Those Knobs And Buttons

I know, there are so many. Good news! You can ignore most of them. I use my Instant Pot nearly every day, and Ive never touched the Rice, Porridge, or Soup buttons. I do, however, make rice, porridge and soup in my IP all the time, just by programming it manuallywhich you need to know in any case.

For now, were focusing on the buttons you need for most pressure cooking recipes. If it helps, just get masking tape and cover up those other buttons so that you only focus on the buttons needed for our test drive:

  • On the Instant Pot Duo: the Low Pressure and High Pressure buttons, the +/- Cooking Time buttons, the Manual button, and the Keep Warm/Cancel button.

First, add 1 cup of cold water and a steamer basket in Instant Pot Pressure Cooker.

Allow steak to cool completely then put in airtight container or freezer bag. Store in the fridge for up to 4 days and in the freezer for up to 4 months. To reheat,

  • Pat steak dry with kitchen towel, rub with salt, parsley, oregano and black pepper.

  • Once instant pot is depressurised, open the instant pot and take out steak.
  • Immediately add the remaining garlic butter mix on top. Leave to rest for 5 minutes then enjoy with sides of choice.

For Simple Instant Pot Eggplant :

Instant Pot Sauté
  • Wash eggplant and cut into uniform slices or chunks.
  • Place a trivet or steaming basket into the pot with one cup of water.
  • Place the eggplant into the basket and set the Instant Pot to cook on HIGH for 3-4 minutes,
  • Finish up with a quick release.
  • Optional: Drain the water and add butter or oil. Season and saute the eggplant to brown the outsides.

What Is The Best Oil To Use To Avoid Sticking

Go for high smoke point oils. As a reminder, an oils smoke point refers to the temperature point in which the oil starts to become rancid. For high heat cooking like browning, searing and frying you want oils with high smoke points. These include ghee, peanut oil, coconut oil, or canola. Checkout this smoke point table for more details.

For Whole & Halved Brussels Sprouts:

  • Wash your brussels sprouts first. You can choose now to halve them or keep them whole. Halving them will work better if you want a more authentic roasted end result.
  • Place a steaming rack or the trivet into the pot along with one cup of water. Then, place the brussels sprouts into it.
  • Cook the sprouts on HIGH for 1 minute and follow up with a quick release of pressure. The 1-minute cooking window is better for halved sprouts or small sprouts. Cook for 2 minutes if you have large, whole sprouts.
  • Once the sprouts are softened, you can set them aside. Pour out the water you used to cook with.
  • Set the pot to saute mode and add 1-2 tbsp. of coconut oil, olive oil or butter . A high smoke point is ideal. Now, add the sprouts back in. You can add a little garlic, lemon or herbs
  • Saute until crispy with desired spices and serve.

The short answer is yes. Some Instant Pot models e.g. Ultra and MAX will allow you to set your altitude and the cooking times will be automatically adjusted for you. Otherwise, cooking should be adjusted 5% for every 1,000 feet above 2,000 ft. above sea level. So, for example, at 3,000 ft., you will increase cooking time by 5% and at 4,000 ft., you will increase cooking time by 10% and so forth. We Love The Instant Pot For Slow Cooking And Pressure Cooking But What About That Saute Button Our Test Kitchen Tries It Out

When it comes to the Instant Pot, its one of our favorite new kitchen gadgets . To combine the powers of a slow cooker and pressure cooker in one appliance is absolute genius! But I have to admit, I wonder about all those other functions, but most especially the saute option since it seems to be so useful . To find out if the Instant Pot can hold its own when it comes to sautéing, I checked in with our Test Kitchen to get the skinny.

So how does it work?

Looking at the Instant Pot, I understand that its built perfectly for slow cooking, pressure cooking, making rice and even making yogurt, but how could a deep pot like that possibly work that well for sauteing veggies and meats?

Well, it turns out the Instant Pot does a great job at sauteing your ingredients. Test Kitchen food stylist Shannon Roum showed me that all there is to getting this multitasking appliance ready to saute is to select that button on the machine as well as your desired temperature . After coming to temperature, Shannon placed a few chicken thighs skin side down in the bottom of the pot, and after a few minutes, the chicken had a great sear and nice crispy skin. I was a believer.

What are the advantages of sauteing in an Instant Pot?

Shannon also added that since you only use one pan when cooking all in the appliance, youre able to maintain a lot of flavor. You get to keep all those crispy brown bits from the bottom of the pan, she said. And any home cook knows, those bits are packed with flavor.

Ready Lets Cook Some Water

The first time you use your Instant Pot, make waternot food. This way, you can familiarize yourself with simply operating itno anxiety over ruining dinner. Ive been pressure cooking for over a decade, and I still do the water test every time I try out a new cooker.

Here’s what to do:

First, check the gasket. Make sure its snugly in the ring in the lid; 99 percent of the time, if your Instant Pot isnt coming to pressure, its a simple issue of the gasket not sitting in the ring quite right.

Next, put 3 cups of water in the insert. When following recipes, you should still measure liquids, but note that the insert has hash marks to give you a rough idea of the volume.

Now, lock on the lid. Use the arrows on the lid and the cooker to guide you.

Check the steam release valve to see its in Sealing position. If the valve is in Venting position, the cooker wont come to pressure.

Press Manual” on the Duo or select “Pressure Cook” on the Ultra. The display will say to 30:00. Its programming initially defaults to 30 minutes cook time of high pressure, which we can toggle up or down depending on how much time the recipe calls for. For our water test, well leave it at 30 minutes.

Now…do nothing. In a few seconds, the cooker will beep three times, and the display will read On. That means its heating, but not at pressure yet.

Instant Pot Bacon Ingredients

The process for cooking bacon pieces, short cut bacon or streaky bacon is exactly the same.;

You need just a little oil and your preferred bacon cut. In the photo below you can see we are using diced bacon for this recipe.;

You can also cook frozen bacon in the instant pot. If you have little bits and pieces like the above, you can use your wooden spoon to break the whole big chunk of diced bacon;apart as it cooks. It will take an extra few minutes to cook if you are starting with frozen bacon.;;

  • Peel the skin of the rutabaga. It is very waxy and unpleasant to eat. Then, slice into uniform pieces.
  • Place a trivet or steamer basket into your Instant Pot along with 1/2 cup of water.
  • For slices:;Cook on high pressure for 3-4 minutes and perform a quick release.
  • For cubes: Cook on high pressure for slightly longer at 5 minutes and perform a quick release.
