4 FAST & EASY Instant Pot Chicken and Rice Dinners!

I used golden Sella basmati rice for this recipe and it cooks just like long grain .

Golden Sella basmati rice: 1 ½ cups of water or broth to 1 cup of rice: 5 minutes cooking time.

Pure Basmati rice or Jasmine rice: 1 cup water or broth to 1 cup of rice: 5 minutes cooking time

Long grain Brown rice: cooks longer than any other type of rice: 1 ½ cup water to 1 cup of rice: 20 minutes cooking time

Recipe Notes And Tips

  • Leftover rotisserie chicken or leftover turkey are other types of meat you can use to make this chicken and wild rice soup. If using already cooked chicken, you can add it at the end.
  • You can add other veggies to this soup, like broccoli, sweet potatoes, mushrooms or peas.
  • Make this chicken and rice soup creamy by stirring in ½ cup heavy cream after you open the lid.

Thai Chicken Rice Bowl

  • Select the saute setting on your instant pot and add the olive oil.
  • Sear the chicken breasts for 2-3 minutes.
  • Place to the side.
  • In a bowl add the sweet chili Thai sauce, soy sauce, fish sauce, ginger, garlic, lime juice, Sriracha, and stir to combine.
  • Place the rice in your Instant Pot and add the chicken on top of the rice.
  • Now pour sauce over the top.
  • Add the broth into the pot and secure the lid.
  • Select the manual pressure setting on HIGH and set the timer to 10 minutes.
  • Once it is cooked allow it to natural release.
  • Remove the chicken and shred it with two forks.
  • Place the chicken back in the pot and stir to combine with the rice.
  • Garnish with cilantro, shredded carrots, and peanuts.

    Instant Pot Chicken and Rice Recipe

    If you forget to thaw the chicken and you want to cook this, Here’s how to cook frozen chicken and rice in instant pot:

    Turn on the instant pot and set to saute.

    Pour vegetable oil into the pot of the IP.

    Add the diced onions to the pot and saute it till it’s translucent .

    Then add in the garlic, diced bell pepper, dried thyme, curry powder, turmeric, crushed stock cubes, salt, and chicken broth.

    Add in the frozen chicken thighs in the pot and let it cook on saute for 5-8 minutes.

    Remove the chicken from the pot.

    Add in the washed rice into the pot, stir then arrange the chicken thighs on the rice.

    Close the instant pot with its lid then turn the valve into a sealing position. Set instant pot to pressure cook on high for 7 minutes.

    Once the time has passed, let the Instant Pot release naturally for 5 minutes, then you can do a quick release to get rid of any of the extra pressure.

    When the pot is depressurized, open it then stir the rice.

    Serve and enjoy.

    Ingredients In Instant Pot Chicken And Rice:

    • Chicken thighs: I highly recommend chicken thighs, over chicken breasts, because I think they cook much better in the instant pot and are more tender and flavorful. If you want to substitute chicken breasts, cook on high pressure for 8 minutes with a 5 minute natural release.
    • Rice: I use regular long-grain white rice. . Be sure to rinse the rice before adding it to the instant pot to remove the starch, and help keep the rice from sticking to the bottom of the pot.
    • White wine: Ive used white wine in this recipe to deglaze the pan and add great flavor to the dish. The alcohol gets cooked out. If you dont want to use wine, just leave this step out and deglaze the pan when you add the chicken broth.

    Can I Use Frozen Chicken

    You can use frozen chicken in the Instant Pot with this recipe and any recipe. However, chicken especially ALWAYS needs to cook longer. Instead of cooking your chicken for 10-minutes, you will want to cook it for 12-minutes. Additionally, the increase in time may not cook your rice just right. So, if you are doing frozen chicken, I would cook the meat and rice separately.

    How To Cook Instant Pot Chicken Thighs And Rice

    Start by seasoning the chicken thighs with paprika, garlic powder, black pepper, and salt.

    Put the pot in the instant pot, then turn it on to saute mode and allow it to heat up. Add in the vegetable oil. Once the oil is heated, arrange the chicken thighs in it in a single layer .

    Brown the chicken side for 2 minutes, then use a tong to flip them to brown the other side for another 2 minutes.

    If using bone in skinless chicken thighs, brown the sides for 4-5 minutes each.

    Take the chicken thighs out of the instant pot.

    Add the diced onions to the pot and saute it till it’s translucent .

    Add in the garlic, diced bell pepper, dried thyme, curry powder, turmeric, crushed stock cubes, salt.

    Turn off the instant pot then add a cup of chicken broth in the pot.

    Use a wooden spoon to deglaze the pot by lifting off any brown bits at the bottom of the pot .

    After deglazing the pot, add the remaining broth in the pot then add in washed rice.

    Stir, then place the chicken thighs on the rice.

    Close the instant pot with its lid then turn the valve into sealing position.

    Set instant pot to pressure cook on high for 7 minutes.

    Once the time has passed, let the Instant Pot release naturally for 5 minutes, then you can do a quick release to get rid of the remaining pressure.

    When the pot is depressurized, open it then stir the rice.

    Serve and enjoy.

    We used a 6 Quart Instant Pot to make chicken and rice. This recipe moves fast so have all of your ingredients prepped and ready before you turn on your instant pot. Chop your onion, grate or your carrots , half your garlic head.

  • Set your instant pot to sautee on high heat, add 2 Tbsp oil and 2 Tbsp butter.
  • Add onion, carrots, and salt and saute 5 min.
  • Add chicken and salt and saute 5 min.
  • Pour in broth and rice and stir. Place halved garlic head cut-side-down.
  • Cover with lid and set the lever to sealing position. Cook on manual high pressure 10 minutes with manual pressure release.
  • Tips For Using An Instant Pot:

    First-time users: always read the users manual for your specific instant pot prior to starting since your machine may not operate or look exactly like ours.

    • Make sure the rim and rubber seal on your instant pot are clean for the seal to form properly.
    • Stir the rice together before turning on to avoid the burn notice.
    • Remember to set your lever to the stealing position for pressure to build.
    • When manually releasing pressure, wear an oven mitt and keep your face away from the hot steam vent.
    • I keep a paper towel ready to shield the vent in case it sputters liquid while venting/releasing pressure.

    One thing that is important to know about rice is that it gets dried out in the fridge or freezer when its by itself. But, since this recipe has broth and chicken in it, it will keep well in the fridge or freezer.

    Store your rice and chicken in a sealed Ziplock bag or in a Tupperware container with a lid. You can keep it in the fridge for about 3 days.

    Tips For Instant Pot Chicken And Rice

    • To prevent the instant pot giving burn notice , make sure you deglaze the pot after browning the chicken. Ensure that no brown bits are sticking to the bottom of the pot.
    • Burn notice usually happens when there’s not enough liquid in the instant pot or when food is stuck on the bottom of the pot. The amount of water specified in this recipe is adequate and you should not get burn notice if you follow the instructions. This recipe was made using my 6 quart instant pot pressure cooker.
    • Use easy cook long grain rice or golden sella basmati rice for this recipe. Brown rice is not suitable as it takes way longer to cook than the type of rice specified. Easy cook rice has a perfect texture, plumps up nicely, and just has an overall better taste and texture that pairs with the chicken.
    • Wash rice with warm water 2-3 times or till water runs clear to avoid sticky rice.
    • Adjust cayenne or black pepper to suit your taste.
    • Use chicken broth as stated but where that is not available, replace with stock cubes like knorr, maggi plus water. This ensures your rice is flavorful.
    • Skinless boneless chicken thighs or breasts work best with instant pot chicken and rice as when browned for 4 minutes, how long to cook boneless chicken thighs or breast in a pressure cooker is 7 minutes which is the same time to pressure cook rice.

    Can You Freeze Curry Chicken

    If you dont plan on eating it in that time frame, then youll need to freeze it. You can easily freeze it in a freezer storage bag. You can leave it in your freezer for up to six months.     I have made this recipe successfully dozens of times and have yet to ever see the Instant Pot issue a burn warning while cooking it. MANY of readers have found the same success. A few readers, however, have reported receiving a burn error.
