A few weeks ago I tried making a Mississippi Roast for the first time. It is such a simple thing to make, involving a chuck roast, a few packets of mix, like ranch and brown gravy, and then the real kickerpepperoncini. I was skeptical, but it was absolutely delicious. I was chatting about it with a friend, and she asked if I had tried Mississippi chicken. She mentioned how good it was, so I gave it a try.

I opted to cook it in the instant pot because I am obsessed, but you could cook it in a slow cooker as well. And she was right. It was phenomenal. Probably one of my favorite ways to cook chicken ever. SO MUCH FLAVOR.

And it could not have been easier to make. I opted to skip the addition of butter because chicken thighs have plenty of oil in them and tend to stay moist and tender. But if you really want to add butter, go for it.

Its a savory chicken dish that consists of tangy ranch seasoning and pickled pepperoncini peppers that add a slight sweetness to offset all the richness.

This flavorful chicken dinner gets rave reviews every time its served and is wonderful with a slice of crusty French bread, served over creamy mashed potatoes, or perfectly baked rice.

Can I Make It On The Stove Top Instant Pot Or In The Oven

STOVE TOP: To make on stove top place all ingredients in a large stockpot, in the same order as recipe calls for. Cover and cook on low heat for 4 hours. Once chicken is fully cooked, shred, serve, and enjoy!

INSTANT POT: This is a wonderful dish to make in the Instant Pot. To make in the pressure cooker, place chicken in the inner basket. Add remaining ingredients and close the lid and lock it in place.

Turn the steam release knob to the sealing position. Select the pressure cook/manual button and select 8 minutes.

When finished, allow to sit undisturbed for 5 minutes. Once 5 minutes is up, turn the steam release knob to venting and then to quick release to allow remaining steam/pressure to be released. Serve and enjoy!

OVEN: To oven bake this Mississippi Chicken, preheat oven to 425ºF and prepare a baking dish with non-stick cooking spray.

Place chicken on prepared dish. Sprinkle with ranch seasoning and then top with remaining ingredients. Bake for 25-30 minutes or until chicken reaches an internal temperature of 165ºF.

You Need A Pressure Cooker For This Instant Pot Chicken

I am using an 8 quart Instant pot but you can use a 6 quart. I personally have an Instant Pot and so far I am loving it. You can find the Instant pot on sale here. Its really changed dinner time around here.

How To Make It

This recipe couldnt be more simple and likely wont even require a trip to the grocery store! Literally, you just put the chicken on the bottom of the pot and add everything else on top.

For fresh chicken which we recommend, cook time is just 10 minutes with a natural release. For frozen chicken, you will cook it for 15 minutes.

Once youve let is release naturally, open the lid and shred the chicken and serve. I also love to top it with our Instant Pot bacon for extra flavor!

Instant Pot Mississippi Chicken Tips:

  • Use Chicken Thighs: You can use breasts if you are in a pinch, but if you do, be sure to add butter to the pot. I prefer the thighs because it comes out so moist and tender.
  • Trim the fat from your thighs. You are going to shred the chicken, so you dont want to be biting into fat. Trim it before shredding or before cooking.
  • Make sure your lid is sealed tight. Check the rubber ring is on properly. If steam is coming out from the sides, shut the pot off, remove the lid, adjust the ring, and replace the lid.
  • To help your pot come to pressure faster you can turn the pot on to Saute while adding the ingredients, just be sure to put your liquid in first so you dont burn anything onto the bottom of the pot.
  • Let the instant pot naturally release for a little while before quick releasing as this will give you more tender chicken.
  • Use more or less pepperoncini depending on how spicy you like it.

Ingredients For Mississippi Chicken

  • Chicken we are using chicken breasts, cut into 2-3 pieces you can also use chicken thighs here. Sliced pork or turkey would also work well with the Mississippi gravy.
  • Au jus gravyseasoning you will need a packet of this dry seasoning, about 1 ounce . Brown gravy or dry onion soup mix can be used in place of au jus gravy.
  • Ranch dressing seasoning mix again, this is the dry packet seasoning mix, not the actual liquid dressing! You can use homemade ranch seasoning mix or just add a few herbs and spices that you have. You will need about 1 oz .
  • Pepperoncini peppers these add a lot of flavor and a little tang to the sauce, which helps to cut through the richness of the pot roast. Sliced banana peppers can also be used. Both come in a jar, sometimes sliced but often whole. They add a little bit of heat but the dish is not too spicy!
  • Butter and lots of it! It adds wonderful flavor and richness to the sauce. Some recipes call for salted and others for unsalted, its up to you. Its safer to go with unsalted as you can always season the dish more once its cooked.

The cook time is going to depend on the chicken

  • frozen chicken breasts cook for 30 minutes
  • thawed chicken breasts cook for 15-20 minutes
  • frozen chicken tenders cook for 6 minutes, let pressure release naturally for 6 minutes
  • thawed chicken tender cook for 3 minutes, let pressure release naturally for 6 minutes

You can cut the chicken breasts into smaller pieces to reduce cooking time. Plan on about 15 minutes for your Instant Pot to come to pressure, then the cook time will begin.

How Do I Make This Mississippi Chicken

You can this Mississippi Chicken in the Instant Pot or Slow Cooker.

If you are making this in the Instant Pot you will:

Place chicken broth at the bottom of the Instant Pot. Put the chicken tenders or halved chicken breasts in the bottom of Instant Pot.

Sprinkle the ranch seasoning mix & gravy mix over the chicken.

Add the pepperoncinis and juice.

Top with light butter.

Turn the steam release knob to the sealing position. Press the Pressure Cook/Manual Button and select 8 minutes.

When the cook time is finished, let it sit for a 5 minute Natural Release.

Turn to the Venting position to Quick Release and to let out the remaining pressure.

Chicken you can use boneless, skinless breasts or tenders

Chicken broth if you are out of chicken broth, you can use veggie broth

Pepperoncini brine this will come from the jarred pepperoncinis

Ranch seasoning pack the same seasoning pack you can use to make a dip. Or if youre a ranch lover like me, use two tablespoons from the big bottle of mix.

Pepperoncini peppers similar in appearance to banana peppers and usually stocked in the pickle aisle

When done you wont need anything beyond two forks to shred the meat. If you are pulling at all you havent cooked it long enough. Once done correctly as stated in the printable recipe card below youll have ultra tender shredded chicken to enjoy.

You can use this idea to change up the flavors next time too. As long as you use a minimum of 1/2 cup of liquid with your raw meat you should avoid the burn notice. If you are still worried because the IP site states a minimum of a cup, dont worry. If your proteins are raw they will release juices as well, this will add to that half cup.

Sauces count as liquid that is necessary to reach pressure as well. Like our Instant Pot bbq beef, we used barbecue sauce with a bit of broth to make it fall apart. Seriously only 2 ingredients in your pot and voila, dinner is served. You should give that a whirl after this one as well. Just dont use honey style sauces, those are too thick.

After the timer is done, do a quick release of the pressure.
