The chicken stew will still be delicious without the cooking wine but it is really a flavor enhancer you need to try to appreciate.

I only realized myself the amazing difference adding cooking wine can make to a recipe when one day I realized I was out.

This happened to me with my Instant Pot Creamy Chicken Vegetable Soup recipe. One day I had prepped all the ingredients to make it and realized I was out of cooking wine.

How Long Does It Take To Make Chicken Stew In An Instant Pot

Instant Pot Chicken Stew | Epic 30 Minute Dinner!

An Instant Pot requires some time to come up to pressure before it starts pressure cooking. Think of this like preheating the oven. Then after pressure cooking, it will take some time to bring the pressure back down. Then you will use the sauté function to thicken the soup. Below is a breakdown of the time required and estimates of the pressurization times. My estimates are based on my testing of this recipe, as written in the recipe card below, using a 6-quart Instant Pot Duo model.

  • Come Up To Pressure 10 minutes
  • Pressure Cook 10 minutes high pressure
  • Natural Release 10 minutes
  • Saute 5 minutes
  • Total Time 35 minutes *

* Times may vary depending on the ingredients used, such as frozen chicken, the model of the Instant Pot, or the amount of ingredients, such as if you double the recipe.

Coconut Chicken Curry Stew With Veggies

Place 1 cup low-sodium chicken broth with 1 1/2 tablespoons curry powder in an Instant Pot. Add 1 1/2 pounds boneless, skinless chicken thighs and arrange in an even layer. Layer 12 ounces carrot sticks or sliced carrots on top of the chicken. Lock on the lid, make sure the pressure valve is set to seal, and set to cook for 4 minutes under HIGH pressure. It should take about 20 minutes to come to pressure. Quick release the pressure, then turn the pressure cooker off. Stir in 1 can coconut cream and 5 ounces baby spinach. If youre looking for another Instant Pot meal, then this chicken stew is for you! And if you dont have an Instant Pot, you can prepare this stew on the stovetop. Either way, create a meal that is warm, comforting and delicious.

Instant Pot Chicken Stew Variations

Stir in some frozen green beans or peas after pureeing the soup.

Most varieties of potatoes work well in this recipe. My favorite is Yukon Gold, but red or russet potatoes are also good choices.

For a shortcut, use a teaspoon or two of my Homemade Poultry Seasoning Blend in place of the dried herbs.

This chicken stew could also be made in the slow cooker. Add all ingredients to the slow cooker, cook on Low for 5-6 hours, then remove the chicken and puree a portion of the soup as indicated in the instructions below.

Chicken And White Bean Stew With Tomatoes And Kale

Place 1 cup low-sodium chicken broth with 1 can crushed tomatoes with basil in an Instant Pot. Add 2 slices chopped, uncooked bacon and 1 1/2 pounds boneless, skinless chicken thighs, making sure the chicken is in an even layer and the bacon is submerged in liquid. Layer 1 bunch torn kale on top of the chicken. Lock on the lid, make sure the pressure valve is set to seal, and set to cook for 4 minutes under HIGH pressure. It should take about 20 minutes to come to pressure. Quick release the pressure, then turn the pressure cooker off. Stir in 1 can drained white beans. Serve with cooked macaroni pasta.

I am using an 8 quart Instant pot but you can use a 6 quart. I personally have an Instant Pot and so far I am loving it.

Finishing Up And Thickening The Stew

Once the chicken stew is done pressure cooking it is time to remove the cooked chicken from the pot and let it rest for a few minutes before cutting it into cubes or shredding it.

Cooling chicken and thickening the broth

While the chicken is cooling you will add the heavy cream and corn starch slurry to thicken the stew broth. Turn the appliance on sauté and bring the broth to a boil.

Stir occasionally with a long handled spoon until the broth has thickened.

Mix the cubed chicken and peas into the thickened stew broth. Serve immediately with some crusty bread to sop up the rich and creamy broth.

How To Make Stew Chicken On Stove Top

First cook chicken pieces in a sauce pan with little oil. Remove and set aside. Then into the same pan saute onions and carrots and cook for 5 minutes, until onions just begins to brown. Keep stirring.

Add garlic and cook for a minute.

Add white wine if using.

Add chicken broth, scrape all the browned pieces from the pan that might be sticking.

Add tomatoes and stir in for a minutes.

In a small bowl whisk flour with water. Pour into the pan.

Stir in chicken pieces, 3-4 cups of chicken broth, season with salt and pepper, add bay leaf and rosemary sprigs.

Pour in Worcestershire sauce.

Cover partially and simmer for 25 minutes.

Place cut potatoes into the sauce pan. Simmer for 20 minutes more uncovered.

The stew will thicken as it cooks. Add more chicken broth or liquid as needed during cooking.

Remember stew will thicken as it cools down.
