How To Make Instant Pot Ranch Chicken | Flavor Maker Series | McCormick

This is an easy recipe for making on a busy weeknight. Or, make it as part of your relaxing weekend meal plan.

The chicken and potatoes are cooked right in the Instant Pot. And, they are paired with a thick and creamy ranch sauce that is so good youll want to drink it with a straw!

Follow these simple steps for making Instant Pot cream cheese chicken with potatoes:

  • First, prepare the baby potatoes by coating lightly with oil and then some of the ranch seasoning in a bowl. Add them to the bottom of your Instant Pot.
  • Then, using the same bowl, add the chicken thighs or chicken breasts. Coat with a bit of oil and the rest of the ranch seasoning plus the Italian seasoning. Place the coated chicken on top of the potatoes in the pressure cooker.
  • Next, add the chicken broth to the pot. Place on the lid and seal, and set to manual pressure cook for 12 minutes.
  • Once done, allow the Instant Pot to do a natural release for 10 minutes before doing a quick release.
  • Use tongs to remove the Instant pot chicken thighs and potatoes and transfer to a serving dish. Then turn on the sauté function and stir in the cream cheese to make a creamy ranch sauce. Continue stirring until the cream cheese has completely melted and the sauce has thickened, about 5 minutes.

    Jam-packed with shredded chicken, cream cheese, ranch seasoning, and bacon, crack chicken has understandably earned its title. We already know chicken, bacon, and ranch go together but the addition of melty cream cheese really takes this dish over the top.

    For years Ive madecrack chicken in a crockpot, but now that Ive tried making it in the Instant Pot Im not turning back! This is one of myfavorite, easy go-to recipes and this method makes it even easier.

    Plus, this method takes only 30 minutes, so no impatiently waiting for the food to be ready like the crockpot.

    My favorite Crack Chicken recipe is made even easier by using your Instant Pot!

    Whether it is served as a sandwich or dip, crack chicken is perfect for family get-togethers, potlucks, and Superbowl parties!

    I’m not kidding when I say this is one of my family’s most requested meals. I never mind making it because I love it myself and it’s just so easy. Seriously, we even have this as an appetizer every year on Thanksgiving while we wait for the main course!

    What Is Mississippi Ranch Chicken

    It didnt occur to me until I was writing this recipe to some people may have no idea what Mississippi Chicken, or Mississippi Ranch Chicken, is because its so popular here. Everyone has their own version of it that they love to make.

    Anyway, Mississippi Ranch Chicken is, at its core, an effortless way of making chicken flavored with ranch, gravy, and pepperoncini or banana peppers. There are a few other ingredients, but those are the main ones in most Mississippi Chicken recipes.

    Its juicy tender chicken that will become a household favorite, and its comfort food at its finest.

    How To Make Instant Pot Crack Chicken

    You are just 4 easy steps away from serving up some delicious crack chicken! Make sure to taste the crack chicken before you season it, I often find I don’t need any more salt.

  • Add ingredients. Place 2 pounds boneless, skinless chicken breast, 8 ounces cream cheese, 1 package of ranch dressing mix, and 12 cup water or chicken broth in your Instant Pot.
  • Cook. Close the lid and make sure the vent is set to “SEAL”. Using the manual option, set your Instant Pot to high pressure for 15 minutes. Then, allow your Instant Pot to NPR for at least 10 minutes before turning the steam release handle to “VENT”.
  • Shred and mix. Once the pressure has dropped, shred the chicken in the Instant Pot using two forks. Thoroughly mix the chicken with the cream cheese and ranch combination. Top with 4 slices of chopped bacon and 1 cup grated cheddar. Allow the cheddar to melt a bit before serving.
  • Season and serve. Season with salt and pepper as necessary. Top with the optional green onion and serve on a hamburger bun as a sandwich, over steamed rice, or with chips as a dip!
  • This recipe makes 8 servings of crack chicken, which is plenty at my house. However, if you need to increase the servings this recipe is super simple to scale up by just doubling all the ingredients !

    Crack chicken is a perfect appetizer, lunch, or dinner! If you are serving up sandwiches, try some air fryer potato chips on the side!

    Can You Bake Potatoes In An Instant Pot

    If you like the idea of potatoes in an Instant Pot but you only want to bake potatoes, you can do that, too. An Instant Pot can hold about three pounds of potatoes at a time . Set the cleaned, whole potatoes on the rack and then add a cup of cold water. Cook on high pressure for 15-20 minutes, depending on how big your potatoes are. Release the pressure according to your pots directions. If you want a crispier skin, you can follow up the cooking process in the oven with a little olive oil glaze.     How To Make Instant Pot Parmesan Ranch Chicken:

    Start by adding the chicken and quartered baby red potatoes into the Instant Pot and drizzle them with the olive oil and toss the chicken and potatoes until they are coated with the olive oil.

    Then, in a small bowl, mix together the salt, ground black pepper, garlic powder, thyme, basil, oregano, and two tablespoons of the ranch dressing mix.

    Can Only Chicken Breast Or Thighs Be Used For Instant Pot Bbq Ranch Chicken

    • If your preference is all white meat chicken or all dark meat chicken, make sure to adjust the time accordingly.
    • Remember that dark meat is much juicer than white meat chicken and is more forgiving when cooked in an Instant Pot, Ninja Foodi or Pressure Cooker.
    • White meat chicken is drier and less fatty than dark meat chicken. To compensate, more of the creamy homemade dressing can be used.

    • Your Instant Pot won’t start cooking right away, it takes some time to build up pressure!
    • If you’re on a Keto diet, you can use a lettuce wrap in place of a bun!
    • Try mixing in some of your favorite hot sauce if you like a kick. It’s also great with Buffalo sauce mixed in!
    • It is easier to mix if you cut your cream cheese into cubes before putting it in the instant pot, but it isn’t necessary.
    • If you want to make a smaller portion, simply cut all the ingredient amounts in half and you should have about 4 servings.
    • Cheddar is my personal favorite, but if you don’t have cheddar cheese you can play around with different cheeses and I’m sure it will be delicious!

    Can I Cook Mississippi Chicken In A Slow Cooker

    Of course, you can make Mississippi chicken in a slow cooker. Its effortless! All you need to do is add the chicken to the bottom of the slow cooker, sprinkle with ranch and gravy mixtures, add butter and pepperoncini and put the lid on. Cook on high for 6-8 hours and low for 4-5 hours.

    I like making shredded chicken sandwiches in the Instant Pot because sometimes I wait until the last minute to decide what to cook. If you plan ahead better, then, by all means, use your slow cooker for this dish!

    How To Shred Chicken Fast:

    I use a hand mixer to shred the chicken faster. It is so easy and one of my best time saving kitchen tips!

    If you are not shredding your chicken this way, you are missing out. It can be done in a fraction of the time by doing it by hand.

    Plus, I love the texture of the chicken when you use the hand mixer.

    How To Make Instant Pot Mississippi Ranch Chicken

    Trim the fat & gristle off your chicken and place in the pressure cooker. Trimming the fat saves calories, and the removing gristle will make it easier to eat.

    Cover chicken with dry ranch and dry gravy packets.

    Pour in chicken stock and pepperoncini juice over chicken.

    If not using chicken thighs, place butter on top of chicken. Add pepperoncini.

    Cook for 10 minutes in Instant Pot.

    Shred chicken with a fork, pair of meat shredders, or drop it in your kitchen mixer. You want the meat to be shredded nicely with not big chunks.

    Serve however youd like.

    How To Store / Freeze

    Instant Pot Chicken Ranch Tacos

    Store it in an air-tight container or zip-lock bag and you can freeze it for up to 3 months. In the refrigerator, you can store it for 4 days.

    When you need to serve it –

    • From the freezer – bring it down to the refrigerator and keep it overnight. Then follow the instruction for the ‘Refrigerator’ method.
    • Refrigerator – Thaw it outside up to 2 hours. You can heat it in the microwave or over the stove. You can add little stock if it seems dry before heating.

    Using Frozen Chicken Breasts

    Can I use frozen chicken or should it be thawed?

    • Pour 1 cup water into your pressure cooking pot and place a trivet in the bottom.
    • Balance the frozen chicken breasts on the trivet, stacking crosswise if necessary.
    • Lock the lid in place.
    • Select High Pressure and 1 minute cook time.
    • Quick-release when done. Use chicken in the desired recipe as normal.

    Now, sprinkle the seasonings mixture over top of the chicken and redskin potatoes, then toss them together to make sure they all are seasoned well.

    After everything is well seasoned, pour in the chicken broth trying to avoid directly pouring it onto the chicken to keep as much of the seasoning on the chicken and potatoes as possible.

    Once everything is in the Instant Pot, place the lid on and turn the knob to the SEALING position. Then, press the MANUAL or PRESSURE button and set the timer to 13 minutes.

    How To Make Shredded Chicken In Instant Pot

    INSTANT POT RANCH CHICKEN WITH RICE RECIPE | COOKE WITH ME

    It cant get much easier when cooking this yummy chicken. Simply whisk together Buffalo sauce, chicken broth and ranch seasoning packet and combine it with chicken meat in an Instant Pot.

    Close the lid and make sure it is latched. Set the steam valve to seal and set the pressure cooker to cook at high pressure for 16-18 minutes. Let the pressure cooker do a natural release for about 10 minutes and then carefully do a quick release.

    Take chicken out into a large mixing bowl and leave the sauce in the pot.

    Thicken the sauce right after you take out the chicken, while it is still hot. Set the pressure cooker to saute. In a separate small cup, mix cornstarch and cold broth until combined and pour it into the sauce in the pot. Whisk well and let it simmer until the sauce is thickened. Depending on how much liquid you have left, use 1/2 tbsp of cornstarch per 1 cup of sauce. Once its thickened, turn off the heat.

    REMEMBER: you can always add more buffalo wing sauce at the end, for a stronger buffalo taste.

    Use two forks to shred the chicken meat and add the sauce. Mix it together until evenly incorporated and its ready to enjoy.

    Secure The Lid And Cook

    • Secure the lid and turn the pressure valve to Sealing, otherwise, steam will start to come out the sides as it heats up.
    • Press the Pressure Cook button. Press the +/- to reach 7 minutes. In about 10 seconds, the screen will show ON. It will take about 10 minutes for the Instant Pot to come up to pressure and the screen will change to 7:00 for seven minutes and will start counting down by minutes.
    • When the screen has counted down the 7 minutes it will show OFF. Then, set a timer for 7 minutes and do nothing. This will allow the Instant Pot to naturally release pressure .
    • After 7 minutes, turn the pressure valve to Venting for Quick Release .

    Now, remove the lid and stir the pasta gently. With tongs, pull apart any pasta stucktogether. It will appear fairly thin, but thickens up quickly.

    Let stand 5 minutes to thicken the sauce. Sprinkle with cooked bacon and additional parsley for garnish, if you like.

    For extra cheesiness, sprinkle on or stir in a little shredded Parmesan cheese.

    Totally optional because it’s already creamy and cheesy. I opted to not add an any this time.

    How Can I Divert The Steam If I Have Cabinets Above My Counter

    If your Instant Pot is directly under a cabinet, you might want to drape a kitchen towel over the back side of it and hold it at an angle to divert the steam that will shoot straight up.

    I usually do this even though I don’t have cabinets above my counter if I’m cooking pasta.

    You can also purchase a silicone steam diverter. I’ve seen a lot of fun ones shaped like Despicable Me minions, birds, and angry men.

    I bought a plain red one just to see how it worked and loved it.

    How To Make Chicken Ranch Tacos In The Instant Pot:

    • Place chicken in the instant pot.
    • Cover with 1 ½ cup of water, salsa, and, ranch seasoning mix, and taco seasoning.
    • Place the lid on and make sure the nob is set to sealing.
    • Do the quick release or natural release to pressure release.
    • Remove the chicken and shred the chicken. If there is too much liquid you can drain some liquid out.
    • Return to the instant pot and stir.
    • Place chicken in taco shells or tortillas. Top with your favorite toppings.

    Also, I love squeezing a fresh lime over my tacos. Sometimes, I also add a dash of olive oil to the chicken.
