What Cut Of Brisket Am I Using

So I discovered this the hard way. Brisket is made up of two different cuts: the point and the flat. The point cut is fattier, and the flat cut is drier and leaner

The fatty cut is ESSENTIAL for a good smoked brisket. For smoking, you want what’s referred to as a Packer’s cut, or the untrimmed version that has both the flat and the point. This usually comes in GIANT MASSIVE sizes. I get mine from Costco, and I use this smoker for the best brisket ever.

For a braised brisket, however, you can use the flat cut. This one is tougher and needs either a long, slow, low cook time, pressure cooking or slow cooking.

Serving Instant Pot Beef Brisket

To serve, there are two options.

  • Slice the brisket and place on a serving platter. Spoon the reduced/thickened sauce over top and garnish with fresh herbs of choice.
  • Shred the brisket using two forks. Return the shredded brisket to the Instant Pot with the sauce. Toss to coat all the meat in the sauce. Serve as desired. This is how I like to serve braised leg of lamb too.
  • If choosing the shredded Instant Pot brisket and tossing with the sauce, try serving it on top of Creamy Cauliflower Pumpkin Mash, Roasted Parsnip Puree, Roasted Garlic Greek Yogurt Smashed Potatoes or, Goat Cheese and Spinach Mashed Sweet Potatoes.

    If you have a butcher, you can usually ask for whatever size brisket you need. Its usually available in the meat section of your grocery in a 2- to 4-pound size. But they can come up to 12 or 14 pounds.

    For 2-4 people, a 2-pound brisket is just right. It wont leave a lot of left overs though, so we always go for a 3-pound brisket for 2 people. Then we can make more meals from it.

    Its possible to cook up to a 4-pound brisket in a 6 qt Instant Pot. Any larger than that and it doesnt fit well in the pot. You could go up to a 6-pound brisket if you have an 8-quart Instant Pot.

    You will find the full recipe with ingredients and nutritional breakdown in the recipe card below. Here are some handy step-by-step photos of how to cook brisket in the Instant Pot. You can use a 6-quart or 8-quart Instant Pot for this dish.

    Prep. Trim some of the excess fat from the brisket but dont remove all of it from the top. Keeping some fat will keep it moist while cooking. Plus, it will render down.

    Step 1. In a bowl, mix the spices, salt and pepper to make a brisket rub.

    Step 2. Rub the spice mix all over the brisket evenly.

    Step 3. Add 1 cup of beef stock to the Instant Pot and whisk in about two tablespoons of the barbecue sauce.

    Step 4. Place the brisket in the broth, fatty side up.

    Step 5. Brush another 2-3 tablespoons of barbecue sauce over the top.

    Step 6. Secure and lock the lid. Set to Pressure Cook/Manual and adjust the time to 70 minutes at HIGH pressure. Once the timer is done, allow the pressure to release naturally.

    Step 7. Open the lid and remove the brisket to a cutting board. Pour the cooking broth to a jug or a container there should be quite a lot of it. You can use some of it for cooking rice or potatoes in the Instant Pot and some to pour over sliced brisket.

    Step 8. Brush or spread the remaining barbecue sauce over the cooked brisket. You can cover it with foil to keep warm or leave it in the Instant Pot while preparing sides.

    When youre ready to serve the meat, slice the brisket into thin pieces and drizzle over with the cooking broth.

    How Do I Make My Brisket Tender

    This method of cooking is #1 on the list if you ask me. To go a step further you could the night before if you wanted. Another tip is to allow it to rest for at least 10 minutes before slicing and serving it. You want to have liquid in the pot no matter what method you use. Even with air fryer brisket you steam it with broth.

    Pressure Cook The Brisket

    There will be some browned bits on the bottom of the pot from searing the brisket. Adding beef broth to the pot will help you loosen the browned bit, and all that flavor, from the pot. Just a note of caution, if saute mode is still on, and the pot is very hot, you need to be very careful adding liquid to the pot. It will steam up immediately and can burn your arm if youre not careful.

    To avoid the safety issue, I always turn off sauté mode and let the pot cool slightly before adding the broth. Add the broth and scrape the bits up with a spatula. This adds great flavor to the meat, so dont skip the step of whisking up the browned bits. It also prevents the BURN notice that might come from browned bits remaining on the pot when you set the pressure.

    Add the BBQ sauce , liquid smoke, and the diced onions to the pot. Then set the brisket back into the pot, nestling it in among the sauce.

    Close the Instant Pot and set it to pressure cook on high . Set the timer to 75 minutes. This is the perfect amount of time for a 3 pound piece of meat. For a 4-6 lb brisket, set the time to 80 minutes. For a smaller piece, from 1-3 pounds, set the time for 60 minutes.

    After the time is up, allow the pressure to release naturally. This will take 10-15 minutes. If after 15 minutes, there is still pressure, you can release it manually.

    When you open up the pot, youll be greeted with a heavenly piece of meat that is fall apart tender and ready to be devoured.
