  • Dont over-mix. Mix the meatloaf ingredients only until just combined. If you overwork the meat, it could come out dry and tough.
  • Be careful when you take the meatloaf out of the pot. There will be hot dripping in the foil.
  • Let it rest. Make sure you let your meatloaf sit for at least 10 minutes before slicing into it so the moisture has a chance to settle back into the meat. if you cut into it too soon, that moisture will seep out and you might end up with dry meatloaf.
  • If youre skipping the potatoes, set the meatloaf on a trivet and add some broth or water. You will still need liquid in the instant pot for it to come to pressure.

The easiest way to cook them is in a steamer basket. However, if you dont have one, I recommend doing your best to stack them on the trivet that was included with your pressure cooker.

You can cook them directly on the bottom of the pressure cooker, but they wont cook as evenly and will have a higher water content.

    Instant Pot Mashed Potatoes Tips:

There is something magical about potatoes in a pressure cooker. They become as light and fluffy as they can be with this method of cooking. Im not sure what the science is behind it, but these are the lightest, creamiest, fluffiest and best mashed potatoes Ive ever had! However, I have a few tips:

  • I toss a garlic clove into the pot with the raw potatoes. We love the subtle flavor, but if youre a mashed potato purist, leave it out. Garlic powder can also be good stirred in after cooking.
  • Youll want to heat the milk, butter and cream cheese slightly before adding it to the pot. To do this, chop the butter and cream cheese into small pieces, pile them in a 2-cup measuring cup and microwave it for just about 30 seconds. It shouldnt boil or simmer, it should just take the fridge chill off of them.
  • For the actual mashing of the potatoes, if youre going to use a hand-held masher, its best if its silicone or plastic, not metal. I dont want you to scratch your instant pot insert. The most recent time I made these instant pot mashed potatoes, I used my hand mixer, but I was careful to not let the beaters touch the sides or bottom of the bowl. The potato mixture is so soft and fluffy, its easy to do and only takes about 15 seconds! Plus, it ensures the garlic clove gets thoroughly incorporated.

What Is The Best Potato For Mashed Potatoes In The Instant Pot

Ive had success with many types of potatoes:

    • Russet potatoes
    • Yukon potatoes
    • Red potatoes

Besides some variations in taste and texture, the timing will be adjusted slightly for each type. Russet potatoes need a bit more time because they are larger, and red and yukon potatoes dont need quite as long because theyre smaller.

How To Make The Best Mashed Potatoes

I never knew how creamy and fluffy mashed potatoes could be until I learned how to make them the right way. There are a few important things to remember when you make mashed potatoes.

  • Drain the potatoes well. After the potatoes cook in your Instant Pot you will transfer them to a colander to drain. Then put them back into the Instant Pot with the pot on warm. The hot pot will help more of the water to evaporate from the potatoes.
  • Mash by hand. I know it can be tempting to use a stand mixer to mash your potatoes, but dont do it. Overworked potatoes can turn out gummy or gluey. For the best texture, mash by hand with a potato masher. You can mash the potatoes right in the Instant Pot and it only takes a few minutes.
  • Use enough butter. For mashed potatoes with rich flavor, you need butter. You can adjust the amount to your tastes, but when it comes to mashed potatoes I dont recommend skimping on the butter. I use one tablespoon of butter per pound of potatoes.
  • Warm the milk. You can heat the milk for mashed potatoes in the microwave or on the stove. Warm milk will absorb better into the potatoes and will keep the mashed potatoes hot. Add the milk a little bit at a time, until your mashed potatoes have your desired consistency and creaminess.
