How We Test Instant Pots

We lined up the Instant Pot Lux, Duo, Duo Plus and Ultra for a side-by-side comparison in which we evaluated cooking capabilities, time, temperature, controls and the final cooked results. Although each model is available in multiple sizes, we purchased the 6-quart model of each to eliminate any variables related to volume.

We purposely selected these five cooking methods and their corresponding ingredients, as they represent the most common uses for Instant Pots.

OK, canning in a pressure cooker is a hot topic in many pressure cooking and Instant Pot groups.

Officially, the USDA has not approved any electric pressure cooker for home canning, including the Instant Pot Pro Plus.

However, ever since the Instant Pot Max came out, some people have been using the Max pressure setting to can with great results. Others have been more cautious.

The same principle will apply here with the Pro Plus. Do what feels comfortable for you!

WARNING: Instant Pot cautions all users to avoid using the canning function at altitudes above 6600 feet.

What Is An Instant Pot

An Instant Pot is an electric pressure cooker, sometimes called a multi-cooker. You can use any electric pressure cooker recipe in these machinesyou don’t need a recipe formulated specifically for an Instant Pot. However, since it takes some time to figure out how to use and navigate the controls of each model, your success with any given recipe will depend on your familiarity with the model you own.

Electric multi-cookers usually come with low or high pressure cooking settings, but these aren’t regulated terms. Instant Pots, for example, reach slightly lower PSI compared to comparable “low” and “high” settings on many stovetop pressure cooker models this won’t always affect how a recipe turns out, but it can.

The appeal of electric multi-cookers is twofold. First, they self-regulate their pressure level, meaning you don’t have to babysit them and periodically adjust the level of heat produced by the burner, as you do with a stovetop pressure cooker . Second, as the name indicates, they have other functions: slow cook , sauté, steam, rice/grain, yogurt , and warm. Newer Instant Pot models claim to perform additional functions, like cake-making, air-frying, sous vide, sterilizing, and pressure canning . What an electric multi-cooker does really well is it allows even the novice home cook to set-it-and-forget-it and enjoy relatively hands-off cooking with confidence.

Other Instant Pot Pro Plus Error Codes

Lid indicates that the lid is not correctly positioned. Simply open the lid and replace it, ensuring it is properly placed.

PrSE indicates that pressure has accumulated during a non-pressure cooking program. You will want to use the quick release vent to reduce pressure in the pot.

Alt means that the temperature for safe canning was not reached. Check the seal is correctly in place and that theres water in the pot.

The remaining error codes are quite rare:

C1, C3, C4, C6: These errors dont specify what exactly is wrong, just that your Instant Pot may have a faulty sensor and that youll need to contact customer support at 1-800-828-7280 or support @ instantpot.com.

C7 indicates that the heat element has failed, there is not enough liquid, or the quick release switch is set to vent position. If you get the error after checking the vent release valve and checking to make sure there is the minimum amount of liquid required for pressure, you would need to contact Customer Support.

C8 indicates that you have placed the wrong inner pot in the housing. The pots are not interchangeable.

C10 indicates theres a WiFi error. If you keep getting this error, youll need to contact customer service.

Depending on what you plan to make with your Instant Pot, extras range from practical and essential to plain old fun. Some people buy extra sealing rings so they can use one for meat and one for baked goods. Some invest in egg trivets if they cook a lot of hard-boiled eggs. Some look into springform pans to make cheesecake and quiche.

    Theres a pretty big difference in functions between the Instant Pot Duo and the Duo Plus. The Duo Plus has sous vide and sterilizer functions, and an additional two cooking programs. This alone may be enough to seal the deal for the Duo Plus. A handful of smaller features can also be found on the Duo Plus, such as quiet steam release, an anti-spin cooking pot design, and a cooking status bar on the LED display.

    What we liked: This model pressurized the quickest and offered the best searing and sautéing experience, with a stable, non-spinning pot. The ability to use the stainless steel inner pot on an electric, induction, or ceramic stovetops was welcome, as it gives the user greater flexibility and control. Releasing the steam feels straightforward and safe because of its separate push-button release and the plastic cover around the steam valve. The control panel is easy to navigate with a mixture of buttons and a dial. We also liked the handles on its cooking pot, which made it easier to lift the pot up and out of the Instant Pot’s base.

    What we didn’t like: Its pretty expensive at about $130 . The sous vide function works, although it isn’t nearly as reliable as an immersion circulator.
