Making gravy in the Instant Pot is a breeze. The easiest method is to remove the pot roast and vegetables when they are done cooking then switch the cook setting to saute. If there arent enough beef drippings to make a gravy, add some beef broth. Combine a little water and some corn starch in a liquid measuring cup to form a cornstarch slurry. When the drippings and broth start to simmer, whisk in the cornstarch mixture a little at a time until it becomes a gravy consistency. Simmer about 3 minutes adding more beef broth to thin if needed. Add salt, black pepper, and a little garlic powder to taste.

The best thing about this pork roast is that it goes with just about any side dish you want to serve, so you dont have to put a lot of thought into what to make for dinner.

I am a huge fan of mashed potatoes, so I usually serve pork roast with mashed potatoes and gravy, but it also goes really well with roasted cauliflower, green beans, or crispy roast potatoes.

My mom always bought marbled beef chuck roasts. Ive seen them labeled for crockpot at the store now, because apparently thats all most people use them for is slow cooking! If youre up for it, I think a chuck roast is a great cut to grind to make burger patties or for chili! Speaking of, have you seen my small batch chili or my blue cheese burgers?

I want you to seek out the smallest chuck roast you can find. A 2-pounder is a perfect one, and I routinely find them this small. This recipe uses just 1 pound of chuck roast, but were going to cut the 2-pound piece of meat in half and store the rest in the freezer for another instant pot beef roast someday.

When youre cutting a chuck roast in half, cut it down the middle and try to preserve equal amounts of fat on each piece. For example, dont cut down one of the layers of fat and leave one lean piece and one fattier piece. The fat in a chuck roast melts into the meat and keeps it moist while cooking. If you dont want to eat the fat, refrigerate the meat before serving, and scrape the white fat off the cooking liquid before re-warming.

No Sauteing Just Throw It In

When Ive looked at instant pot roast recipes, so many of them want you to spend time searing the roast and saute things. I even saw one that was 120 minutes cook time. What is the point of the Instant Pot if youre going to do all that? I like a recipe that I can just throw it all in and voila, its done. If thats you, too, then this is the recipe youre looking for.

Can I Cook Frozen Roast In The Instant Pot

Short answer: yes you can!

How? Just follow the same instructions except browning and increase high pressure cooking time to 90 minutes.

Long answer: dont do it! It wont turn out the same! Its worth postponing your pot roast dinner to the next day while you wait for the roast to thaw in the fridge. I mean it.

I have experimented with this a couple of times. Believe me, I GET IT, when you say I keep forgetting to place my meat in the fridge to defrost. Im the most forgetful person on the planet. I keep forgetting stuff like that, too.

However, the few experiments I did led me to less delicious results and in the end I felt unhappy. Such a beautiful and delicious piece of meat prepared in a meh way just doesnt give it its due respect.

Refrigerator thawing is really slow BUT when meat is defrosted slowly the moisture is slowly reabsorbed by the muscle fibers. Quick thaw methods result in drier and tougher meat once its cooked because the moisture just flows off and away from the piece.

So, if you are forgetful like me, plaster your kitchen with post its, set alarms in your phone, add reminders to your google calendar. Ask a friend to call you and remind you. Do whatever it takes to remember to place that beautiful piece of meat in the fridge 24 hours earlier or just go to the store and buy a fresh or already thawed one in the first place.

How To Cook A Roast In The Instant Pot Tips & Tricks

  • You really do need to cook a blade or chuck roast for 120 minutes. Blade and chuck roasts are very tough and have fibers that absolutely need to be broken down by cooking, and cooking for a long time. Theses roasts take 8-10 hours in the crockpot, so 2 hours in the Instant Pot is definitely the way to go!
  • You need liquid and not just liquid you need DELICIOUS liquid. Food can be a bit bland when pressure cooking so you need to spice up!
  • If you have a roast that is from a quality butcher, you can try cooking it at 90 minutes. Grocery store roasts are generally lower quality. Play it by ear based on the meat quality of the roast you are cooking.
  • Thick roasts may need to be cooked a little longer as its thickness that determines how those fibers are going to break down inside.

Just writing this post up makes me want to make this roast again. Its similar to that Mississippi roast in the fact that I use a package of dry Ranch dressing in it, but theres no peppers. Trust me, the dry Ranch dressing makes this delicious!

How to Cook a Pork Roast in the Instant Pot

One of the big challenges of making a pot roast in the Instant Pot is avoiding mushy vegetables. Many recipes put them in with the roast, which leads to disintegrated onions, mushy carrots, and mashed potatoes. Other recipes wrap the veggies in foil to protect them a bit, but those too get reports of mushy veggies. Plus, I like to have my carrots and potatoes soak up the wonderful flavor of the beef broth and onions. They wont get that wrapped in foil. I also am not the biggest fan of pressure cooking foil with my food, although I do occasionally do so.

My solution is to pressure cook the beef roast first, remove it to a plate and tent it with foil, add the vegetables to the broth, and pressure cook for 5 minutes. Use 2-3 minutes for firmer vegetables and 8-10 for softer. It doesnt hurt the meat to rest a bit like that anyway. I do cook initially with onions as well, but I add more at the end to have some firmer onions in the mix.

  • Remove the beef and cook the onions: cooking the onions adds another layer of flavor to our gravy! Then add the garlic and cook just a minute, so that it doesnt burn.
  • Deglaze the pot: Add the rest of the gravy ingredients . Scrape the bottom of the Instant Pot with a wooden spoon to remove any bits that might be stuck on the bottom.
  • Add the roast and pressure cook until tender: If your roast is cut into 1 lb chunks, it shouldnt matter how large it was to begin with they will all cook in about the same amount of time. I cook mine for 60-65 minutes. Depending on the type of roast you have and how you like your meat cooked, you may want to add additional time.
  • Let the pressure release and add the vegetables: at this point you have the option to remove the roast if it is cooked and tender, and shred it while the vegetables cook, or just add the vegetables on top of the roast.
  • Once everything is cooked, let the pressure release again and serve: Letting the pressure release naturally, completely is the best way to ensure moist and juicy pot roast. Once the pressure is released, open it up and thicken the gravy on saute if desired.
