Pat cooked her roasts several ways. I tried Italian style, with some ground fennel and rosemary in the spice rub, white wine, chicken broth and garlic bath, cooked only 12 minutes so that there was a little pink interior and served with a cannellini bean, red swiss chard side. This was a big hit with all! Also made great leftover pork sammies.
She also shared that she cooked the sirloin tip roast in spiced apple cider, which reminded me of one of my favorite BBQ pork recipes: a Spicy Grilled Pork Tenderloin. So I decided to use the spicy rub from that recipe on the sirloin tip roast and cook it in the pressure cooker.

How Long To Cook Pulled Pork In The Instant Pot
The amount of time you need to cook pork in the Instant Pot will vary based on the cut.
- Pork Loin. For a 4-to-5-pound pork loin, pressure cook for 40 minutes on high, then let the pressure release naturally for 15 minutes.
- Pork Shoulder/Butt. For a 4-to-5-pound pork shoulder or pork butt, cook the pork for 1 hour on high pressure, then let the pressure release naturally for 15 minutes.
- Pork Tenderloin. I do not recommend this cut for pulled pork, as it will be too dry. See more in the ingredients section below.
How Should You Season Pork Loin Roast
I like to season the roast with a simple mixture of salt, pepper, and garlic powder after rubbing it with a little olive oil.
Searing the roast in the Instant Pot using the sauté function creates a caramelized exterior yum! And it leaves behind some tasty bits on the bottom of the pot to flavor the pan juices double yum!

Can You Use A Bigger Pork Roast
Yes, of course, you can! Just make sure it fits in your Instant Pot. You need to ensure that you dont pack the pressure cooker full and go past the maximum fill line.
Use 60 minutes as a starting point and go from there. You can always check how tender your pork roast is after 60 minutes of cooking time. Then put it back in your Instant Pot for longer if its not quite there yet.
Approximate Instant Pot pulled pork cook time by weight:
4 pounds of pork = 60 minutes cooking time
5 pounds of pork = 1 hour 10 minutes cooking time
6 pounds of pork = 1 hour 15 minutes cooking time

The Best Instant Pot Pork Tenderloin Any Way You Like It
This recipe will walk you through the four basic steps of making pork tenderloin in your Instant Pot: seasoning, searing, pressure cooking, and making a sauce from the pan juices. Once youve got these steps down, you can swap out the rub below for your personal favorite blend, use wine or beer in place of broth, or even enhance the sauce with a little mustard or apple cider vinegar. In short, this recipe is infinitely adaptable.
There are a few things youll want to keep in mind when cooking pork tenderloin in the Instant Pot. The first is that you need some kind of cooking liquid in the pot during the pressure-cooking phase. You can use water, but broth, beer, or wine will flavor your pork while it cooks, and make for a delicious sauce. Secondly, keep in mind that while the pork only cooks on high pressure for one minute, the pot will take 8 to 10 minutes to come to pressure and then naturally releases for five minutes.

How To Make Pulled Pork In An Instant Pot
- Pour beef broth into the bottom of your Instant Pot.
- Add the pork tenderloins to the bottom of the Instant Pot over the broth to form a single layer of pork as best you can. Sprinkle desired seasonings on top of pork such as salt, pepper, garlic powder, and onion powder.
- Close Instant Pot. Select manual setting for high pressure for 40 minutes.
- When 40 minutes is done, let the Instant Pot naturally release pressure for about 10 minutes. Then carefully manually release pressure until done.
- Remove lid from Instant Pot. Using tongs or a large slotted spoon, remove pork and place on cutting board. Using two forks, shred pork as desired.

Can You Overcook Pork In The Instant Pot
Although its possible to overcook pork and other meats when pressure cooking, usually if the meat isnt tender enough its because it wasnt cooked long enough. 4-5 pounds of pork shoulder needs about 90 minutes of cooking time at pressure. This might seem like a long time, but if you consider how long it would take cooking it another way, 90 minutes isnt really that long.

After youve deglazed the pot, add the rest of the wet ingredients and place the chunks of pork directly into the liquid. Dont stack it, spread it out as best possible. Secure the lid, close the vent and pressure cook on high for 1 hour. After the hour is up, let the pressure release naturally for 20 minutes. After 20 minutes you can quick release any remaining pressure.

- We like to toast the burger buns before serving with the pulled pork.
- Leftover pulled pork can be stored in the refrigerator for up to 3 days. The cooked pulled pork can also be frozen for up to 2 months, wrapped airtight.

As for how to freeze pulled pork, its super easy. All you have to do is
- transfer the pulled pork to freezer-safe meal prep containers or Ziploc or re-usable freezer-safe bags
- leave a little bit of space at the top of the container or freezer bag because pulled pork extends while frozen
- place the airtight containers or Ziploc bags in the freezer.
Different Variations Of This Recipe
Instant pot shredded pork is very versatile and there are a few variations that will change up the taste a little bit.
- No Sauce Pulled Pork Just seasoned meat without any BBQ sauce.
- Carolina Pulled Pork Made with vinegar sauce and crushed red pepper for an extra kick.
- Pulled Pork Carnitas Made with a sweet or tart citrus fruit juice such as orange or lime, along with garlic and onions.

How To Make This Pork Loin Roast Your Own:

The hot, wet environment of a pressure cooker makes short work of any braise in a third of the time, your pork shoulder will be juicy, falling apart, and fork tender.

How Long To Cook Pork Roast In The Instant Pot
When you roast a pork butt in the oven, it takes about 40 minutes per pound. The Instant Pot is MUCH quicker.
In the Instant Pot, you should cook a pork butt for 15 minutes per pound. What does that mean? That means that you set the Instant Pot to pressure cook for 15 minutes per pound. If the roast is 3 pounds, you set it to pressure cook for 45 minutes.
The roast ends up being in the Instant Pot for longer than just those 45 minutes though. Before the pressure cooking starts, the Instant Pot spends time coming up to temperature. That can take as long as 10-15 minutes.
Then, after the pressure cooking time is up, the pressure needs to be released. I do what is called a natural release for 10 minutes. A natural release happens if, when your pressure cooking time has reached zero, you do nothing. Basically, the heater of your Instant Pot stops heating at that point, and then the pressure inside slowly dissipates.
I do the natural release for 10 minutes whenever cooking meat in the Instant Pot because a quicker release results in a drastic change of temperature that can make meat seize up and get tough.
So do the natural release for 10 minutes and then switch the valve to Venting and let the remaining pressure escape. You then open up the Instant Pot and take out the roast.
