How to Cook a Pork Roast in the Instant Pot

INGREDIENTS

  • 1 teaspoon Liquid Smoke

INSTRUCTIONS

  • Let the pork tenderloin stay inside the package once its out of the fridge for about 15 to 20 minutes.
  • Remove the tenderloin from the package and rinse and pat dry. Trim any visible fat. Cut tenderloin into 2 pieces of equal length.
  • Now coat each piece with about 1 teaspoon each of olive oil. Then using a small dish, mix all the dry ingredients until they are combined. Apply the rub liberally onto the meat.
  • Set your Instant Pot to the Saute mode until is hot, then add the meat and brown each side for a couple of minutes each. Once all the sides are browned, press Cancel and remove meat to a plate. Add the chicken stock to the pot and use a wooden spoon to scrape all the bits from the bottom of the pot. Add the Worcestershire sauce and liquid smoke to the chicken broth.
  • Place meat directly into the liquid, secure lid, set the vent to sealing. Pressure cook on high pressure for 3 minutes. When the cycle is finished, allow pressure to naturally release for 15 minutes. Remove meat to a plate and let sit for 5 minutes before slicing into pieces about 1/4 inch thick.

    How Long To Cook Pulled Pork In The Instant Pot

    The amount of time you need to cook pork in the Instant Pot will vary based on the cut.

    • Pork Loin. For a 4-to-5-pound pork loin, pressure cook for 40 minutes on high, then let the pressure release naturally for 15 minutes.
    • Pork Shoulder/Butt. For a 4-to-5-pound pork shoulder or pork butt, cook the pork for 1 hour on high pressure, then let the pressure release naturally for 15 minutes.
    • Pork Tenderloin. I do not recommend this cut for pulled pork, as it will be too dry. See more in the ingredients section below.

    Yes, of course, you can! Just make sure it fits in your Instant Pot. You need to ensure that you dont pack the pressure cooker full and go past the maximum fill line.

    Use 60 minutes as a starting point and go from there. You can always check how tender your pork roast is after 60 minutes of cooking time. Then put it back in your Instant Pot for longer if its not quite there yet.

    Approximate Instant Pot pulled pork cook time by weight:

  • Season the pork with salt and pepper. Turn the Instant Pot on the Sauté mode, and add butter, and melt. Then put the pork loin and sear the sides of the pork loin until you get a nice golden brown. After that add the garlic and onions and cook it until is soft, is going to take around 2 minutes.
  • Stir in the carrots, celery, broth or apple juice, Worcestershire sauce, brown sugar, mustard, and herbs.
  • Close the lid, set to high pressure, and after the pressure cooker reaches full pressure, cook for 15-30 minutes *depending on size & preferred doneness. you will need to Press Cancel to stop the Sauté mode and then press the Manual button and set the timer for 15 minutes.
  • Once the cooking time is done, press Cancel and carefully release the pressure. If possible, check the internal temperature of the pork loin .
  • Remove the pork loin from the Instant Pot , cover, and allow the pork loin to rest for about 10 minutes, depending on how large your loin roast is and how well done you like it.
  • Blend together the cornstarch and water. Add to the Instant Pot with the juices. Turn Instant Pot on Sauté and simmer until thickened. Taste the seasoning and add additional salt and pepper if desired

    • Pour beef broth into the bottom of your Instant Pot.
    • Add the pork tenderloins to the bottom of the Instant Pot over the broth to form a single layer of pork as best you can. Sprinkle desired seasonings on top of pork such as salt, pepper, garlic powder, and onion powder.
    • Close Instant Pot. Select manual setting for high pressure for 40 minutes.
    • When 40 minutes is done, let the Instant Pot naturally release pressure for about 10 minutes. Then carefully manually release pressure until done.
    • Remove lid from Instant Pot. Using tongs or a large slotted spoon, remove pork and place on cutting board. Using two forks, shred pork as desired.

    Although its possible to overcook pork and other meats when pressure cooking, usually if the meat isnt tender enough its because it wasnt cooked long enough. 4-5 pounds of pork shoulder needs about 90 minutes of cooking time at pressure. This might seem like a long time, but if you consider how long it would take cooking it another way, 90 minutes isnt really that long.

    • leave a little bit of space at the top of the container or freezer bag because pulled pork extends while frozen

    How Long To Cook Pork Roast In The Instant Pot

    When you roast a pork butt in the oven, it takes about 40 minutes per pound. The Instant Pot is MUCH quicker.

    In the Instant Pot, you should cook a pork butt for 15 minutes per pound. What does that mean? That means that you set the Instant Pot to pressure cook for 15 minutes per pound. If the roast is 3 pounds, you set it to pressure cook for 45 minutes.

    The roast ends up being in the Instant Pot for longer than just those 45 minutes though. Before the pressure cooking starts, the Instant Pot spends time coming up to temperature. That can take as long as 10-15 minutes.

    Then, after the pressure cooking time is up, the pressure needs to be released. I do what is called a natural release for 10 minutes. A natural release happens if, when your pressure cooking time has reached zero, you do nothing. Basically, the heater of your Instant Pot stops heating at that point, and then the pressure inside slowly dissipates.

    I do the natural release for 10 minutes whenever cooking meat in the Instant Pot because a quicker release results in a drastic change of temperature that can make meat seize up and get tough.

    So do the natural release for 10 minutes and then switch the valve to Venting and let the remaining pressure escape. You then open up the Instant Pot and take out the roast.
