  • Quick and easy in the Instant Pot! If you’ve ever made corned beef and cabbage, you probably used your slow cooker. I will guarantee that this Instant Pot corned beef and cabbage is a million times better than any crock pot recipe you’ve ever tried. It takes much less time and the Instant Pot infuses the liquid into the meat. This not only enhances the flavor, but makes your corned beef so incredibly tender that it falls apart when you cut it.
  • The complete meal. I love this recipe because it comes complete with your meat , and veggies . Nothing else is needed except for maybe a good wine pairing or dark beer.
  • So much flavor. Marinated corned beef already has a ton of flavor, but when it is pressure cooked with a dark stout beer like Guinness, the flavor will blow your mind.
  • Turn leftovers into another meal. Every time I make this corned beef and cabbage, I use the leftovers to make corned beef hash for breakfast!

How To Serve Instant Pot Corned Beef

Once the corned beef is out of the Instant Pot, I prefer to put it in a plate with a little bit of the saved cooking juices and cover with foil to help keep the meat juicy and hot. After youre ready to serve, slice the brisket against the grain to slices that are 1/4-inch to 1/8.

If you have a substantial fat cap on your corned beef, you should trim it off or eliminate it totally before slicing it. Of course, this is totally according to your personal preference. I prefer to serve the brisket with just a bit of fat on my beef. While serving, spoon a bit of the strained cooked juices on the sliced corned beef on the plate. And serve your visitors with mustard on the side. Also, you can sprinkle the veggies with the fresh parsley for a bit of freshness and color, and occasionally, treat them with a light drizzle of melted butter.

What Is Beef Brisket

Brisket is a large cut of beef from the breast/pectoral area of the cow. A full cut can range from 8-16 pounds on average.

Because of its size, brisket is usually separated into two cuts creating a flat cut and a point cut. The cut used in these pictures is a flat cut.

Both cuts can be used to make brisket in the Instant Pot but youll find more fat and less meat on point cuts versus flat cuts.

Because of the fatty layer to the point cut , its often ground and sold as burger meat or something similar.

Because brisket comes from an area of the cow that gets heavy use, its more muscular in nature and therefore a tougher cut of meat.

Its also, however, a very economical cut of meat for the same reason.

Cuts like brisket lend themselves to long cooking times in order to break down that connective tissue.

Low temperature, slow cooking methods are the most common whether its smoked, braised or like this recipe, cooked in a pressure cooker.

Corned Beef Brisket Ip

Wow.. how easy is this?? Normally I do a beef brisket in brine, but this one was the packaged corned beef already pickled.. or what ever it is they do. It was a little guy, 380 grams and only an inch thick, so I had to alter the cook time. This worked 25 minutes pressure cooking and 7 minutes natural release.

Wash the meat well in cold water. In the bottom of the instant pot.. seems my package of corned beef didnt have seasonings, I made my own:

4 cups liquid. I had chicken and beef broth in the fridge, so used that, and the last cup was water mixed with one tsp Better than Beef Bullion. Add one chopped onion, 3 cloves smashed garlic, some pepper corns, coriander seeds, 3 small bay leaves, a pinch of ginger and nutmeg, 3 whole cloves. Put the meat on the trivet, put lid on, open the vent and pressure cook 25 minutes. Let it naturally vent 7 minutes. Remove from IP and add potatoes and carrots, chopped to be about the same size as the potatoes. Pressure cook right in the juice for 3 minutes.

Serve! It was very good with sour cream. Im sure cabbage would have been great, but I just cant convince Greg of that!

Adapting Corned Beef And Cabbage For The Instant Pot

Instant Pot Corned Beef

As with most classic recipes Ive adapted for the Instant Pot, I found that I needed more spices and less liquid than when I cook a corned beef on the stove or in the oven. I doubled my usual pickling spices from 1 tablespoon to 2 to infuse into the brisket, and only needed 4 cups of liquid total, as compared to 5-6.

Unlike other meats, I dont recommend making Instant Pot Corned Beef with the minimum amount of liquid required for pressure cooking. Corned beef is salt-cured brisket, and when you cook it with traditional boiling or braising methods, the substantial amount of liquid draws salt out of the meat. So, while the Instant Pot might only need 1 to 1-1/2 cups of liquid to pressurize,

the cooking liquid draws a good amount of the salt out of the meat. Corned beef can be very salty, and without adding enough liquid to reach to the sides of the brisket, you wont draw enough of that salt out of the meat during the cooking process.
