Since it can be hard to get fresh, gorgeous lobster tails if you dont live in a coastal area known for lobster, I will often opt for frozen lobster tails when I am making a lobster tail dinner for two.

While fresh is always best, fresh-frozen lobster tails taste just as delicious as fresh lobster tails that were trucked across the country to get to you and sit on a store counter for a few days so being in a landlocked state like Colorado, I dont feel bad at all about grabbing frozen lobster tails.At the very least, thaw lobster under cold water in the sink to speed up thawing, but thawing overnight in the fridge will give the absolute best results.

    Allow the lobster tails to fully thaw.

    TESTING RESULTS & OBSERVATIONS

    I was really happy with how these lobster tails turned out. They were fully cooked. Maybe even slightly overcooked, making them just a smidge tough but barely noticeable. Im interested in trying to cook them for less time to see how they come out.

    • Avoid buying tails that have any discoloration in the meat: black spots or yellowing.
    • Avoid tails that have been soaked in sodium tripoyphosphate prior to freezing.
    • Tails should not have any grayish coloring.
    • Buy frozen, avoid already thawed lobster tails, as they should be cooked immediately once thawed.
    • Choose tails ranging from 5-12 ounces in size.
    • Buy from a reputable store or fish counter.

    Are Big Lobsters Tough When Cooked

    Lets dispel the longstanding belief that bigger lobsters, over 2 lbs., are tough when cooked. This simply is not true. Weve cooked plenty of 5-6 pound lobsters and they can be every bit as tender and sweet as the small size lobsters. Thats if the lobster is not overcooked.

    It is very easy to overcook seafood, especially big lobsters. The issue we see again and again is the recommended cooking times are often too long. Overcooked lobster will be tough and chewy no matter if you steam or boil them. When in doubt, use a meat thermometer to help you ensure youre not overcooking those large lobsters.

    Whats The Stuff Inside The Lobster Tail

    It is always important to make sure that the lobster tail has been properly cleaned, regardless of the method of cooking. Remove the long, thin vein that runs down the center of the tail . This is the lobsters digestive tract. Although it wont hurt if eaten, it does not taste good.

    Another common finding within your lobster tail can be roe near the top of the tail. Make sure to clean thoroughly. Get to know more about the parts of a lobster.

    Pro Tip: Is your tail red or pinkish in color? There is no difference in the taste or quality of the meat. It is simply a tail from a female lobster.

    Pressure Cooker Lobster Tails With Butter Sauce Instructions

  • Start by prepping the lobster tails for steaming. Use kitchen shears and cut a line down the inside of each shell.
  • Add one cup of water in the Instant Pot Pressure Cooker.
  • Add 1 tablespoon of Old Bay seasoning to the water in the Instant Pot Pressure Cooker.
  • Place the trivet in the bottom of the Instant Pot Pressure Cooker on top of the water mixture.
  • Place 4 lobster tails shell side down.
  • Next, place the steamer basket on top of the first 4 lobster tails and add the remaining tails on the top of that steamer basket.
  • Lock the cover and make sure the vent is set to seal.
  • Now press the manual button and use the plus or minus buttons to adjust the minutes to 4 minutes.
  • Its important to know that your pressure cooker will take a while to heat up with frozen ingredients in it. I wanna say mine took about 10 to 15 minutes to heat up and get going.
  • The timer will switch to say on when it is heating up. Once its heated, it will start to count down the minutes from 4 when it is steaming.
  • When the lobster tails are steaming in the Instant Pot Pressure Cooker, this is when I make the butter sauce.
  • To make the butter sauce, simply place a tablespoon of butter in a frying pan and cooking it for about 3 minutes until it turns brown. Add the remaining butter and a teaspoon of fresh minced garlic. Once it has completely melted add the remaining ingredients to the butter mixture. Mix all the ingredients together and set aside.
  • Serve the lobster tails immediately with the butter sauce.

    How To Cook Instant Pot Lobster Tail

    This recipe teaches you how to cook Frozen Lobster tails in the Instant Pot.

    Place 1 cup of water into the instant pot. Sprinkle in your old Bay seasoning with the water.

    Cut a slice down the back with kitchen shears of the lobster tails. This will make opening the tail easier, especially as it will be hot from being in the pot. place the trivet inside the instant pot, and then add your lobster tails Upside down on the trivet.

    Close the instant pot lid by twisting the lid on and close the valve by pushing it away from you. Set your instant pot to high pressure for four minutes.

    While your lobster tails are cooking, mix all of the rest of the ingredients together .

    Once your Insta pot is done, manually release by pulling the valve toward you to release the steam. Do this with a towel or hot pad to protect from burns.

    Remove your lobster tails from the instant pot with tongs and transfer to a cutting board. Cut open the shells from the tails and remove the meat.

    If using for lobster tails cut those into pieces and add to your mayonnaise mixture. If using other seafood to complete your rolls, cut up your lobster as well as the other seafood meat , and add to your mayonnaise mixture. Mix well.

    Add your seafood mixture to your hotdog roll. Top with parsley, or lemon juice, and enjoy!
