  • If you dont want to cook a whole turkey this year for Thanksgiving , try cooking a whole chicken instead. This chicken recipe serves 2-4 people, and youll still probably have leftovers.
  • Make this Instant Pot Whole Chicken with Potatoes and leave your oven open for your side dishes or pie.
  • Feel free to use whatever root vegetables you like. I recommend carrots and potatoes, but you could also use sweet potatoes, parsnips, or turnips.

How To Make Instant Pot Chicken Thighs And Potatoes

Start by combining the dried chives, dried parsley, dried dill, dried sage and 1 teaspoon of salt in a small bowl.

Add the chicken thighs to the bottom of the instant pot. Sprinkle half of the spice blend over the chicken, as well as the smoked paprika. Add 1 cup of water to the chicken in the instant pot insert.

Place the metal trivet that came with your instant pot over the chicken thighs.

Add the potatoes directly over the chicken on the trivet.

Put the lid on the instant pot and set the valve to seal. Cook on high pressure for 12 minutes. Allow to natural release at least 10 minutes. After 10 minutes, you can manually release the pressure or allow the instant pot to continue to naturally release the pressure.

Carefully remove the lid once all pressure has been released. Check the thickest potato with a knife, it should easily go through the potatoes. Transfer the potatoes to a large bowl.

Cut the potatoes in half or in quarters with a knife in the bowl. Drizzle the potatoes with olive oil, ½ teaspoon of salt and the rest of the spice blend you made in the beginning. Stir well, and slightly smash the potatoes as you stir.

Take the chicken out of the instant pot. You can leave it whole or you can shred the chicken depending on your preference.

Serve the chicken thighs and potatoes hot with your favorite side dish.

How To Cook Chicken And Potatoes In The Instant Pot

  • Add water and trivet to the Instant Pot.
  • Add chicken to Instant Pot and season with salt and pepper.
  • Then add the potatoes on top of the chicken seasoning with salt and pepper. Place lid on Instant Pot and pressure cook for five minutes
  • While the chicken and potatoes are cooking, mix honey and mustard together in a small bowl and chop parsley.
  • Drain water from Instant Pot, then gently toss chicken and potatoes in honey mustard sauce.
  • Serve garnished with parsley, then enjoy!

    Sauteing With An Instant Pot

    Now we’re ready to start cooking.Turn your pressure cooker to saute and add a tablespoon of cooking oil. I use olive oil because I like the flavor. Use your regular cooking oil. The Instant Pot heats up quickly.

    Add the chicken and sear it on the first side for about 5-6 minutes or until it lets go easily. Season with salt and pepper then flip. Sear the next side for about 5 minutes. Season with salt and pepper.

    This is where you can customize the recipe by adding in different spices. You could try onion powder, garlic powder, paprika, smoked paprika, dried oregano, dried basil, etc.

    Remove the chicken breasts to a bowl.

    Add the onions and saute for 3-4 minutes just until they start to soften a bit. They will soften a lot during the pressure cooking. Remove the onions and add the broth. Use your cooking utensil to scrape up the brown bits. Make sure to scrape them all up so you don’t get a burn warning!

    Turn off the saute function. Squeeze the lemon juice in and add the trivet to the bottom of the Instant Pot.

    Add the chicken and then the onions and garlic.

    Next, add the potatoes on top of the chicken and onions. I face the open-end of the potatoes down. Season the potatoes with salt and pepper.

    How To Store Leftover Potatoes

    These potatoes are best served fresh, as they have a fantastic crisp texture to them. But you can toss in the fridge in an airtight container for 3-5 days. Then you can reheat in a skillet or microwave. I have then used leftover potatoes as a hash base with leftover roast and it turned out fantastic.

    Not only is this recipe super easy and delicious, its great for customizing with what ingredients you have available. Use your choice of chicken thighs or chicken breasts, without modifications, for making this Instant Pot ranch chicken and potatoes.

    Along with the chicken you will need:

    • Baby potatoes scrubbed and left whole
    • Olive oil or preferred oil for cooking
    • Dry ranch dressing mix for a zesty, tangy taste
    • Italian seasoning adds the perfect herbs and spices for a really flavorful dish
    • Chicken broth I recommend low sodium
    • Cream cheese to make the creamiest, richest sauce for the chicken and potatoes

    For a dish with even more big Italian flavor feel free to substitute the ranch dressing mix with an Italian dressing mix.

    • Cut back on saturated fat: If you buy thighs with skin on, I like to trim the fat and remove the skin from all or at least half of them. North American chicken thighs are pretty fatty.
    • Save the bones: Discard bones after or save for Instant Pot chicken stock to make Instant Pot chicken wild rice soup. The gift that keeps on giving.

    Which Potatoes Are Best To Use For This Recipe

    I love using baby red or gold potatoes because they remain intact even when cooked under pressure. In addition, they absorb the flavors well.

    Alternatively, you could use other varieties as well. Vitelotte, Dore, petite, and white will work just as great. The most important thing to remember here would be to use whole, and small to mid-size potatoes. You do not want to cut them in half.

    About Air Fryer Baked Potatoes

    Can you make a baked potato in an air fryer? You sure can! The method is similar to oven baking, but an air fryer baked potato comes out with an even crispier skin in my opinion. You can also eat the super crisp skin! Mostly I like that I do not have to heat up the entire oven to make these. The Vortex Plus 7 in 1 air fryer works perfectly for them.

    You can also make baked potatoes in any other brand of air fryer. Simply follow the directions, put them in the basket, and dont crowd them.

    We like to serve these potatoes with Easy Grilled Chicken or Parmesan Tilapia.

    Before I got the Instant Pot digital pressure cooker, I used my slow cooker to make baked potatoes. Its a great way to cook them if you dont have a pressure cooker. However, this method is much faster and I can have baked potatoes ready in 20 minutes, perfectly fluffy and ready for our favorite toppings.

    Recipe Variations And Adaptation:

    • Oven-Baked Chicken and Potatoes: If you are not in the mood for cooking this recipe in the pressure cooker, then try my Oven Baked version.
    • Slow Cooker version: Similarly, you can easily make this in the slow cooker. Follow the same steps as above. Then, just dump the ingredients into the slow cooker. Cook for 3-4 hours on HIGH, or 4-6 hours on LOW.
    • Mix in other veggies: Feel free to add other veggies as well. Some great alternatives would be cellary, bell peppers, peas, mushroom, spinach, etc.
    • Use other meats: Swap chicken with beef, pork, or turkey. The cooking time will remain the same.

    Instant Pot Rawvs Frozen Chicken

    The most important thing to understand about Instant Pot Raw vs Frozen Chicken is the 20% rule.

    Whatever you would cook raw chicken for in the Instant Pot + 20% to your cooking time and it will be spot on.

    I have come across many Instant Pot frozen chicken recipes that argue with this and say the same cooking time and that it will defrost in the time that it takes to come to pressure.

    I have tried this when I was an Instant Pot newbie and always ended up with undercooked chicken.

    Plus, my chef husband will be in my kitchen space pointing out that frozen chicken is more dangerous and that it needs that extra couple of minutes to be safe.

    The second rule is that chicken cooked from frozen has a habit of being dry and you need to factor in adding extra liquid to reduce the chances of a dry chicken dinner.

    I also recommend when cooking with frozen chicken that you add in a sauce or turn it into a casserole or stew, that way you have more sauce to help the chicken breathe.

    Master those 2 things and you will be able to cook frozenchicken in the Instant Pot effortlessly.

    How To Make Instant Pot Parmesan Ranch Chicken:

    Start by adding the chicken and baby red potatoes into the Instant Pot and drizzle them with the olive oil and toss the chicken and potatoes until they are completely covered with the olive oil.

    Then, in a small bowl, mix together the salt, ground black pepper, garlic powder, thyme, basil, oregano, and two tablespoons of the ranch dressing mix.

    How To Make Them

    First, youll want to make sure your potatoes are scrubbed and cleaned well. Russet potato skin can hold a lot of dirt, and if you dont scrub them well, you will be able to taste it. A 6-quart Instant Pot will hold about 4 medium russet potatoes. Be sure that the potatoes are all roughly the same size so they cook evenly.

    Prick the potatoes all over with a fork about 10-15 times. Place the metal steamer rack in your Instant Pot and fill with water until just below the bottom of the rack. Layer your potatoes in , close the lid, and set the pressure release valve to sealing. No foil needed!

    How long to cook them will depend on the size.Cook on high pressure for:

    • 12 minutes for smaller potatoes. Less than 2 in diameter.
    • 15 minutes for medium potatoes. About 2 to 3 in diameter.
    • 18 minutes for large potatoes. Above 3 in diameter.

    We use a 6-quart Instant Pot and it takes 12 minutes to come up to pressure. After cooking for 15 minutes, let the pressure naturally release for 10 minutes, then manually release the rest of the pressure. Open the lid and your potatoes will be baked to perfection!

    Can I Use Frozen Chicken

    No time to thaw your chicken or you just forgot ? The Instant Pot can take care of that for you, too. However, I would recommend you thaw the breasts a little in the microwave first. Otherwise, the spices and parm will not stick to your breasts the way they should in this recipe if they are frozen solid. From there, you can follow the rest of the instructions, but increase cooking time about 20 minutes.
