Why We Should Love Spaghetti Squash

  • It is sooooo versatile! Make it sweet, savory, spicy, whatever! It will work. It’s a blank, mildly flavored canvas just waiting for you to create your masterpiece
  • It’s full of fiber, low in carbs, high in nutrients and protein, and if we’re gonna compare it to pasta, it contains about 30 calories for one cup compared to most pasta that is easily over 100 calories
  • It stores for a long time. If it’s fresh, you’ll be able to store it in a cool, dry place for up to 3 months. However, when I talked to a guy at the Farmers Market, he says they last him until spring. I’m not gonna say this is right, just passin’ along his recommendations and I will test his theory this winter

The Best Way to Cook Spaghetti Squash (Instant Pot)

I do not love eating spaghetti squash plain, and prefer it with a flavorful sauce. I eat spaghetti squash as a substitute for spaghetti noodles. That said, pressure cooked spaghetti squash can simply be served with browned butter, salt, pepper, and cheese!

Ive also mixed it into vegetable stir fry, macaroni and cheese, or pretty much anything else that has a yummy sauce.

Substitute cooked spaghetti squash in my Olive Garden Chicken con Broccoli recipe! All you do is cook the chicken without the noodles, then add the cooked spaghetti squash and broccoli before the sauce.

Where To Buy An Instant Pot

This is the 6-quart Instant Pot I started out with. After a few years, we added an 8-quart partly because I knew I would use two at the same time often enough, partly because it was the Prime Day sale, and also because I wanted more space for certain recipes. Both are a pretty basic model and you dont need more bells and whistles than that!

If youre deciding on size, most people say its better to get a deal on the 6-quart and just have 2 rather than go big, BUT if your family has 5 or more people or you really like to batch cook or do more than a pound of beans, the 8-quart may be the best choice. • Wait about 5 minutes for the steam and pressure to dissipate.

    • Steamer Insert

    Method:

With a paring knife, cut the spaghetti squash in half, crosswise.

Youll get longer strands of spaghetti squash if you cut it in half crosswise instead of lengthwise. See how the strands run in concentric circles around the core?

With a large spoon, scoop out the seeds in the center of the squash and discard the gunk.

Place the steamer insert/trivet into your pressure cooker.

Add 1 cup of water to the pot.

Place the squash halves on the steamer insert. I put them cut-side up, but it doesnt really matter which way is up.

Place the lid on the pressure cooker

and cook under high pressure for 7 minutes. On an Instant Pot, press the Manual button or Pressure Cook and hold the + or – button until the display changes to 7.

When the squash is finished cooking, release the valve at the top of the pressure cooker to rapidly lower the pressure.

Remove the lid from the pot and tip the squash halves to pour out the collected liquid. Check on the doneness by poking the squash with a fork. I like my spaghetti squash to be tender, but still toothsomenever squeaky.

Take the squash out of the pot and shred with a fork.

How To Cook An Acorn Squash In The Instant Pot

Easiest Way to cook Spaghetti Squash~Instant Pot Ultra 60 Pressure Cooker
    • Add water. Add about a cup of water to the Instant Pot.
    • Place. Place a silicone trivet into the pot. This helps create a barrier between the acorn squash and the bottom of the pot so the squash doesn’t end up getting a burnt spot on it while it cooks.
    • Poke holes. Using a small, sharp knife, poke holes in the acorn squash. This allows the steam to escape from the inside of the squash. Don’t skip this step! If left unpierced, the squash can explode inside your Instant Pot.
    • Cook. Okay, so there are two different functions you can use to steam acorn squash in the Instant Pot. There is the Pressure Cook function and the Steam function. In this case, you’ll be using the Pressure Cook function. Cook the acorn squash at high pressure for 6 minutes.
    • Release pressure. Allow the pot to rest and release pressure naturally for 5 minutes, then manually release all of the remaining pressure.
    • Check. Open the pot and use a knife to check if it is done cooking. If you can easily pierce the outside of the acorn squash with a knife, it’s done.
    • Remove. Using two ladles or large spoons, carefully remove the hot squash from the Instant Pot. I wouldn’t suggest using the handles of the trivet as I attempted to do so and ended up dropping the squash into the pot, causing hot water to splash all over the place. And believe me, you don’t want hot water splashed on your face.
    • Cut and remove seeds. Cut the acorn squash in half and, using a fork and a grapefruit spoon, remove the seeds from the squash.

    Perfect Instant Pot Butternut Squash

  • Place the trivet inside the bowl of your Instant Pot. Add 1 cup of water. Please dont forget to add the water!
  • Wash the outside of your squash and dry thoroughly. Wash the squash because its probably dirtier than you think and dry because youre about to cut it in half.
  • Use a large, sturdy knife, to cut your butternut squash in half lengthwise. If the base of your squash is especially wobbly, you may want to cut the ends, creating a flat surface. Nest, scoop out the seeds using a metal spoon.
  • Arrange the cut butternut squash halves inside the trivet . If youre wondering do I need to add more time if I add extra butternut squash? The answer is, no.
  • Place the cover on your Instant Pot and switch the pressure valve to the sealing position.
  • Set your Instant Pot to manual HIGH pressure and cook for 8-10 minutes. I usually cook mine for 8 minutes if I want it to remain a little firmer, or if I plan to dice it into cubes. If, however, I plan to mash, puree, etc, I may cook an additional 1-2 minutes longer.
  • After the cooking time is finished, switch the pressure valve to the venting position and quick release the pressure. Carefully remove the lid. Transfer to a bowl and season as desired.

How To Make Pressure Cooker Spaghetti Squash

    Instant Pot Butternut Squash
    • Rinse Spaghetti Squash under cold, running water to remove any dirt and dust. Remove any stickers.
    • Take the sharpest knife you own, and firmly cut the spaghetti squash in half.
    • Vertically, through the stem: This is my preferred cut and is pictured above. Youll have shorter strands, but I think theyre still plenty long. Its also easier to get the pulp and seeds out from the center this way.
    • Horizontally through the center: the stem is completely untouched on its own half.
  • Using a spoon, scoop out all the seeds and strands. Sometimes Ill use a pair of kitchen shears and snip out any stubborn strands.
  • Place the trivet in the Instant Pot liner with one cup of water. I prefer to use my pressure cooking sling, because its much easier to remove the HOT spaghetti squash after it is done.
  • Place both pieces of the spaghetti squash onto the trivet/rack/sling, cut side up. If you place them cut side down, you risk all the spaghetti squash falling out into the pot after cooking.
  • Lock the lid, turn the sealing knob to SEALING, and cook on manual high pressure for 9-12 minutes, depending on the size. 10 minutes is what works for me almost all the time for a 3lb squash.
  • Perform a quick release after the 9 minutes is up.
  • Carefully remove the squash from the Instant Pot and remove any additional seeds or strands from the center that look stringy and not like the noodles.
  • You can dump the noodles into a bowl or plate. Do not squish, mash, or stir the noodles too much.
