Every few weeks, we make posole in our house, and its a much loved favorite by everyone here kids included.

One thing that I have been wanting to do for some time now is to prepare my own corn for posole to try to get away from the canned hominy thats pretty popular in store. Posole is probably one of my favorite soups to make and eat it tastes even more amazing the next day as the flavors blend for additional time.

Traditional posole is made on the stove top, over a period of a few hours with pork or chicken .. unless you dont consume much pork in which case chicken is your go-to.

Prepared corn is used for much more than posole though you can actually use it for other soups, grind it to make corn tortillas, masa and more. Today its quite difficult to find anyone that takes the time to prepare their own corn, since its time consuming most people opt for the canned hominy in store.

Meatless Potato & Hominy Soup

The canned hominy is definitely an easier route to making posole or anything with hominy for that matter including this hominy soup we previously made here. Especially if you havent given much thought to dinner and you dont have time to soak and prepare corn.

An Instant Pot is one of the most popular brands of electric pressure cookers. They are easy to use and your Instant Pot can help you create this delicious New Mexico Red Chile Posole!

I have made this dish on my gas stove, in a slow cooker, and in a pressure cooker. I prefer the results obtained using the pressure cooker. The cubed pork gets tender in a fraction of the time, and its easy to control the texture of the hominy.

I do this in 2 steps: First, I pressurize the frozen posole in a generous amount water for about 15 minutes. After a quick pressure release, drain the posole, and set it aside. Note: Posole is both an ingredient and a dish. The photo at the left is an example of a widely available brand.

Rinse and dry the inside of the pressure cooker. Add a bit of oil to the pot. Cook the cubed pork, garlic, and onion on medium-high heat if using a stove top model, and on the sauté setting if using an Instant Pot or similar. Cook until the pork is browned, and onions are soft. Add the cumin, Mexican oregano, bay leaves, broth and red chile, and beer . Lock the lid, and cook on high on the stew setting .
