How to Cook a Pork Roast in the Instant Pot

It’s something you can throw into the slow cooker and cook while you’re working all day, or it’s something you can serve up for a special Sunday dinner. Brown Meat In The Instant Pot

I’m in the club of, I know browning adds flavor, but I’m willing to sacrifice some flavor so I don’t smell like meat. In this recipe however, I finally gave in to the fact that the flavor was 100% better when I sealed in those spices and achieved a deep brown crust. However, I’ll admit, sometimes I sear 2-3 sides and then call it a day.

To brown your roast in the Instant Pot, set saute to high and wait until the pot says hot. Then add your oil and meat and DO NOT MOVE THE MEAT for at least 4 minutes. When the meat will release easily from the pot, you know you’ve formed a good crust. Flip it and repeat on another side. Depending on how many pounds of meat you are cooking, you may need to do this in batches.

If there is leftover browning at the bottom of the pot, add a splash of water or broth and use a spoon to scrape it up. This will prevent a BURN error from occurring as the pot is building pressure.

How To Fix A Tough Pot Roast

To avoid a tough pot roast from the get-go:

  • Make sure you are using good quality meat
  • Look for a roast with even marbling of fat throughout
  • Cook for an appropriate amount of time

If you end up with a tough roast, there are a few things you can do to help it

  • Cut it against the grain and put it back into the pot juices to soak up some moisture
  • Pressure cook it for another 10 15 minutes
  • Put chunks into a food processor and pulse to shred it. This works good if you’re using it for quesadillas, enchiladas, etc

Let The Pork Roast Rest

7) When the roast gets to 180°F, take the roast out of the oven and let it rest for 30-40 minutes. It will be fine for up to an hour. There is no need to cover it during resting time. This is important because this is the only time the roast will rest. Don’t skip this step.

You’re probably wondering if the roast is going to get cold during this long rest. It actually stays warm inside for a long time though. Also, you’re going to be putting the roast back into the oven for a bit and that will reheat it. Finally, it’s my general opinion that once you carve a roast, those slices tend to cool down pretty quickly no matter what you’ve done. The key is to have a lot of really hot gravy to pour over it all. That makes it all warm and delicious!

How To Make Instant Pot Eye Of Round Roast Beef

Heres how to make this incredible roast!

The most time-consuming part is allowing the steam to release naturally for two hours. The rest is super-easy.

I used a roast that was a little over 3 pounds. This recipe works with any size of steak that you buy.

First, season the roast. To do this, rub the beef with salt and pepper all over. You can add more spices here if you want more flavor.

Next, sear the roast on the stove. Heat a large non-stick frying pan over medium-high heat. Add the beef and sear for 2 minutes on each side. Make sure all of the sides are browned!

Insert the trivet in the Instant Pot and add 1 cup of water. Put the seared eye of round roast on a trivet.

Close the lid of the Instant Pot and turn the valve to a sealing position. Press the Pressure Cook button and set the time to 5 minutes on High Pressure.

Carefully remove the eye of round roast from the Instant Pot. It is going to still have lots of steam and heat, so do this slowly and carefully.

Oh, look at this baby! So excited when we brought home this 5 pounds chuck roast!!

First, we cut it into 3 nearly identical pieces of chuck steaks and made sure each piece was roughly 2 inches thick.

Pressure cooking time is mostly dependent on the meats thickness, so regardless how much they weigh, as long as theyre 2 inches thick, results will be very similar.

We also made sure each piece was similar in weight. They weigh from 598 grams to 608 grams . Close enough Again, weight is not the most important factor for determining the best cooking time, the thickness matters the most.

To ensure the experiment is as accurate as possible, we repeated the exact same steps for each piece of chuck steak in the pressure cooker.

How Long Does It Take To Cook Pot Roast In A Pressure Cooker

The time it takes to cook pot roast in an Instant Pot will vary depending on how large your piece of meat is. For a 3-pound piece of beef, the total time required will be about 2 hours and 30 minutes. This includes the time to bring the beef to room temperature , searing time, and the cook time required inside the pressure cooker.

I know 2 hours and 30 minutes might seem like a long time, but for ultra-tender and juicy beef, we need all of it. The great news is that a pressure cooker makes much quicker work of pot roast compared to a slow cooker, oven, or when it is cooked on the stove-top.

Now, I mentioned there was extra time for bringing the beef to room temperature. After testing this pot roast recipe in our own kitchen, we found that if you start with beef straight out of the refrigerator, the roast doesnt become as tender as when you give the beef some time out of the fridge so that it comes up to room temperature before cooking it.

For a three pound roast, we found that leaving it on the counter for 1 hour was perfect. This extra time has another benefit, it gives us a chance to season the meat. Right after taking the beef out of the fridge, we season it liberally with salt, which means that as the beef sits, the salt has a chance to seep into the meat, making it extra tasty when cooked.

As a general rule, when cooking roasts in a pressure cooker, assume 20 minutes of cook time for every pound of meat.

Spoon some of the delicious leftover cooking juices on the cooked beef after you place it in a serving dish. This keeps the beef moist and also adds flavor. Can I Use Frozen Beef

You might be wondering if you can use frozen beef for pot roast. Technically, the answer is yes, the cook time will just be longer .

That said, for the best results, we highly recommend following our method which calls for thawed beef thats seasoned with salt and been left on the counter long enough to take the chill off. This extra time creates the most flavorful, melt-in-your-mouth pot roast. Using thawed beef also allows us to brown the outside of the meat before braising it, which adds a lot of extra flavor to dish.

Instant Pot Pot Roast Experiment

In our Instant Pot Pot Roast experiment, we pressure cooked 3 nearly identical chuck roast steak at High Pressure for 20 mins, 45 mins, and 75 mins with an Instant Pot Electric Pressure Cooker.

Out of the 3 results, we enjoyed the 45-Minutes Instant Pot Pot Roast the most.

It was overall the most well-balanced in terms of Meat Texture, Meat Juice, Meat Flavors, and Sauce. It was definitely the most delicious one!

Saute Onion And Garlic

*Note: Your Instant Pots inner pot should look quite brown. Dont worry! Your pot didnt burn, those caramelized brown bits add yummy flavors to your roast beef.

Add in one more tbsp olive oil. Add in sliced onions, then saute for 3 minutes.

Add in 2 bay leaves, ¼ tsp dried rosemary, and minced garlic in Instant Pot. Saute for another 30 seconds until fragrant.

How To Prepare A Roast For The Pressure Cooker

Cooking a roast in an Instant Pot is quite easy and should take you little more than 10 minutes of prep time.

  • First off, we advise defrosting the meat.
  • Youll need to season your roast generously on all sides with your chosen seasoning. Simple salt and pepper are good on any meat but you can be more adventurous if you like. There are many recipes for different rubs and seasonings so we encourage you to explore those.
  • Add a couple of tablespoons of oil to the Instant Pot and set it to Sauté. Sear the meat quickly on all sides to get it nicely caramelized. This will help to seal the juices in and will also give it a lovely umami flavor.
  • Set the pot to high heat.
  • Pour in some broth, stock, wine, or the liquid suggested by your recipe. Some people use cola while others swear by ginger ale. The choice is yours. Meat done in the pressure cooker can be a little bland so be sure to use a well-flavored liquid. About a cupful is usually enough.
  • Add a sliced onion and a carrot for flavor too.
