How Long To Cook Collard Greens In The Pressure Cooker
I prepared this recipe in my 6qt Instant Pot electric pressure cooker. The pressure cook time for this recipe as written is 35 minutes. That is the perfect amount of time to allow the turkey leg meat to fall off the bone and to have the collards soften without turning to mush. If preparing this recipe without the turkey leg, adjust the pressure cook time to 25 minutes.

How To Make Pressure Cooker Collard Greens
First you want to clean the collard greens really well in the sink. I was really lucky this time and my greens were VERY clean, but this isn’t always the case. Often times there will be dirt in the leaves and on the stems. To clean them, fill your sink with cold water and submerge the collard greens in the water and swish them around to remove the loose dirt. Drain and refill the sink, then I go leaf-by-leaf and make sure they are all clean. Trust me, you don’t want to skip this because gritty collard greens are the worst.
Once they are cleaned, you let the dry if you aren’t using them right away, but I usually bring them over to my cutting board in batches and cut them up. I remove about 1-2″ of the hard stems, but I leave most of the stem intact because I like the texture difference with the softer leaves and the stems. That is completely up to you, though you can remove the entire stem, if you want. Then I cut them into about 4″ pieces. They shrink a lot during the pressure cooking so this works perfect for me. You can certainly cut them into smaller pieces, if you prefer.
Dice the onion into about ½” dice. I used 1 ½ cups of diced onion, which is about 1 large sweet onion. You can use a sweet onion, yellow onion, or a red onion. Mince about 3 large cloves of garlic so you have 1 Tablespoon of minced garlic. Add the broth, vinegar, diced onions, minced garlic, seasonings and the ham hock to the bottom of the pot.

Does Vinegar Tenderize Collard Greens
the vinegar will help it tenderize. Add about 1/8 cup of vinegar per pot of greens. I use about 1/4 cup of the broth and lay the hamhock and whole hot pepper laid on top. turn fire down to Med low and let them cook for 45 Minutes.

How To Make Instant Pot Collard Greens
Start by adding the olive oil into the Instant Pot, and then press the saute button. Give it 30 seconds to let the olive oil heat up, add the onions and garlic, and continue to saute until the onions are softened, about 3-4 minutes.
Then add the collard greens and the water, and add the lid, set the manual high pressure for 20 minutes, letting it naturally release.
Then strain the collard greens, and mix in the spices if you want to add some crumbled bacon.

I take you step-by-step on how to cook collard greens just like your grandma would have made them.
They turn out soft, tender, and flavorful.
Collard Greens can be a little tricky. If you don’t wash them correctly, they can have sand hidden in them.
There is nothing more awful than taking a bite of collards and chewing grits of sand.
If you don’t cook them long enough, they are crunchy and tough.
If you don’t season them properly, they are bitter and earthy.

What Meat Is Used To Season Collard Greens
My family switched from using salt pork and ham hocks to season our greens years ago. We now use either a smoked turkey leg or turkey wing. I love to use turkey wings, too, but sometimes they are harder to find.
You can of course still use ham hocks, salt pork, country ham, or even bacon to season the greens. If you are planning to use bacon I recommend that you cook the bacon in the Instant Pot on the Saute function, and omit the olive oil used in this recipe. Cook the onions in the bacon fat.
Remove the bacon and crumble. Set aside until after the collards have cooked. Sprinkle the bacon throughout once cooked.

How Do You Get The Bitter Taste Out Of Turnip Greens Or Collard Greens
A little acid will help to cut the slightly bitter flavor of the greens . In this recipe I used white vinegar but you can also use apple cider or red wine vinegar. Some people add lemon juice instead of vinegar with the same results.
A little heat never hurts to help with the flavor either. As I mentioned before some people cook them with red pepper flakes to give it a little bit of a kick, other people put hot pepper sauce on their greens once they are cooked. My grandma used to make her own hot pepper sauce which was just hot pepper-infused vinegar. That remains my favorite way to eat greens to this day!
Do You Need To Soak Collard Greens
It is recommended for you to rinse your collard greens really well. The first soak I recommend soaking in vinegar for 5 minutes, then rinse well with cold water. Then do 2 more soaks for 5-minutes each in cold water.
You will find this helps remove any debris or grit on your leaves. Then prep the leaves as you would.

How To Cook Greens In The Instant Pot
- First, use the sauté function to sauté the diced onion and bacon pieces in EVOO for about 5 minutes or until bacon is cooked and onion is tender.
- Second, add the greens and broth cook on high pressure for 3o minutes. To get to high pressure, turn the IP off . Press manual to get to pressure. Press pressure to choose low or high setting. Press + or to move the time to minutes desired.
- Third, when greens are cooked, the IP will switch to a warm countdown. The lid can be opened at any time or greens can stay in the IP until you are ready to serve them.

Which Meat Do You Use For Southern Style Collard Greens In The Instant Pot
My preference is always bacon~diced and sauteed in oil until crisp. The tiny, salty bits of smoky bacon are what make these greens Southern style. I also like to throw in a smoked turkey neck if I have one. The turkey neck adds another layer of flavor but is optional, as is country ham. I like ham but my fam doesnt like as much meat in the greens. It is purely preference.

Ill admit, it wasnt a dish I loved at firstbut then we had them at his parents house a few years ago, and I realized that when they are cooked well..they are delicious.
Since collard greens are a popular dish for New Years, I thought I would make an Instant Pot version.
I have no idea how authentic these are to the South, so dont come after me with a pitchfork is they arent what you grew up having your Grandma cookedbut I can tell you that they are DELICIOUS.
I kept going back for more after my first bite, and it was great.
I would recommend going easy on the red pepper flakes or omitting them entirely if you cant handle spice. But I do love the kick it gives.
Vinegar is also an interesting addition after they are cooked, but its up to you whether or not you use it!

First you place the silver pot with food in it inside the chamber. Next set the round top in the grooves with the close / open words slightly to the bottom right as you are looking at the top.
There are markings on the rim of the chamber that show a lock and unlock symbol. You can line the triangle on the top up with the unlock symbol.
