Instant Pot Pork Loin with Maple Glaze

Pork tenderloin and pork loin are not the same things. Pork tenderloin is a very lean piece of meat that is long and thin, its about 2 in diameter and each tenderloin will weigh about 1lb. This is not to be mistaken for a pork loin which is about 4 across and a much larger piece of meat. They cannot be used interchangeably in this recipe.

I usually roast pork tenderloin in the oven at a high temperature just until it reaches 140°F . In this recipe it cooks quickly in the pressure cooker for a great weeknight meal.

Start With A Simple Rub

We start by cutting our pork tenderloin in half crosswise to have two equal lengths of meat. This will help the pressure cooking process. Then we add a rub of brown sugar, salt, pepper, paprika, onion powder and garlic powder. Fresh, course ground pepper is my choice to use and I like to go heavy on it. I personally love to use a peppercorn medley which consists of black peppercorns, pink peppercorns, green peppercorns, white peppercorns and coriander. The combination of peppercorns, especially when fresh ground creates such a wonderful flavor profile when combined with the other seasonings for this recipe. You can find peppercorn medley grinders in just about any supermarket spice section, usually very affordably too.

What Ingredients Are In Instant Pot Pork Loin

  • Pork Loin This is the cut of meat for this recipe that comes from the back of the pig, which is a long/wide piece, usually about 3-5 pounds per roast. Its not the most tender cut of pork so it needs to be cooked at a low temp for longer than a tenderloin.
  • Salt A basic spice that is used in most recipes.
  • Pepper Ground black pepper.
  • Garlic Powder A common spice in a lot of foods that always makes food taste delicious.
  • Onion Powder Also similar to garlic, adding so much good flavor to things.
  • Paprika We use this spice in food which adds a slight bit of warm heat.
  • Olive Oil A good virgin olive oil is best.
  • Broth You can use chicken, beef, or bone broth.
  • Mushrooms This vegetable is used a lot with pork and beef.
  • Onions Any type of onions will work in this recipe. They all have good flavor.

Do I Need To Sear Pork Loin Before Pressure Cooking

Searing the piece of pork before cooking it in the pressure cooker is definitely a step that you do not want to skip. It just tends to give the meat a better flavor and texture than if you just started cooking it.

Do I Have to Use a Trivet?

No, you do not have to use the trivet while making the pork loin in the pressure cooker. In fact, it is good for the roast to sit inside the broth while cooking to remain moist.

  • Use a meat thermometer: Invest in a reliable meat thermometer if you dont have one!
  • Rest pork loin: Let the pork loin rest after pressure cooking the internal temperature will continue to rise.
  • Slice pork loin against the grain
  • Serve & eat immediately: Pork loin dry out quite quickly after slicing.

How To Cook Pork Loin In The Instant Pot

  • We start with melting some butter and then stirring in garlic, brown sugar, and herbs.
  • Season the pork loin with salt and pepper, then, brush the butter mixture all around the meat.
  • Next, press the Sauté function on the instant pot and heat up a bit of olive oil sear the pork loin on all sides until browned should take about 2 to 3 minutes per side.
  • Remove pork and set aside.
  • Add liquid to the Instant Pot and scrape up any browned bits from the bottom.
  • Place a trivet in the IP and set the pork on top of the trivet.
  • Lock the lid and pressure cook at high pressure for 15 minutes.
  • Then, let the pressure come down naturally for 15 minutes, and quick release any remaining pressure.
  • Open the lid and check internal temperature with an instant read meat thermometer it should read 145F. If its less than this, you can place the lid back on the pot to let the carryover heat cook the pork to doneness. Shouldnt take more than 3 minutes.
  • Transfer pork loin to a cutting board and let rest 15 minutes.
  • In the meantime, prepare the pan-sauce: Select the Sauté function and bring liquid to a boil. Continue to cook at a slow boil for 5 minutes, or until reduced by half, stirring occasionally.
  • Slice the pork and serve with the pan juices.
  • Saute Onion And Garlic

    *Note: Your Instant Pots inner pot should look quite brown. Dont worry! Your pot didnt burn, those caramelized brown bits will add yummy flavors to your pork loin.

    Add one more tbsp olive oil in Instant Pot.

    Then, add in sliced onions, then saute for 3 minutes.

    Add in 1 bay leaf, 1 tsp dried oregano, 1 tsp dried rosemary, and minced garlic in Instant Pot. Then, saute for another 30 45 seconds until fragrant.

    How To Store And Reheat The Leftovers

    When I have leftovers I store the sliced pork in an airtight container. It keeps well for a few days in the refrigerator. You can also freeze it for up to 3 months.

    To reheat it, just warm the slices in a pan on the stove over medium heat. Cover the pan with a lid so the meat doesnt try out and just turn it a few times while it warms up. It only takes a couple of minutes!

    How Do I Know My Pork Loin Is Cooked

    The best way to guarantee that you cook the pork loin long enough is to check the internal temperature with an instant-read thermometer.

    You can remove the pork loin once it reaches 145 degrees, or let it cook until 160 degrees if you like your pork more well-done.

    Remember that when you let the pork rest, carryover cooking will raise the temperature by about five degrees.

    How To Cook Frozen Pork Tenderloin In Instant Pot

    For a quick guideline, please watch the short video tutorial attached above. But the general steps are as follows:

  • Add 2 cups of chicken broth and bay leaves to the pressure cooker pot.
  • Then, place the trivet with handles and place frozen tenderloin directly onto it. If it doesnt fit, cut it in half.
  • After, close the lid and make sure the valve points to seal.
  • Press the Pressure Cook button and set the timer for 60 minutes for frozen pork tenderloin and 40 minutes for fresh or thawed tenderloin. Followed by a 10 minutes Natural Pressure Release.
  • After the 10 minutes NPR, release manually the remaining pressure.
  • Open the lid and carefully lift the trivet with the meat. Remove and discard any excess fat from it, and place it in a baking pan that has been covered with foil.
  • Clean the pressure cooker pot, and Select sauté.
  • Next, combine all the sauce ingredients in a medium bowl and stir until fully combined.
  • Once the IP reads HOT, add the sauce mixture to it. Stir and cook for a few minutes until it thickens enough to coat the spoon.
  • Top the pork tenderloin with half of the sauce, brushing the top and the sides of it. Set the other half of the sauce aside.
  • Broil the meat for a few minutes, or until golden brown. Baste once with the sauce that dripped into the pan.
  • Let it rest for 10 minutes before slicing.
  • Using a sharp knife, slice the meat and serve drizzled with the remaining sauce.

  • Take pork loin out of the fridge 20 to 30 minutes before cooking with it.
  • Trim visible silverskin or loose pieces of fat, but leave the fat cap in place.
  • Brown the pork loin before pressure cooking. Dont skip this part it adds flavor and texture. Also, for a crispier crust, place the cooked roast on a sheet pan and pop it in a 475F preheated oven for 8 to 10 minutes.
  • A perfectly prepared pork loin should be removed from cooking at 145°F for medium doneness. The key to juicy pork is not overcooking it. Higher temperature results in a dry and stringy pork loin.
  • Keep in mind that cooking time also depends on the size of the pork loin. For this recipe, I used a 2-1/2 pound roast.

    Pork loins are a wider cut and are usually covered with a thicker fat cap. They do much better in the crock pot and even in the Instant Pot than a leaner cut like a pork tenderloin.

    There is a lot of confusion when it comes to pork loins vs pork tenderloins.

    Pork loin and pork tenderloin are not cut from the same part of the animal, and in fact, look really different pork tenderloin is thin and small, while a pork loin is wide enough that you can cut steak-like pieces from it. How you cook it, though, is the main difference. Pork tenderloin is best quickly cooked over fairly high heat, while pork loin lends itself well to slow-roasting or grilling methods.
