What Is Sushi Rice

How To Cook Perfect Rice in the Instant Pot

Not all rice is created equal. While the Instant Pot does a great job of cooking all different types, youll want to make sure your sushi rice comes out with the right consistency and texture. The first step in making beautiful sushi rice is choosing the right type of rice to craft your recipe with. You should look for;short-grain Japanese rice or;medium-grain California rice. Most times, you will find rice simply labelled;sushi rice. It may also be called Calrose rice.;Either option will do the trick! Rice Sticking To The Bottom Of The Instant Pot

Getting the rice to water ratio correct and adding a tiny bit of fat should alleviate the sticking issue, but if you are still losing rice to the bottom of the Instant Pot, Ive got you covered.

I almost always use a natural pressure release when Im cooking rice, because I start the rice at the beginning of meal prep and have plenty of time to ignore it. I dont have a sticking problem, but if you do, try using a quick release. A quick-release will rapidly expel available moisture in the form of steam.

What We Look For In A Perfect White Basmati Rice

How to make white rice in the Instant Pot

This can of course vary from person to person. But as someone who has grown up eating basmati rice, these are some of the things I look for in basmati rice :

  • Cooked basmati should be al dente and fluffy.
  • It should give off that distinct aroma and it should be full of nutty flavor.
  • I also prefer my basmati rice to be long and separate with just the right amount of moisture.

Soft, sticky and mushy basmati rice is a big no NO for me!

Instant Pot Rice Setting

I always cook rice using the manual pressure cook setting, not the rice setting. The Instant Pot rice program supposedly senses how much rice and moisture are in the pot and sets the cook time accordingly. The rice setting can only be used for white rice. I like to be able to control the cook time myself, so I avoid the preset programs on my Instant Pot.

Types Of Wild Rice It Matters

So, heres what Ive figured out

The type of wild rice you use REALLY matters. There are so many varieties, and I dont use a variety that can be bought off the shelf at your local supermarket.;I buy it from friends who go out in a canoe and harvest the rice by hand, according to traditional Native practices. I pay $11 per pound for this beautiful, local food.

Our wild rice is not patty-grown. It is not dark black or brown; more of a grey-ish brown color.

If your wild rice is patty-grown, black in color, or machine-parched, your results may be different.

This is my best guess as to why others who have followed this recipe ended up with vastly different results. Just know that as long as the rice is cooked through not too al dente and not mushy, but perfectly cooked and youre still left with water, simply drain the water and use the rice. Its really ok!
