How to Cook Pasta in the Instant Pot (Regular & Gluten-Free!)

Start with your Instant Pot on a flat dry surface.

Take the Spaghetti, break it in ½ and use your fingers to slip it into the inner pot, separating the strands slightly as you go.

  • Add broken in half spaghetti to inner pot
  • Pour in enough water to just cover the spaghetti
  • Add a pinch of salt
  • Press the Pressure Cook button
  • One of the things I love about the Instant Pot is that it will make a few noises as you use it as it does the things to ‘ask’ it to do.

    • Set the pressure to high pressure
    • Then set timer by using the up and down arrows

Let the Instant Pot build to the right pressure, cook the pasta and then it will beep to let you know it is done

    • Press the quick release button and let the safety value deflate
    • Turn and remove the lid , and use oven mits to remove the inner pot, drain spaghetti into a colander

    How To Cook Gluten

Gluten-free pasta production has come a long way and these days, if cooked properly, you will hardly tell the difference between regular and gluten-free varieties. Making the dough of gluten-free pasta is different and uses a combination of flours to get the best results. That is, to get a similar protein content and stretch of the dough and to get a similar texture. Usually, you will find a mixture of brown rice and corn flour often, quinoa flour or lentil flour might be added for extra protein.

We find that corn, brown rice and quinoa flour tends to have the most similar texture to regular pasta.

Even though the texture is quite similar, gluten-free pasta tends to be starchier and expands more while cooking, therefore it needs a little extra cooking liquid. As a rule of thumb, add an extra 1/4-1/2 cup or so. Adding salt and fat is the same for regular and gluten-free pasta!

It also means that when overcooked, gluten-free pasta really doesnt hold its texture or firmness well and is much softer and mushier than regular pasta. Therefore, the main rule with gluten-free pasta is DONT OVERCOOK IT!

When making pasta in the pressure cooker, you need to at least have enough water to just barely cover the pasta. Regardless of how many servings you are making, you need to make sure the pasta is covered.

Make sure you have enough water to meet the minimum liquid requirement of your particular model of Instant PotI usually aim to have at least 1 cup of liquid.

There are a lot of specific ratio suggestions floating around the internet, but honestly, I just make sure the pasta is just barely covered with water, and that always works splendidly for me.

A few minutes of cooling and a flurry of Parmesan cheese will make this the perfect weeknight dinner.

Everybody loves pasta, but nobody loves having to use half the pots and pans in the kitchen to get it ready. With an Instant Pot, all you need is a single piece of cookware and about 10 minutes. Just throw your pasta and sauce of choice into the Instant Pot, along with 3½-4 cups of water. Secure the lid and set the manual timer to 4-8 minutes. Once the pot beeps, release the pressure valve and give everything a good stir. Youll have dinner on the table in less time than it takes to boil a pot of water!

    Instant Pot Pasta Formula

Since different pasta shapes require different cook times, here is what works for me:

Look for the suggested cook time on the box. Now, take the lower number and divide it in half. If an odd number is listed, divide that and round down. For example, if it says 7 minutes, divide that in half, which is 3.5 and round it down to 3.

This produces pasta that is well cooked and just right for my family. For an al dente pasta, or firm to the tooth, subtract one minute from that. For a softer and more tender pasta, simply add another minute to that cook time.

Whole Wheat or Gluten-Free Pasta: The cooking-time formula holds true for whole wheat and gluten-free pasta varieties, too. Simply refer to the cooking time on the package and follow the calculation above.

    How To Reduce Pasta Foam

I’ve learned some great tips and tricks from all of you in the comments below, here is a summary of the knowledge I’ve gathered over time:

    • Add Fat
    • Oil or butter will reduce foaming. I add about 1 tablespoon per 8 ounces of pasta
  • Rinse pasta
  • Rinse the pasta 2 3 times before you cook it I wouldn’t say this is the perfect solution, but it does seem to help
  • Place a trivet over the pasta
  • As bubbles start to rise, the trivet will pop them and keep foam from reaching the valve. This doesn’t work perfectly every time either, but again, it seems to help especially if you use a slow pressure release
  • Intermittent Pressure Release
  • Turn knob to quickly release the pressure. If starchy water starts to spray through the valve, switch the knob to a sealed position, wait 30 seconds, then switch the valve back to release, repeating this process as many times as needed usually 2 -3 times
  • Slow Pressure Release
  • Turn the knob only slightly so the pressure is released slowly. This will take a bit longer but will cut down on foaming considerably and prevent overcooked pasta
  • My personal go-to method
  • Add fat, place a trivet over the pasta, use a quick release of the pressure and wait and see if there is going to be enough starchy water spraying out for me to want to close the knob again. Then I use the intermittent or slow-release method to release the remaining pressure.

Cooking Regular Pasta In A Pressure Cooker

When it comes to regular pasta, these are the basic steps:

  • Add dry pasta to the inner pot.
  • Add the liquid, salt and a little oil or butter and stir well.
  • Set the Instant Pot to Manual/Pressure Cook at HIGH pressure
  • Adjust the time to 3.5-5 minutes depending on the pasta type . Make sure the top valve is pointing to Sealing.
  • Instant Pot will take 5-7 minutes to build up the pressure, the timer will start.
  • Once the timer stops, move the top valve to Venting to release the pressure. This is called Quick Release. Some of the built-up foam in the liquid will squirt out together with the steam, this is normal for pasta. More on that below!
  • Dont leave the pressure to release naturally for too long as the pasta keeps cooking during this time. Thats why we do the quick release, usually.

Pressure Cooker Bow Tie Pasta Cooks In The Sauce

Cooking pasta with my new Instant Pot DUO60

For this Pressure Cooker Bow Tie Pasta, I combined the Cooks Illustrated recipe with my quick pasta sauce recipe.

This is my go-to pasta sauce because I always have crushed tomatoes and spices on hand. Its a forgiving recipe, so I can throw in grated carrots, fresh tomatoes, corn, baby spinach, and any other veggies I have on hand.

And it cooks up quick and delicious.

In this recipe, I make the pressure cooker bow tie pasta right in the sauce. I love having only one pot to clean on busy nights, and if you want to add ground beef or sausage to the sauce, you can saute it in the same pan, transfer the ground beef to a paper towellined plate, and then start this recipe.

If your pasta sauce is more watery than you like , Cooks Illustrated recommends simmering the pasta for a few minutes after its been pressure cooked so theres no worry about overcooked noodles. However, I find I rarely need to do that these days.

If you prefer to control your sauce levels and would rather cook the sauce separate, follow the guidelines in the How to Cook Perfect Pressure Cooker Pasta post.

To make Instant Pot pasta I follow this simple rule:Take the time mentioned on the box of pasta, halve the time mentioned on the box, and then reduce that by 1. This gives you the time needed to cook the pasta in the Instant Pot.

For example, I made this pasta recipe using penne which called for 11 minutes of cooking time. Halve it , reduce that by 1, which makes it 4.5 minutes going by the rule above. Round that off to the next number ie, 5 minutes. Cook the penne pasta for 5 minutes!

Cooking Pasta In The Instant Pot With Sauce

I often choose to cook my pasta in a sauce, making a one-pot meal for a quick and easy dinner.

If you prefer to cook the pasta in sauce, youll want to make sure the sauce is thin enough to boil well.

Sauce that is too thick or viscous wont boil well enough to create enough steam to generate pressure within the pot, and it can lead to scorching on the bottom of your insert pot and the dreaded BURN error on the Instant Pot.

Once you have thinned the sauce and you have enough liquid to cover the pasta, youll follow the same general instructions listed above for cooking plain pasta in the Instant Pot!

    Freezing And Storing Spaghetti

If theres a chance you have leftovers, theyll be even better the second day. I dont know what it is about Italian food, but its always better after the flavors have melded together overnight. One of my favorites for leftovers is Baked Chicken Spaghetti, it is so good! Sometimes I secretly hope there are leftovers, just so I can have them the next day for lunch. Warmed up with a slice of bread and Im set!

    • Storing: Like most dishes, this will keep beautifully in the fridge for 4-5 days.
    • Freeze: This will freeze for 3-4 months well. If I know Im going to freeze leftovers Ill try to under cook the noodles just a tad bit so they are really al dente. Using the quick release valve stops the cooking process. Once the spaghetti has completely cooled I will portion out in individual freezer safe containers or bags. Thaw overnight in the fridge and warm on the stove top or microwave. Enjoy!
