How To Reverse Sear After Pressure Cooking

Okay, so you do the pressure cooking first. Like I said, just throw them in there. Then what? Well, they need a nice crust. I have tested two ways to get a nice crust on these after theyve finished pressure cooking.

The first is to use the air fryer. Eight short ribs fit perfectly in a single layer in my air fryer. You mist the ribs lightly with cooking oil , sprinkle them with a little bit of salt, and then put them into the air fryer at 400F for 7-10 minutes, no flipping required, until nice and brown.

The second method to get a good reverse sear on the short ribs is to put them under the broiler. Again, mist them lightly with some cooking oil and season them lightly with salt, and then put them on a pan about 6 inches from the broiling heat source. Watch them carefully because they sometimes brown more quickly than I expect, but youre looking at about 3-5 minutes and then you flip them over and do another 3-5 minutes on the other side.

I dont recommend using the Instant Pot on Sauté to get a sear on the short ribs after pressure cooking. I tried it and it took a long time and I had to do it in batches or else they wouldnt brown. So definitely go with the air fryer or broiler.

What Kind Of Meat To Use

How to make the Best Instant Pot Short Ribs

Bone-in beef short ribs are marbled and meaty, which make them perfect for the pressure cooker!

I prefer English-style beef short ribs, where each rib has only one bone and theres at least 1 inch of meat above the bone.

You can use boneless short ribs, if you prefer. If the short ribs are wide and thick , keep the same cook time. If theyre skinnier, Id cut the cook time by half and add extra time if needed.

Remove The Membrane From Beef Short Ribs

Ribs often come with the membrane still attached and you have to remove it before you cook them. The membrane is simply a layer of fat that runs across the underside of the ribs. While a common idea in cooking is that fat adds flavor, this particular kind of fat doesnt offer any flavor to speak of.

This thin canvas that stretches across the ribs turns rubbery while cooking and renders the meat too tough to eat. Its no fun for anyone who dines on these ribs and when you remove the fat it shows that you know what youre doing.

So, one of the first and most important things you can do what you set out to prepare some delicious Instant Pot beef short ribs is to strip the membrane off of the ribs.

To remove the membrane all you need is a dull knife and a paper towel, starting with a thawed rack slide the knife in the flat between the membrane and the bone.

Gently lift to pry the membrane free and shimmy the knife across the rack to separate the membrane. It helps to sort this near one edge of the rack and work toward the outside. using a paper towel for grip.

Take hold of the membrane and peel it back along the rest of the length of the rack. Its a stretchy and slippery substance so the paper towel helps a lot. Once the membrane is removed you can discard it.

How To Cook Short Ribs In An Instant Pot:

While the list of ingredients may be long, this dish is actually pretty quick and easy to prepare. So, here are some important steps to follow:

Step 1. Brown the Short Ribs

Season short ribs with salt and pepper. Heat oil in an Instant Pot, working in batches, brown short ribs on all sides.

Step 2. Deglaze

Deglaze the pan with dry red wine. As the liquid simmers, scrape up any crispy bits from the bottom of the Instant Pot with a wooden spoon or spatula to prevent burning.

Step 3. Pressure Cook

Add all ingredients, including browned short ribs into the pot.

Cook it on manual for 30 minutes. When the cooking is done, let the Instant Pot release pressure naturally.

The ribs are pressure cooked in a mixture of broth, balsamic, red wine, and honey. This makes for a really nice red wine braised beef short ribs recipe but done in the Instant Pot instead of in the oven.

Cut your carrots pretty big for this recipe, otherwise they will get over cooked. You can also add carrots to a bit of broth in the pot and pressure cook for just a few minutes if you want firm carrots for serving

Be sure to allow for at least 20 minutes of natural release with this recipe. The natural release helps keep the meat tender and important when cooking meet in the Instant Pot, especially with beef.

Can I Skip Natural Pressure Release

It can be a bit frustrating to have to wait the entire 30 minutes it takes to naturally release the pressure from the Instant Pot. However, when cooking meat that you want to be tender, its better to allow the pressure to naturally release.

This is because the meat needs a resting period to relax and rest. If youre really strapped for time, you can cut down the pressure release time and it wont negatively affect the outcome. Allow the pressure to release naturally for 10 minutes, then you can quick release the rest of the pressure.

  • Ribs can cook for 45 minutes without bones. Cook for an hour for bone-in
  • There will be a lot of grease after the ribs cook, you can ladle this off and enjoy the ribs.
