HOW TO MAKE POT ROAST IN THE INSTANT POT!

A pot roast is such a wonderful dinner to make. You get delicious tender veggies along with some juicy chunks of shredded beef. This is fantastic for a Sunday dinner with the family. Many sides can go with this, because you are pairing this up with a delicious gravy. Doing this in the slow cooker or instant pot, really makes this recipe easy with little clean up.

Ingredients:

2 – 3lb chuck roast or chuck tender roast

1lb Red potatoes whole

3 large carrots chopped in big portions

3 Celery stalks chopped in big portions

½ onion chopped

¼ cup of all-purpose flour

½ stick of unsalted butter

Cooking Instructions:

Take the beef roast and season with salt and pepper, and let sit in room temperature for 30 minutes to an hour.

Set the instant pot on sear, sear both sides of the roast for 4 minutes each. Once you have a nice sear on both sides remove the roast.

Add in the chopped onions, and allow the onions to deglaze the bottom of the instant pot. Stir scraping the bottom occasionally.

Once the bottom is deglazed, turn off the instant pot.

Add in the beef broth, vegetables, garlic, thyme, and a couple of pinches of salt and pepper.

Add in the roast, place the lid on the instant pot with the vent open.

Select slow cook, and set to high heat for 4 5 hours. Depending how thick your roast is, you may need an additional time. Chuck roasts should be ok for 4 hours.

In the instant pot on sauté with less heat or pan over medium low heat, add in your butter to start melting it.

How To Cook Meat From Frozen In An Electric Pressure Cooker

When I cook from frozen, I do 1 1/2 the original cook time. Where this roast already has a longer cook time, I didnt find it necessary to cook it quite that long. See the recipe below for directions. For a roast, the most important thing is to have it cut into 2 3 pound chunks before you freeze it instead of one solid 4 6 pound chunk. It will cook much more evenly and be more tender and juicy throughout.

First What Is A Pork Butt

The cut referred to as a butt roast or Boston Butt is actually from the front of a pig. The shoulder area to be exact. The shoulder is divided into two cuts the top rectangular part and the lower triangular part.

Historically, the top rectangular portion was a less popular cut. Butchers in colonial New England took these less popular cuts and packed them in wooden barrels for storage and transportation. The barrels used were called butts. So now you know. Interesting, right?

Now on to an easy and relatively quick recipe for pork roast. I know, this sounds a bit like an oxymoron. Pork shoulder roasts generally benefit from long cooking times. With the introduction of the Instant Pot, an updated electric pressure cooker, that has all changed. In about an hour you can have a fork-tender pork roast on the table.

How To Make Pot Roast In The Instant Pot

  • Trim the excess fat off the beef, then cut it into 3-4 large chunks.
  • Combine the dry rub ingredients in a small bowl, then coat the beef chunks with the rub.
  • Turn the Instant Pot to SAUTE and add oil. Once hot, add beef and sear until browned on all sides, about 5-10 minutes. Set beef aside on a plate.
  • Add the onions to the pot and cook for 2-3 minutes, until softened. Add the garlic and cook 30 seconds longer. Then add the tomato paste and cook for 1 minute more. Next, add the red wine, broth, and Worcestershire sauce and scrape any browned bits off the bottom of the pot.
  • Return the beef to the pot, then top with the potatoes. Dont stir.
  • Place lid on pot and set to seal. Cook on manual HIGH pressure for 45 minutes. Once the time is up, quick release the pressure .
  • Add carrots. Place lid on pot and set to seal. Cook on manual HIGH pressure for 4 minutes. Once the time is up, quick release the pressure.
  • Remove beef and veggies from Instant Pot and arrange on a serving platter.
  • Add the cornstarch slurry to the liquid left in the Instant Pot. Press SAUTE and cook for 2-3 minutes, until thickened.

Make Roast Beef Gravy

Once the roast beef has reached 120°F, remove and set aside on a chopping board.

Loosely wrap the roast beef with aluminum foil & let it rest for 8 10 minutes before slicing .

While the roast beef is resting, bring the beef sauce to a simmering with the Saute function.

Taste the roast beef gravy to make sure it is not too salty before adding another tbsp of regular soy sauce.

*Pro Tip: If the beef gravy is too salty, dont add any more soy sauce at this step.

Mix 1.5 tbsp all purpose flour with 3 tbsp water.

Mix flour mixture into the beef gravy in Instant Pot one third at a time until desired thickness.

Taste and adjust seasoning with more salt and black pepper if necessary.

Saute Onion And Garlic

*Note: Your Instant Pots inner pot should look quite brown. Dont worry! Your pot didnt burn, those caramelized brown bits add yummy flavors to your roast beef.

Add in one more tbsp olive oil. Add in sliced onions, then saute for 3 minutes.

Add in 2 bay leaves, ¼ tsp dried rosemary, and minced garlic in Instant Pot. Saute for another 30 seconds until fragrant.

This Is The Best Way To Cook A Roast In Your Instant Pot

While they have been around for a while, I think that NOW they are really becoming mainstream, as in not only food bloggers have Instant Pots, that type of mainstream. I bought mine last summer when they were on for an incredibly cheap price on Prime Day and I swear that it hasnt left my counter for more than three days since then.

What Is The Best Thickener For Gravy

Instant Pot Roast Recipe / How to Cook a Roast In An Instant Pot!

A lot of my recipes use corn starch for the thickener. It is a great thickener, especially for clear sauces, and it works quickly. If you prefer corn starch, mix 2 tablespoons corn starch with 2 tablespoons cold water, then add to the cooking pot and bring to a boil to activate the corn starch.

However, when doing a classic pot roast, I prefer the flavor and texture of gravy thickened with flour. Maybe thats just because thats how I grew up. When using flour as a thickener, make sure the gravy comes to a boil for at least 2 minutes to eliminate any raw-flour taste from your gravy.

What Vegetables To Serve This With

My personal favorite is to serve this with some sauteed Brussels sprouts, but I know potatoes and carrots are a much more popular option.

I think the potatoes and carrots will taste best if you roast them separately in the oven, or you could try making my popular Honey Glazed Carrots!

If you want to cook the potatoes and carrots in the Instant Pot with the roast, youll need to decrease the cooking time by 15 minutes and do a quick release. Then add in halved potatoes and carrots. Cook everything for the remaining 15 minutes and then proceed with the natural release for 30 minutes.

Yes! I have a 6qt machine and Ive frequently cooked two pot roasts in one go. The trick is to not lay them on the bottom like Ive done in this recipe, if you put them one on top of the other like that they may take much longer to cook. What I do is simply stand them up sideways on opposite sides of the pot, the cook time then is exactly the same as it would be for one pot roast, win win!

    My Pressure Cooker Pot Roast Was Tough Why Did That Happen

    There are a couple of reasons for your Instant Pot pot roast not cooking as expected so Ill run through the most common issues below:

  • Wrong cut of meat I highly recommend using a chuck roast for this recipe, or if you cant find a chuck roast use another cut of beef that is suitable for slow cooking and has some fat marbling. Leaner cuts of meat will tend to be tougher cooked like this and in the end may be tough no matter how long you cook them for.
  • Needs a longer cook time The cook time largely depends on the thickness of the meat rather than just the weight so if you have a chuck roast that is thicker than about 1.5- 2 inches, or is thicker at one end of the cut of meat than the other, then you may need to add more cooking time. If you find its not tender at the end of the cook time in my recipe, simply put the lid back on and add another five to ten minutes cook time and see how that works.
  • You didnt use natural pressure release if you open the steam release valve as soon as the pressure cooker beeps at the end of the cook time then youll risk ending up with dry inedible meat. This recipe is best if you use a natural pressure release, that simply means waiting about ten minutes or so after cooking until the unit has cooled down enough for most of the pressure to drop. Then you can carefully open the valve to release any remaining pressure and take off the lid.
