Why Should I Cook Sous Vide
Sous vide cooking utilizes precise temperature control with circulation to produce results that you cantachieve through any other cooking technique. The reasonwhen using traditional methods of cooking, youdont have control over heat and temperature. Consequently, its very difficult and time consuming toconsistently cook great food. Food ends up overcooked on the outside, with only a small portion in thecenter that is cooked to the temperature you want. Food loses flavor, overcooks easily, and ends up witha dry, chewy texture.
With precise temperature control in the kitchen, sous vide provides the following benefits:
Consistency. Because you cook your food to a precise temperature for a precise amount oftime, you can expect very consistent results.
Taste. Food cooks in its juices. This ensures that the food is moist, juicy and tender.
Waste reduction. Traditionally prepared food dries out and results in waste. Forexample, on average, traditionally cooked steak loses up to 40% of its volume due to drying out. Steakcooked via precision cooking, loses none of its volume.
Flexibility. Traditional cooking can require your constant attention. Precision cookingbrings food to an exact temperature and holds it. There is no worry about overcooking.

What Is Sous Vide
Sous Vide means Under Vacuum in French. The sous vide cooking method consists of sealing your food in an air tight bag and then cooking it in water that is kept at the desired temperature of the finished food. Have you ever wondered why if you want a steak cooked to 140° F in the oven, you have to place the temperature of the oven to 350°F and not the temperature you want your food to be cooked at? Well, thats because air is a terrible conductor of heat. It would take so long for the heated air to bring your food up to temperature, that it would be a dried out mess. Not only that, but because you have to have the oven turned up so high, it doesnt transfer heat well so by the time the inside of your food is cooked, the outside is overcooked.
Water conducts heat much better than air, so it does a much better job of transferring heat to your food. That is why you can bring the water to the exact temperature you want your food at and not higher like you would if cooking in an oven or on the grill. The air tight bag, helps this heat transfer to go directly to the food. It also protects the food inside and keeps all the juices and moisture that is naturally in the food, right where it should be. Thats what makes it different from just placing food directly into a hot container of water. That would work, but all the flavor and juices would seep out into the water. Thats why boiled food doesnt take so good.

What Is The Difference Between Cooking In An Instant Pot And Using A Sous Vide Machine
An Instant Pot has heating elements at the base of the outer pot, which heat the inner pot. The machine seals shut, so the temperature inside quickly rises higher than other traditional cooking methods. The Instant Pot is basically an updated pressure cooker, and pressure cooking is the reason that food cooks so much quicker.
During cooking, the machine cycles the temperature, similar to an oven this is a way to prevent overheating, but also means that temperatures are not consistent during cooking. The temperatures may vary as much as 15 degrees, according to one graph.1
A sous vide machine is an immersion circulator that heats water to a specific and consistent temperature, rather than heating the actual cooking vessel. It cooks gently, slowly, and for a long amount of time, which is quite opposite of the Instant Pot.

How Does The Instant Pot Sous Vide Function Work
The Instant Pot sous vide smart program is a built-in function that works differently than traditional sous vide circulators.
When using the Instant Pot sous vide function, the pot heats to the desired temperature, but there is no circulator inside the pot. Its merely a matter of programming the pot to your desired temperature.
This is less precise than using an immersed circulator, because the water isnt being circulated , and because the pot cant actually measure the temperature of the water.
For this reason, I recommend using a thermometer to check the temperature of the water to ensure it is adequate for the food you are cooking.
Despite this shortcoming, Ive found the built-in smart program sous vide function to work quite well.
However, if you want the ability to precisely control the temperature, and if you prefer to have the water agitated throughout cooking, it would be best to purchase an immersion circulator.
Other Methods For Reheated Sous Vide Foods
If you have a microwave, its perfectly fine to reheat your food that way, even if youve cooked it using the sous vide method.
However, bear in mind that this type of reheating will probably eliminate the juiciness and the richness of flavor from the food, especially meat. If youre okay with that, a microwave works just as well.
