What Is Sous Vide
Sous Vide means Under Vacuum in French. Have you ever wondered why if you want a steak cooked to 140° F in the oven, you have to place the temperature of the oven to 350°F and not the temperature you want your food to be cooked at? Well, thats because air is a terrible conductor of heat. It would take so long for the heated air to bring your food up to temperature, that it would be a dried out mess. Not only that, but because you have to have the oven turned up so high, it doesnt transfer heat well so by the time the inside of your food is cooked, the outside is overcooked.
Water conducts heat much better than air, so it does a much better job of transferring heat to your food. That is why you can bring the water to the exact temperature you want your food at and not higher like you would if cooking in an oven or on the grill. The air tight bag, helps this heat transfer to go directly to the food. It also protects the food inside and keeps all the juices and moisture that is naturally in the food, right where it should be. Thats what makes it different from just placing food directly into a hot container of water. That would work, but all the flavor and juices would seep out into the water. Heres how to make sous vide egg bites in the Instant Pot:
- Grease the egg bite mold. Use butter or olive oil spray to ensure that the bites pop out easily when they are done cooking.

- Cool the Instant Pot sous vide egg bites. Lift trivet out of pressure cooker with oven mitts be careful, its very hot! Let them cool for 5 minutes , then flip the mold over a plate and pop egg bites out.

How Does The Instant Pot Sous Vide Function Work
The Instant Pot sous vide smart program is a built-in function that works differently than traditional sous vide circulators.
When using the Instant Pot sous vide function, the pot heats to the desired temperature, but there is no circulator inside the pot. Its merely a matter of programming the pot to your desired temperature.
This is less precise than using an immersed circulator, because the water isnt being circulated , and because the pot cant actually measure the temperature of the water.
For this reason, I recommend using a thermometer to check the temperature of the water to ensure it is adequate for the food you are cooking.
Despite this shortcoming, Ive found the built-in smart program sous vide function to work quite well.
However, if you want the ability to precisely control the temperature, and if you prefer to have the water agitated throughout cooking, it would be best to purchase an immersion circulator.
Other Methods For Reheated Sous Vide Foods
If you have a microwave, its perfectly fine to reheat your food that way, even if youve cooked it using the sous vide method.
However, bear in mind that this type of reheating will probably eliminate the juiciness and the richness of flavor from the food, especially meat. If youre okay with that, a microwave works just as well.
