Homemade Greek Vanilla Yogurt in the Instant Pot

This will depend on how you like your yogurt and what you are going for. If you want a really thick Greek-style yogurt, then you should strain it. Greek yogurt is typically my preferred yogurt style, but I actually choose not to strain mine. I prefer the slightly thick, creamy texture. Strain the yogurt after chilling it.

If you do strain your yogurt and find its too thick, you can add some of the strained whey to the mixture and stir. It should loosen it some.

Start Making The Yogurt

Close your Instant Pot and turn the valve to sealing.

Press the Yogurt button on your Instant Pot and set the timer to 9 hours. Once you set the timer, it will start at 0, just like the pic above.

Once the Instant Pot finishes, it will display Yogt.

Open the Instant Pot and mix the yogurt. Your yogurt will have what is called whey. Mix the yogurt, and it should be ready to be stored.

If you want a thicker yogurt, this is what you need to do:

First, strain the yogurt using a cheesecloth or coffee filter.

How To Make Yogurt

Make sure you are using a clean sealing ring on the lid of the Instant Pot. I have different colored lids that I use for different things, because the lids absorb odors and if you use the same lid for yogurt that you used for chicken and soup, the yogurt will have a very distinct flavor of chicken and garlic, and other savory flavors.

Using Ultra Filtered Milk

Pour the milk into the Instant Pot, add the yogurt and sweetened condensed milk, . Whisk until combined.

Turn on the Yogurt function, adjust the time to 6 hours. Thats it! How easy is that?

Using Regular Whole Milk

Turn the Instant Pot to the Yogurt setting and adjust it until it says boil. Cover the Instant Pot with a lid and wait for the milk to boil. It has to reach at least 180-185 degrees Fahrenheit.

-Cool the milk to 105 -115 degrees Fahrenheit. I usually take the inner pot out of the Instant Pot so it cools off faster. If the milk is too hot, it will kill the cultures in the yogurt and the milk will not turn into yogurt.When the milk cools off, discard the skin on top of the milk and whisk in 4 Tablespoons of plain yogurt or plain Greek yogurt.

Turn the Instant Pot on to the Yogurt setting again, adjusting it to 8 hours. Mine also has the 24 hour option, but I use the 8. The longer the yogurt stands, the tangier it will be. I prefer a more mild yogurt.Cover with the lid and turn the valve to Sealing.After 8 hours, the yogurt will have a nice, thick consistency.

Description

Just prep all the ingredients before you go to bed and let your Instant Pot do its magic overnight. In the morning, your homemade vanilla yogurt will be ready to chill.

    Pour milk into Instant Pot, and turn on the Sauté setting. Scald milk by bringing it to boiling. Turn off Instant pot and remove inner stainless steel bowl. Let stand, stirring occasionally until milk reaches 115 degrees, about 45 minutes.

    Place Hy-Vee yogurt in a medium bowl and stir in 1 cup warm milk and 2 tablespoons vanilla. Return mixture to stainless steel bowl stirring to combine. Place mixture back into the Instant Pot and seal shut. Press the Yogurt setting and adjust time to 10 hours.

    When the yogurt stage is complete, turn the Instant Pot off, and remove the lid. The yogurt will be semi-solid, but will become smooth when whisked. Pour yogurt through a fine-mesh strainer and transfer to a clean glass container. Chill at least 6 hours before serving.

    Before serving, sweeten with honey, agave, or maple syrup and top with your favorite yogurt toppings such as granola, nuts, oats, and/or fruit.

    How To Make Instant Pot Yogurt:

    Before starting clean your instant pot really well with soap and water, or steralize it by adding 2 cups of cold water, closing the lid and sealing the vent, and setting it to high pressure for 3 minutes, with a natural release.

    1. Heat milk to 180-200 degrees. Add milk to the instant pot and place the lid on it . Press the yogurt button and then press adjust until the screen says BOIL.

    When the Instant Pot beeps, the milk is hot and ready. Remove the lid and check the temperature with a thermometer to make sure it has reached 180-200 degreed F.

    2. Allow milk to cool to down to 110°F -115°F degrees F. This will take 1-2 hours if left alone, or speed up the process by placing the pot into a bowl of ice water for about 10-15 minutes. Check often with a thermometer. Spoon off any milk skin that has formed on top.

    3. Add Yogurt Starter. Remove a ladleful of the warm milk into a bowl and whisk the yogurt starter into it. Then pour the mixture into the pot and whisk to combine.

    4. Set Yogurt Timer: Place the inner pot back in the instant pot and secure the lid . Press the Yogurt button and adjust until it reads 8:00 to 12:00 hours .

    When the time is up, check the yogurt. You will know its ready when it has thickened and jiggles only very slightly, like jello.

    Store in containers in the fridge and enjoy within 10 days.

    How To Make Greek Yogurt And Vanilla Yogurt

    Instant Pot Greek Yogurt

    • Prep: Line large mesh strainer with cheesecloth folded 4 times or single layer of coffee filters. Place on top of a bowl making sure there is enough space for draining the whey.
    • Strain for 4 hours: Add desired amount of yogurt, place in the fridge and strain for 4 hours.
    • Stir and enjoy: Greek style yogurt will be thicker along the walls. Just stir after adding to a jar. We love-love making my moms strawberry yogurt with Greek yogurt instead of sour cream for a healthier alternative.

    Yogurt is a versatile food item. You probably want it to be thick and rich in consistency to feel good. Here are some quick tips you can apply to make the rich and creamy yogurt in an instant pot next time:

  • You have a miscalculated thermometer due to which the temperature of your yogurt culture was below the required temperature. The improper temperature will ruin your yogurt big time.
  • The overuse of ultra-pasteurized milk will possibly ruin the consistency and smell of your yogurt. Replace it with raw milk for better results.
  • The use of almond or soy milk instead of cows or goats milk wouldnt give you the right texture and taste of yogurt. You can add a premium thickener to make the consistency rich.
  • Skim milk makes the overall texture of yogurt tangy. Although, to restore the firmness in your yogurt, add milk powder.

    Can you use skim milk to make yogurt in your electric pressure cooker?

    Yes, you can, with a few important tips.

    • I have found for nonfat yogurt, 3 tablespoons of yogurt added to ½ gallon milk works best.
    • Nonfat yogurt will have quite a bit more liquid on the top than yogurt made with full or reduced-fat milk.
    • Just carefully drain off the layer of liquid that forms on the yogurt and discard it.

    I had been putting off the purchase because of my lack of storage. But come on, I had to hop on the train. I justified it as seven kitchen gadgets in one. So I was essentially saving space right?!

    Luckily for me, my mom snatched one up as a Christmas gift.

    You can expect the yogurt to keep for about a week. While the vanilla is perfectly delicious, I also like to add in granola, maple syrup, fresh fruit, or my homemade chia seed jam. It helps me mix up the flavor throughout the week. Its even good in overnight oats!

    • If you want to flavor your homemade yogurt with Vanilla Extract or Vanilla Beans, it can be added when the yogurt starter is added.
    • Sugar and sweeteners are best added after the yogurt has chilled.

    Pro Tip: The bacteria in the yogurt needs to work without fighting with any sugar.

    What Is The Difference Between A Cold Start And Boil Yogurt

    Cold start yogurt requires an ultra pasteurized milk like the popular Fairlife brand which tends to be more expensive. With cold start yogurt you skip the heating and cooling steps. With the more traditional boil yogurt, you can use more affordable regular pasteurized milk and must follow the heating and cooling steps below. I personally MUCH prefer the taste of the more traditional version, but the cold start is fun to try!

    What I Love About This Recipe:

    • Inexpensive: For the quantity of yogurt this recipe makes youd spend around $15 dollars at the store. The ingredients here cost closer to $5!
    • Easy, and healthier than store-bought. I love knowing exactly what is going in our food. This yogurt is creamy and delicious!

    This recipe is nearly fool-proof! It requires, patience , but is almost entirely hands-off!

    One thing that separates an instant pot from a regular pressure cooker is its unique functions like the yogurt button, which allows you to make homemade yogurt in it! The instant pot provides a safe method to incubate yogurtkeep it at a constant warm temperature in the target zone of 110 and 115 degrees F allowing the bacteria in it to multiply properly and thicken to create smooth, creamy yogurt.

    Instant Pot Greek Yogurt

    Making homemade Greek yogurt in the Instant Pot has become a routine weekly task for me. The process is so easy and the result is perfectly creamy, smooth and tangy Greek yogurt. Its so much more cost effective than store bought yogurt.

    Its a perfect snack any time of day. We like adding different flavoring and sweeteners to it, like jam, fresh berries, fruit, honey, maple syrup, granola or nuts. Its also really nice to have on hand for baking and can be substituted for sour cream. While I’ve tried my hand at almond and coconut milk yogurt, I haven’t quite figured it out yet. A quick google search will supply you with many recipes to try.     How To Make This Instant Pot Vanilla Yogurt Recipe

    Add your milk to the Instant Pot. Press the yogurt button twice for the display to show the word boil. Use the lid for the Instant Pot to cover and close. It will take about 30 minutes.

    Check your milk to make sure that it has reached a temperature of 180°. If it has not reached 180°, press cancel on your instant pot, and turn it on sauté mode until it reaches that temperature.

    Remove the inner pot from the Instant Pot to cool to 105°. I placed my inner pot in the sink with water and ice which sped up the process very fast.

    Once you have reached the temperature, remove your inner pot from the ice bath. Remove any skin that might have started forming on the top.

    In a small bowl, add your vanilla, 2 tablespoons of yogurt, and a little bit of the milk from your pot. Mixed together until you have a thin consistency.

    Once completely mixed together add back to the pot. Mix well.

    Add your inner pot back to your instant pot. Close the lid and close the sealing valve.

    Press yogurt on your Instant Pot and set to 8 hours. If you dont have a yogurt button then use the manual button and set for 8 hours on high pressure.

    Once the time has completed, turn off your Instant Pot, and transfer the inner pot to the refrigerator for at least four hours or overnight.

    Top with fresh fruit, frozen fruit, granola, and honey! Enjoy!

    Now theres a few methods to make homemade yogurt in your Instant Pot. One where you boil the milk to a certain temperature and then add your starter. This method can be used if you do not have a yogurt button.

    The second method being a no boil method using ultra filtered milk. Which sounds easier? The no boil method.

    There are more popular ways to sweeten your yogurt with this method. One being coffee creamer and the other being sweetened condensed milk. To me coffee creamer seems a bit more appealing and not as sweet. I also like that you can change the flavor of your yogurt by which coffee creamer you are using.

    I tend to like cleaner ingredients so I am using Coffee-mate Natural Bliss coffee creamer. Dont want a sweet yogurt? Skip the coffee creamer or sweetened condensed milk.
