How Does The Instant Pot Yogurt Setting Work
The yogurt setting on the Instant Pot had two modes, the boil mode and the incubate mode. Press the yogurt button until it says boil for the boil mode press until it shows a timer for the incubate mode it defaults to eight hours.
The boil mode is used first and brings the milk to the proper temperature to kill any bacteria, in effect pasteurizing it at home allowing you to add your own bacteria to make yogurt safely, says Weinstein.
After boiling, the milk is cooled to a specific temperature and the starter is added. The incubate mode is what turns the milk into yogurt, holding it between 110 and 115 degrees Fahrenheit for several hours, encouraging the good bacteria to grow. The bacteria causes the milk to thicken and gives yogurt its signature tang.
While the Instant Pot defaults to eight hours for incubation, your yogurt may be done in as little as a few hours. However, its best to disturb the mixture as little as possible, since it is delicate in its early stages. If you prefer a less thick and less tangy yogurt, you can check it as early as five hours. Weinstein doesnt recommend leaving the yogurt to incubate for longer than ten hours.

Either way, this is tasty. I find that storing in single serve containers makes it an easier snack I reach for. I use little glass jars with lids. It helps prevent odors from seeping into the yogurt.

The theory behind why we need a starter culture is very simple. While preparing milk for making yogurt or dahi, the first step is to pasteurize the milk. That means, to heat milk to a certain temperature in order to kill pathogens and bacteria that is not good for consumption, However, in this process, we also end up killing active bacterias that are responsible for fermenting the milk. Hence, we need to externally introduce active bacterial cultures to the milk to help with the fermentation process.
You can either use a small of amount of yogurt that has been set at home , buy culture off the internet , or use packaged yogurt or dahi
P.S. If using store bought dahi in India for use as a starter, buy one that comes in a plastic packet vs. the plastic jars.

Instant Pot Yogurt In Jars

Nothing compares to home-made yogurt. I have been making yogurt at home since many years even before I had the instant pot.
I use the pasteurized whole milk, preferably the non-homogenized milk and sometimes the homogenized one.
Earliler, with the instant pot, I used to follow the traditional method of boiling the milk in the instant pot and then cooling it down to about 115 °F before adding the culture.
This process is lengthy and requires a lot of monitoring of the milk temperature as it cools down.
At times, the milk would cool down if allowed to cool longer and then it would get cooler than the required temperature for the yogurt. This was very frustrating and it made me think to find a better mechanism.
So I decided to try an alternative i.e to use a microwave instead of the time-consuming boiling process as pasteurization would have already taken care of the harmful bacteria.
I used the microwave to heat the milk to the required temperature and added the yogurt culture to it. My only apprehension was whether there would be any difference in the thickness or consistency of the yogurt compared to the boiling process.
This method works well with both non-homogenized and homogenized, pasteurized whole milk and the results for both have been excellent.
How To Make Instant Pot Yogurt In Mason Jars
I love making yogurt in jars especially the 16 oz mason jars using the 6 quart Instant Pot.
It is really easy to heat milk in mason jars in a microwave for about a minute and a half. The time might vary from microwave to microwave and also on the size of the jars.
Once heated, it is important to stir the milk for a few seconds until the heat is evenly distributed and the entire jar feels the same temperature. The jar should feel more than warm but not very hot.
The best way to determine the temperature is to use a food thermometer. When it reads about 115 °F, stir in the yogurt culture. However, once you get it right, you will not need the thermometer next time.
Add the yogurt culture and stir it well. Close and lightly seal the mason jars with the lids and place on a trivet in the instant pot. Select and press the “Yogt” button for 10 hours on “normal” setting. Once the “Yogt” cycle is complete, the yogurt will be done. Refrigerate the jars for few hours before serving.
It has become so easy to make the yogurt with this method, it gives great results every time and at times I end up making fresh yogurt on a daily basis.

- You may need to do this in batches depending on the size of your strainer.
- Allow the yogurt to drain in the strainer overnight.
- Scoop out the thick yogurt into containers to store and discard the cheesecloth.
Do I Need A Thermometer To Make Yogurt
I’m going to say YES, a thermometer is a must! Ideally, the yogurt-boil function on the Instant Pot would warm the milk to 180-185º F every time, but this doesn’t seem to be the case. This appears to differ from pot to pot and if the milk doesn’t reach a high enough temperature, you will end up with warm milk after 8 hours.
Invest in a decent thermometer so you can ensure your milk is warmed and cooled to the proper temperatures. This is VERY important!

What Is The Difference Between A Cold Start And Boil Yogurt
Cold start yogurt requires an ultra pasteurized milk like the popular Fairlife brand which tends to be more expensive. With cold start yogurt you skip the heating and cooling steps. With the more traditional boil yogurt, you can use more affordable regular pasteurized milk and must follow the heating and cooling steps below. I personally MUCH prefer the taste of the more traditional version, but the cold start is fun to try!
