As much as I love a good pot roast, made in a Dutch oven on the stove, slow cooker, or instant pot, I cant stand the mushy veggies.

I feel like in the crock pot if you add all the ingredients at the same time, you still have more control over the texture of the veggies than in the pressure cooker.

However, when you pressure cooker the meat, if you add the veggies at the same time, it is almost guaranteed that they will end up very mushy. It only takes minutes to cook them in the Instant Pot, while for the meat you need a much longer cooking time, especially for a tender pot roast.

I prefer to take the extra step, and first cook the beef, after which I remove it to a plate, sieve the gravy, and only after that add the veggies and cook them for just a few minutes. While this step will take you 20-30 minutes, for the IP to come to pressure and cook everything, it is definitely worth it.

Using this method, your beef and veggies will be cooked to perfection with a delicious gravy as well.

    First, you might be wondering what kind of roast to use for pot roast. I recommend using a boneless beef chuck roast for this recipe. The marbling in a chuck roast will make your pot roast extra tender and juicy.

    Season and Sear the Beef: To make this Instant Pot pot roast, youll start by cutting your chuck roast in half. Then youll season all sides both sides of the beef with salt and pepper. Be generous with your seasoning.

    Next you will sear the beef using your Instant Pots sauté setting. Browning the beef adds so much flavor. Youll heat a little bit of olive oil in the pot and add the meat once the pot is hot. While the beef sears, you can chop your onion.

    Sauté the Onion and Garlic: Once you have browned the roast on both sides, transfer it to a clean plate and set it aside for a few minutes. Add the onion to the pot and sauté until the onion softens and begins to brown. You can use a spatula or wooden spoon to scrape up any browned bits from the bottom of the pot. Stir in some minced garlic and turn off the Instant Pot.

    A quick note about adding potatoes, using baby potatoes are totally the way to go. They are the perfect size and they dont get mushy. Potatoes that are peeled and cut tend to get mushy in the Instant Pot when they cook for a longer amount of time. By keeping the skin on and not cutting them, the potatoes cook thoroughly while remaining firm. If you must use peeled diced potatoes and carrots, you will definitely want to release the pressure a few minutes before the regular cooking time, then add the potatoes and cook on high pressure an additional 8 minutes. 30+ minutes is too long to pressure cook diced potatoes.

    How To Serve Braised Beef

    This Instant Pot braised beef is perfect in tacos or rice and veggie bowls. You can also make an enchilada casserole, rolling the meat in corn tortillas and then baking with enchilada sauce.

    • Pour in about ½ cup of the beef broth and use a spatula or wooden spoon to scrape up the browned bits on the bottom of the inner pot, so that pressure can build appropriately and you wont get a burn notice.
    • Add seared roast back to the inner pot. Pour in the rest of the beef broth and then sprinkle the with additional salt, pepper, and onion powder. Top the roast with minced garlic and horseradish.

  • Rinse and pat dry roast.
  • Sprinkle the entire outside with kosher salt and place in a large bag , then place in a bowl with the top open.

    Wondering if you can cook a frozen chuck roast in your Instant Pot?

    Well, the short answer is yes! The long answer is a bit more complicated. Please note that your results will be much better if you used a thawed piece of meat, but, I know that sometimes you really want to make a pot roast and the only meat you have on hand is frozen. Been there, done that!

    If you do decide to cook a frozen chuck roast, youll want to add about 5 extra minutes per pound of cook time and skip the searing step. Since youre adding so much cooking time, I would suggest doing a quick release after the first 70 minutes, then adding the vegetables, and cooking on high pressure for an additional 15-20 minutes.

    I make frozen chicken breast in an Instant Pot all the time, but with a beef roast, you will find that the outside cooks much faster. This can mean result in the outer layers being overdone by the end of the cooking time.
