Super Bowl Appetizer: Instant Pot Cheese Dip!

Cheese: I love using Velveeta for this recipe because the results are so consistent and so delicious. I wouldnt recommend swapping it for shredded cheeses or cream cheese. The texture just wont be as creamy and dippable.

RO-TEL: RO-TEL is a combination of canned petite diced tomatoes with green chilies. It adds just the right amount of spice and flavor to this dish. If you dont have any, you could replace it with a combination of canned diced tomatoes and a bit of diced pickled jalapenos.

Meat: I like to use browned ground beef as the meat in this recipe, but you could also use ground turkey, Jimmy Dean sausage, hot Italian pork sausage, chorizo, crumbled bacon, or shredded rotisserie chicken.

Spices: Were making an easyhomemade taco seasoning blend with salt, pepper, smoked paprika, chili powder, and ground cumin. You could also replace this with some store bought taco seasoning if youd prefer.

I find colby jack perfect in this recipe, but if you wanted to use another cheese you totally could.

Or, if you like spicy sauce, double the paprika in this recipe for a spicy nacho cheese or use pepper jack cheese.

I definitely plan on making a white cheese/queso blanco sauce based on this recipe in the future.

Heres my favorite way to serve it: drizzled oh so generously over my 30 minute sweet potato refried bean nachos.

Like all great recipes, you can also tweak this to your preferences.

  • SUBSTITUTE THE MEAT Usually, ground beef is used for for this dip, but you can substitute ground chicken, ground turkey or even sausage! You could even use spicy sausage or chorizo to give it some more kick!
  • ADD TACO SEASONING? We give you the option of adding some chili powder. But you could also add some spice by using taco seasoning when browning your ground beef.
  • ROTEL TOMATOES- Often times, ROTEL Tomatoes come in different spice levels. You can play with this to your liking.
  • CHANGE THE CONSISTENCY? You can add some cream cheese to the mixture to make it a little more creamy. Add a little at a time to get it to your liking. Also, if your dip feels to thick, you an add a little milk until it thins up!

How To Make Cheese Dip In The Instant Pot

First, open the can of diced tomatoes and chiles and cube your Velveeta .

Keep in mind, traditional cheddar cheese will not work for this recipe! Also, dont drain the diced tomatoes and chiles.

Next, place the stainless steel liner into the Instant Pot. Then, place the trivet into the liner. Add one cup of water to the liner.

After that, grab a bowl that will fit in your pressure cooker .

Now, add the cheese product and the diced chiles and tomatoes to the bowl. Afterward, give everything a quick stir.

Then, place the bowl with the dip ingredients into your pressure cooker on top of the trivet.

Place the lid onto the machine and seal the valve. Using the manual or high pressure cook button set the machine to cook for six minutes.

Now, when the timer goes off, carefully open the valve to release the remaining pressure.

Remove the lid and carefully take the bowl out of the liner. Last, stir the cheese dip and serve it with chips or any other dipping item you desire.

Thats it, youve made Rotel in the Instant Pot. Kim and I hope you enjoy the snack and wish you all the best

Using A Double Boiler

Cut the Velveeta cheese into bite-sized cubes that are roughly around ½ inch by ½ inch cubes. Doing so will help the cheese to melt faster. In the lower half of a double boiler, bring some water to a rolling boil. Reduce the heat. Add a dollop of butter to the smaller vessel or the upper half of the double boiler and allow it to melt. This will prevent the cheese from sticking to the bowl. Add in the cheese to the butter and stir it in well. Mix it continuously with a spoon till it melts thoroughly.

Note: As you havent added in any milk to the cheese, you will get thick creamy cheese, and the cheese might solidify as its temperature cools.

How To Make Rotell in Instant Pot / Pressure Cooker #shorts

When I made this cheese dip, I found it to be too salty with only the velveeta cheese. So I decided to add a little bit of cream cheese to help balance out the salt. The tanginess of the cream cheese does wonders in this case. Of course, you dont have to use it, but if you find your Rotel cheese dip too salty, you can either add some cream cheese or even Greek yogurt or sour cream!

    How To Make Velveeta Cheese

January 19, 2014 by Stephanie Manley, Last Updated January 19, 2021

You might have wondered what in the world is Velveeta cheese, while I can fully solve this mystery, I can show you how to make cheese just like it. Smooth and creamy this cheese cant be beat when it comes to its melting ability.

I know what you are thinking, why in the world would you want to make Velveeta cheese? I honestly find it a great cheese for certain recipes. Honestly, would Rotel dip be as good without it? I think that answer is resoundingly no. I think it makes a delicious grilled cheese sandwich. You might wonder why I would duplicate something that feels the need to call itself both cheese and food on the package. I just wanted to see if you could make it at home, and do a better job.

So how this basically works is that you grate a couple of types of cheeses together, by using Colby cheese you get a beautiful shade of orange that is familiar. By adding Parmesan cheese you need a sharper flavor. The dry milk powder adds a nice intensity to the milky flavor we love as cheese. We blend together heated milk and gelatin to give these cheese something to melt into. This warm mixture is then poured into a loaf pan and in a couple of hours you get a wonderful loaf of smooth creamy cheese.

How To Do You Make Rotel Cheese Dip Without Velveeta

I will be the first to admit that we always make this with Velveeta . Its not an ingredient I use oftenin fact, this is probably one of the only recipes I use it in. But theres just something a little nostalgic about it to me.

That being said, you can substitute the processed cheese for cream cheese and a little shredded cheddar. The consistency will be a little different, but its still delicious.

My family typically makes this dip without meat. But, if you want to add some cooked ground beef, sausage, or a vegetarian group meat to this dip, its a great addition!

And, Im curious, how many of you make this dip at family get-togethers? I sort of think of it as a Midwest thing, but honestly I am not even sure thats true.

So, let me know in the comments if your family makes a version of this too. xo. Emma
