Cheese: I love using Velveeta for this recipe because the results are so consistent and so delicious. I wouldnt recommend swapping it for shredded cheeses or cream cheese. The texture just wont be as creamy and dippable.

RO-TEL: RO-TEL is a combination of canned petite diced tomatoes with green chilies. It adds just the right amount of spice and flavor to this dish. If you dont have any, you could replace it with a combination of canned diced tomatoes and a bit of diced pickled jalapenos.

Meat: I like to use browned ground beef as the meat in this recipe, but you could also use ground turkey, Jimmy Dean sausage, hot Italian pork sausage, chorizo, crumbled bacon, or shredded rotisserie chicken.

Spices: Were making an easyhomemade taco seasoning blend with salt, pepper, smoked paprika, chili powder, and ground cumin. You could also replace this with some store bought taco seasoning if youd prefer.

What Is The Best Cheese For Nacho Cheese Sauce

I find colby jack perfect in this recipe, but if you wanted to use another cheese you totally could.

Or, if you like spicy sauce, double the paprika in this recipe for a spicy nacho cheese or use pepper jack cheese.

I definitely plan on making a white cheese/queso blanco sauce based on this recipe in the future.

How To Make Cheese Dip In The Instant Pot

First, open the can of diced tomatoes and chiles and cube your Velveeta .

Keep in mind, traditional cheddar cheese will not work for this recipe! Also, dont drain the diced tomatoes and chiles.

Next, place the stainless steel liner into the Instant Pot. Then, place the trivet into the liner. Add one cup of water to the liner.

After that, grab a bowl that will fit in your pressure cooker .

Now, add the cheese product and the diced chiles and tomatoes to the bowl. Afterward, give everything a quick stir.

Then, place the bowl with the dip ingredients into your pressure cooker on top of the trivet.

Place the lid onto the machine and seal the valve. Using the manual or high pressure cook button set the machine to cook for six minutes.

Now, when the timer goes off, carefully open the valve to release the remaining pressure.

Remove the lid and carefully take the bowl out of the liner. Last, stir the cheese dip and serve it with chips or any other dipping item you desire.

Cut the Velveeta cheese into bite-sized cubes that are roughly around ½ inch by ½ inch cubes. Doing so will help the cheese to melt faster. In the lower half of a double boiler, bring some water to a rolling boil. Reduce the heat. Add a dollop of butter to the smaller vessel or the upper half of the double boiler and allow it to melt. This will prevent the cheese from sticking to the bowl. Add in the cheese to the butter and stir it in well. Mix it continuously with a spoon till it melts thoroughly.

Note: As you havent added in any milk to the cheese, you will get thick creamy cheese, and the cheese might solidify as its temperature cools.
