We are starting today off with a creamy tomatoey, little bit spicy, sausage instant pot soup. This instant pot creamy sausage and rotel soup screams winter comfort food. It is currently 28 degrees here in the Cincinnati area and Im dreaming of this creamy sausage soup.
There is a lot to be said for a quick amazing soup you can have when its below freezing outside. This Keto friendly, low carb, and primal instant pot soup is ready in almost 30 minutes!
Technically, the soup is prepped and cooked in under 28 minutes! But you still have to add your cheeses so lets say you can eat this soup in 33 minutes. Not too bad right? That is easy enough to do on a weekday night!
And thanks to the instant pot this creamy sausage soup is pretty much hands off while the instant pot does its thang! And boy does an instant pot do its thang so well.
Ive never typed the word thang in my life. Just thought I would use it a couple times to see if I liked it. I don’t. Thang will no longer be used on this blog. I promise.

How To Make Rotel Dip
This cheese dip recipe is as easy as 1,2,3! It honestly couldnt be more simple.
Remember, do not drain the Rotel, as the juices provide the right consistency. We do sometimes add two cans of Rotel! Of course, like most recipes, you can add in your own favorites or change the flavors/additions based on what you have on hand.

- You can certainly make Rotel Dip without meat but we absolutely love making this dip hearty with the addition of ground beef or sausage.
- Brown the meat and drain any fat. Once drained, add your Rotel tomatoes and cheese. Stir it all in the same pan until melted.

Brown the ground beef and drain any excess grease. Add beer and simmer for 4-5 minutes.
Add Velveeta and Cheddar Jack Cheese, let it melt and stir until smooth.
Add Black Beans, Cilantro, and Red Onions. Stir to combine.
Add Rotel tomatoes and any excess tomato juice until desired consistency is reached. Stir to combine and serve!
PRO TIP: I like to use my 10-inch cast iron skillet for this recipe. Cast iron conducts heat really well and makes everything super flavorful.

Full transparency, I am not a fan of grandmas Mexican Velveeta Nachos. But then my husband makes a mean batch of grilled, smoked nachos so the bar is quite high.

For those that live somewhere without Rotel tomatoes, you can just use a can of salsa that isnt too spicy. It wont be quite right, as the blend of acidity and spiciness is carefully balanced in a can of Rotel, but you can get pretty close.

Put the amount that you want in a microwave safe bowl. Then pour about 2 tbsp of chicken broth on it per 1 cup of queso. Then microwave in 30 second increments! Will come out perfectly smooth again.
My Queso came out stringy what did I do wrong?
If it came out stringy, you used shredded cheese instead of shredding it yourself from a block of cheese. Pre-shredded cheese has preservatives to keep it from clumping in the bag. Therefore, when you make it with pre-shredded cheese it wont be the nice creamy consistency because the cheese is trying to separate.
Queso came out gritty what did I do wrong?
This happened to someone who didnt naturally release it at 4 minutes. Instead they naturally released it for 15 minutes. If you naturally release longer than this recipe says, the cream cheese mixture that had just headed on high pressure, is now cooled off WAY more than we want. Therefore, if after 15 minutes, you then are adding in shredded cheese & back on saute function it will not melt right & get a chunky consistency.
