    How To Make Rotel Dip

This cheese dip recipe is as easy as 1,2,3! It honestly couldnt be more simple.

  • Brown meat and drain.
  • Add Rotel tomatoes and cheese to the same pan.
  • Stir until melted.
  • Remember, do not drain the Rotel, as the juices provide the right consistency. We do sometimes add two cans of Rotel! Of course, like most recipes, you can add in your own favorites or change the flavors/additions based on what you have on hand.

    • Rotel Dip with Ground Beef
    • You can certainly make Rotel Dip without meat but we absolutely love making this dip hearty with the addition of ground beef or sausage.
    • Brown the meat and drain any fat. Once drained, add your Rotel tomatoes and cheese. Stir it all in the same pan until melted.
  • Rotel Dip with Cream Cheese
  • If youd perfect to skip the processed cheese loaf you can certainly make this dip with cream cheese instead. Simply replace the processed cheese with an 8oz package of cream cheese.
  • If using cream cheese, I also like to add in a handful of sharp cheddar cheese.
  • Regardless of the type of cheese, this recipe can be thinned out with a bit of milk if youd like a thinner consistency.

    Instant Pot Rotel Queso Dip

See recipe card below this post for ingredient quantities and full instructions.

Brown the ground beef and drain any excess grease. Add beer and simmer for 4-5 minutes.

Add Velveeta and Cheddar Jack Cheese, let it melt and stir until smooth.

Add Black Beans, Cilantro, and Red Onions. Stir to combine.

Add Rotel tomatoes and any excess tomato juice until desired consistency is reached. Stir to combine and serve!

PRO TIP: I like to use my 10-inch cast iron skillet for this recipe. Cast iron conducts heat really well and makes everything super flavorful.

    Mexican Velveeta Nacho Review

Full transparency, I am not a fan of grandmas Mexican Velveeta Nachos. But then my husband makes a mean batch of grilled, smoked nachos so the bar is quite high.

My mom, on the other hand, thought that they were delicious. She loved the gooey cheese over the Doritos and complained just a little bit when she located a chip without what she determined to be the requisite amount.

It is, after all, our differences in preferences and tastes that makes this world such a delicious place to navigate.

    Tip For Rotel Dip Recipe:

If you want the queso spicier, use two cans of Rotel. If you want your dip thinner, stir in ½ cup of milk.

This dip is so easy to adapt to what your preference is. It is so easy and one of the best dips.

I love that you can easily add or omit things if you prefer a really spicy dip or like things more mild. It is really easy to make to suit your taste.

How To Make Rotel Dip Without A Can Of Rotel

This recipe is so delicious that youll likely want to make it even if you cant get a hold of any Rotel tomatoes.

For those that live somewhere without Rotel tomatoes, you can just use a can of salsa that isnt too spicy. It wont be quite right, as the blend of acidity and spiciness is carefully balanced in a can of Rotel, but you can get pretty close.

How To Make Instant Pot Tennessee Sausage Cheese Dip

For this recipe you actually wont be using the pressure cook function of your pot. Even though this dip doesnt come to pressure I still like using my Instant Pot because its the perfect vessel to serve the dip out of since it keeps everything at the perfect temperature. You can also make this dip on the stove in a dutch oven on heavy bottomed sauce pan.

  • Turn Instant Pot to sauté setting. If you dont know how to change the sauté setting to more it depends on the model of your Instant Pot. Some use the adjust button and some allow you just to press sauté again to cycle through LESS, NORMAL and MORE. When display says HOT add in the sausage and break it up*. Brown for about 5 minutes and then drain off any excess grease.
  • Add in the milk and the gravy mix and scrape the bottom of the pot so that all the browned bits are released. Once the gravy starts boiling turn the sauté setting to LESS and let it simmer 2 minutes.
  • Stir in the Velveeta, tomatoes and green chiles until cheese is melted. This will take another 2-3 minutes. Using cubes of Velveeta will help it melt quicker than if it is in one big lump.
  • Turn Instant Pot to the KEEP WARM setting and serve dip straight out of Instant Pot. The Instant Pot will keep the dip warm. Serve dip with tortilla chips.

Questions For How To Make Easy Instant Pot Queso Dip

Instant Pot recipes you have to make sure you follow the exact recipe. When following a recipe with a cooking appliance like Instant Pot, Air Fryer etc. the recipe is crafted extra carefully to adhere to exactly what the cooking appliance needs to make he recipe successful. Here are some questions that have come up because of altering the recipe. Make sure to follow it 100% like above & it will be perfect!

How do I reheat it the next day?

Put the amount that you want in a microwave safe bowl. Then pour about 2 tbsp of chicken broth on it per 1 cup of queso. Then microwave in 30 second increments! Will come out perfectly smooth again.

My Queso came out stringy what did I do wrong?

If it came out stringy, you used shredded cheese instead of shredding it yourself from a block of cheese. Pre-shredded cheese has preservatives to keep it from clumping in the bag. Therefore, when you make it with pre-shredded cheese it wont be the nice creamy consistency because the cheese is trying to separate.

Queso came out gritty what did I do wrong?

This happened to someone who didnt naturally release it at 4 minutes. Instead they naturally released it for 15 minutes. If you naturally release longer than this recipe says, the cream cheese mixture that had just headed on high pressure, is now cooled off WAY more than we want. Therefore, if after 15 minutes, you then are adding in shredded cheese & back on saute function it will not melt right & get a chunky consistency.
