Why Use An Ice Bath

The ice bath will cool the eggs immediately so they wont keep cooking in the residual heat. Plus, the eggs will be shocked, which makes them very easy to peel.

What if you dont have ice? No problem at all! Simply run the eggs under cold tap water for 1 to 2 minutes, until they are cooled enough to peel. The eggs might be slightly easier to peel using the ice bath method, but the tap water method is a lazy one that I use all the time.

We have found that by cooking them for 3 minutes instead of 5 minutes, they will be soft boiled. Then do the same 5 minutes to release the pressure and 5 minutes to cool.

So the equation would now be 3-5-5 to make soft boiled eggs instant pot eggs.

Does It Matter What Size Eggs I Use

It doesnt really matter what size eggs you use when making them in the instant pot. I use large eggs because they are more readily available in the stores and the price is the best one too.;

If you like them larger then feel free to use X-large or Jumbo. If you increase the size of the eggs, you will also have to increase the cooking time of the instant pot eggs, by 1-2 minutes.

The hard boiled eggs can last for up to a week in the fridge, making them the prefect ingredient to meal prep ahead of time. You can pack it as part of a lunch, crack one open forbreakfast, or turn it into deviled eggs;and avocado egg salad.

You can store them in an airtight container peeled or unpeeled after theyve come out of the ice bath. I recommend storing them whole and not sliced or halved so they stay fresh longer.

I do not recommend freezing hard boiled eggs as the egg whites will turn tough as well as watery when frozen. Plus, its not very difficult to make another batch of Instant Pot hard boiled eggs when needed!

This recipe is really simple, but you may need to do some experimenting to find the cook time that cooks your eggs just how you like them. Ive found that eggs can be finicky. You may need to adjust the cook time slightly depending on the size of your eggs, the age or quality of your eggs, and even your particular Instant Pot.

The method for making hard boiled eggs depends on whether you have a 6 quart or 8 quart Instant Pot. For most recipes, the size of your Instant Pot doesnt matter, but eggs are an exception. Ive tested this recipe again and again in both my 6 quart and 8 quart pots, and Ill share what Ive learned to help you achieve the best results.

For perfectly set hard boiled eggs:

  • 6 Quart Instant Pot: 5 minutes pressure cook time + 5 minutes natural release
  • 8 Quart Instant Pot: 5 minutes pressure cook time + quick release

Why do eggs take longer in a 6 quart Instant Pot? Really, they dont. Since the 8 quart Instant Pot is larger, it takes more time to come to pressure before the cook time starts, as well as more time to release pressure after cooking. That means that your eggs are getting a few extra minutes of cooking time. To adjust for this, if youre using a 6 quart Instant Pot, youll add on 5 minutes of natural pressure release time after the cook cycle ends. The eggs will continue to cook while the pressure naturally releases.

Does An Egg’s Freshness Affect How Easy It Is To Peel

The age of an egg does make a difference, but only when the eggs are super fresh: Freshly laid eggs are more likely to stick to the shell.

In the US, eggs can sit for up to 30 days before being packaged, and the sell-by date can be a further 30 days after that, which means that, most likely, the eggs you’re getting at the supermarket are old enough that no further aging at home should be necessary. Still, it certainly doesn’t hurt to look for the package with the closest expiration date.

If you’re buying your eggs direct from the farmer, or if you keep a couple hens out back, you may want to let your eggs sit around for a couple of weeks before using them for boiling.

Much more important to the result is the way in which the egg is cooked.

    Back when I was a lowly line cook at a fancy-pants restaurant in Boston, as the new guy, it was my job to wake my butt up at the crack of dawn to come in early and prep breakfast whenever one of the Beacon Hill politicians wanted to impress their campaign funders with boozy waffles and perfectly soft-boiled eggs topping their asparagus.

    In those days, I used the brute-force method of getting perfect boiled eggs: I boiled at least three times what I needed, knowing that at least half of them would stick to their shells and get turned into egg salad sandwiches for family meal.

    Since then, I’ve had a bit of time to reflect and refine my methodology. The secret to peeling hard-boiled eggs? Well, secret might be a bit of an exaggeration.

    Here’s the truth: There is no 100% foolproof method for peeling hard-boiled eggs, and anybody who tells you different is selling something. And I do believe I’ve tried all the methods, many, many times over. The eggs I’ve boiled over the last several years in carefully controlled circumstances number well into the thousands, but despite that, the best boiled egg I cooked this year is no better than the best boiled egg I cooked 12 years ago in that Beacon Hill kitchen.
