How Long Do You Cook A Roast In The Pressure Cooker

The big question!

The short answer? About 1 hour.

The long answer:

How long a roast will need to be pressure cooked depends mostly on how large the roast or the pieces are that you cut it into.

I prefer to cut my roasts into chunks that are approximately 1 lb in size . However, the cook time also depends on the thickness of the pieces, so there has to be some wiggle room.

To be on the safe side, you can always allow for a little extra time pressure cooking the meat I opt for about 1 hour pressure cooking on high for smaller pieces. If your roast is frozen, or it is in one large piece, you will want to add a significant amount of time to ensure that your meat is fall apart tender.

People love their slow cookers. I mean, they love them. Month after month, they continue to be one of the top-selling kitchen appliances, and the number of websites and books dedicated to recipes for them is staggering. And with good reason. At least on the surface, slow cookers offer a level of convenience that no other cooking method can match: Just dump in your ingredients in the morning, switch it on, and come home to a hot meal ready and waiting for you.

But at what cost? What exactly are you sacrificing by committing to that path of least resistance, and is it actually that much more convenient than the alternatives?

I’m going to argue that in almost all situations in which you’d use a slow cooker, you are better off choosing one of two other options: a Dutch oven placed on a rack in a 225°F oven, or a pressure cooker. I know it’s a bold statement, but hear me out before you dismiss the idea.

To start, let’s talk about food quality.

    What Is An Instant Pot

An Instant Pot is a brand of electric pressure cooker . A pressure cooker is an appliance that makes use of a fundamental piece of physics to cook food at different temperatures. To boil it down to its most basic level, a pressure cooker prevents boiling from occurring in liquids. This means that the Instant Pot can use much higher temperatures to cook food, leading to faster cooking times for food that would traditionally require a long cook time. There are two types of pressure cookers available on the market: stove-top ones, and standalone units that plug into an electrical socket. The Instant Pot is a type of standalone, electric pressure cooker. The Instant Pot does have a slow cooker function, but its important to know a few tips and tricks to make sure youre using that setting correctly.

What Kind Of Recipes Should You Not Cook On The Slow Cooker Setting

DO NOT use slow cooker baking recipes when you Slow Cook in Your Instant Pot. They will fail.

A 6-quart slow cooker that I recommend has a large bottom baking area that none of the Instant Pots have. At this writing IP does have a Ninja slow cooker competitor and it is a slow cooker first and can be baked in, but it does not have a pressure cooker setting.

DO NOT use dried beans when you Slow Cook in Your Instant Pot. The timings are too off.

The other issue Ive run across is the timing of cooking dried beans. On normal, it can even take unsoaked black-eyed peas over 8 hours to cook. But on high you can cook unsoaked pinto beans in the 4 hours youd expect.

Of course, beans are a variable in themselves since many beans will be a little old when you buy them in the store. The older the beans the longer it needs to cook.

To avoid this timing issue I recommend that you dont cook the recipes that use dried beans or substitute cooked beans and reduce the water amount in those recipes.

Make Sure There Is At Least 1 Cup Of Liquid In The Recipe

You dont need any liquid at all when using a slow cooker, but its a different story in the Instant Pot. This thing gets really hot very quickly, which means theres no time for the ingredients to release their natural juices. That can turn your food into a burnt hockey puck before you know it.

To solve the problem, you need some liquid . Youll need to adjust your slow cooker recipe so it has at least one cup of liquid. Since liquid doesnt evaporate in a pressure cooker, this added cup will still be there when youre done cooking your food. If youre worried about that creating a watered-down version of your favorite recipe, you can set your ingredients up on the steamer insert to keep them above the water line. Or, use the Saute function after youve pressure cooked to boil off the excess liquid.

How To Cook Beans In The Pressure Cooker Or Instant Pot

Heres how to cooker beans in the pressure cooker or Instant Pot:

  • You DO NOT need to presoak beans before cooking them! According to cooking experts I respect such as Russ Parsons, J. Kenji Lopez-Alt and Diana Kennedy, you can save the effort and cook them straight from dry, but still make sure to rinse them.
  • Put the rinsed beans in the pressure cooker or Instant Pot and cover them with water.
  • Add seasonings as desired, except for salt. I recommend 1 2 tsp. of spices like chili powder, cumin, garlic powder , paprika, pepper, etc., if desired. Note DO NOT add salt now as that will slow down the cooking process and toughen the beans.
  • Cook on the bean setting, but add an extra 5 minutes to make sure they are perfectly tender, especially if cooking from dry. Allow them to vent naturally.
  • ;Add salt, to taste.
  • Drain, cool completely, and freeze or refrigerate them in 1 1/2-cup increments

  • Yogurt Setting

How you use this function will vary based on the recipe and your model. Most yogurt functions will heat the pot at 180 degrees to 200 degrees,;which kills any errant bacteria in the milk, and helps the yogurt to thicken. Then it keeps the milk at 110 degrees for several hours, during which time it ferments.;Consult your manual for exact instructions.

  • Saute Setting

The sauté function works like a burner on your stove, heating the inner pot from the bottom up, and allowing you to brown meats and vegetables, and to simmer sauces to reduce them.

The sauté function on most cookers has several levels, from low to high, allowing you to adjust the heat. If yours doesnt, and the food is turning too dark too quickly, turn off the machine for a few minutes to bring down the heat. Then, if necessary, turn it back on. Its not a perfect solution, but it works well enough. Or, you can always brown the ingredients on the stove in a skillet, then transfer them to the pot for the remainder of the cooking. Note that when sautéing, the multicookers lid should always be off.

  • When To Select Low Pressure

What Is Low Slow Cooker Setting On Instant Pot?

Low pressure should be used for delicate foods like eggs, fish, and vegetables. However, all of these foods can also be cooked using high pressure for a reduced amount of time. If you are confused about whether or not to use low or high pressure, its best to stick to high pressure. This should be specified in recipes.
