I dont always prep or cook in advance, but boy am I glad when I do. Its so nice to go into the fridge and find things that are easy assemble into a quick meal.

Like potatoes! A pressure cooker makes fast work of steaming a bunch of cubed potatoes, and I use them for all sorts of things all week long.

You might be thinking that its overkill to bring out the pressure cooker for a simple kitchen task like steaming vegetables, but it’s the way that works for me.

I like being able to load up the cooker, press a button, and walk away, rather than waiting around tending a pot on the stove. My Instant Pot also beeps ten times in a row when its done, and I can hear it from just about anywhere in my little apartment so I know when my food is ready.

Using the pressure cooker doesn’t always save you time with these types of kitchen prep tasks, but I think it does make them more convenient. I actually keep my Instant Pot on the counter at all times because I use it nearly every day!

Time To Make Instant Pot Crispy Potatoes

Serves 4

Ingredients:

  • 1 pound fingerling or Yukon Gold potatoes, cut into uniform 11½ inch cubes
  • 2 tablespoons of ghee, avocado oil, or favorite cooking fat
  • Kosher salt
  • ¼ cup minced chives or Italian parsley
  • Juice from ½ medium lemon

Add ½ cup of water to the cooking insert of an Instant Pot or 6-quart stove top pressure cooker fitted with a steamer insert.

Dump in the potatoes.

If youre using an electric pressure cooker like an Instant Pot, simply press the Manual or Pressure Cook button and program it cook for 5 minutes under high pressure. Lock the lid, with the valve in the sealing position and let the Instant Pot do its thing.

When the potatoes are done cooking, turn off the Instant Pot and let the pressure release naturally . Instant Pot users can manually release the pressure manually at the 10 minute mark if the pressure hasnt completely dropped by then. You can fry the cooked potatoes right away or refrigerate them in a covered container for up to a week.

Melt the ghee or butter over medium high heat in a large skillet. Once it starts sputtering, carefully add the potatoes to the pan. Season generously with salt and pepper. Leave the potatoes undisturbed for 1 minute before flipping to brown the other side for an additional minute.

If desired, season with the juice from half a lemon and toss with fresh chives or Italian parsley. Serve!

Yukon Gold Potatoes: Yukon gold potatoes are a good all-purpose potato. They are a bit waxy and also a bit starchy . They are thin-skinned, creamy, and have a slight sweetness to them.

  • When to use: Great all-purpose potato that you can use in nearly any recipe. They are great for mashing, roasting, baking, frying.

Red Potatoes: these waxy potatoes are typically smaller than other varieties, though they can vary in size as well. Like gold potatoes, they are also thin-skinned.

  • When to use: Great all-purpose potato. These potatoes hold their shape well which is good when you dont want the flesh to fall apart in a recipe, for example when making potato salad, hash browns, scalloped potatoes, or when adding to a soup/stew.
  • When not to use: dont suggest using this variety when making mashed potatoes as they can be a bit gluey.

Russet Potatoes: Russets, also known as baking potatoes, are starchy and a bit drier than red or gold potatoes. They are thicker-skinned than red and gold potatoes and so if Im using them in a recipe, Ill usually peel the skin.

Pressure Cooker Mashed Potatoes: Flavoring

For years , this is how I made my mashed potatoes: drained the potatoes, added milk and butter. Mashed. Done.

Then one day I read that if you added the butter first, the potatoes turned out creamier because the fat coated the starch. When I read this, I was skeptical. Could adding the butter first really make a difference? It does. Slightly. Now, if I remember, I add my butter first, and then the warm milk.

How much milk? Good question!

For two pounds of potatoes, I usually use about 3/4 cup of milk. Thats just a guide. Potatoes vary. Some contain a little more moisture than others. Sometimes Im better at draining than others. Go by feel on this. If the potatoes seem dry to you, add more milk, about 1/4 cup at a time.

Cook Fast Tip: Add as much milk as the potatoes need. This can vary from batch to batch.

What happens if youre in a rush and just dump the butter and milk in at the same time? Nothing bad. The potatoes still taste great. And, if Im being honest, I do this at least 50% of the time.

Stir in whatever additions youre using, season with salt and pepper to taste, and youre done.

How To Steam Small Baby Potatoes In The Instant Pot

For baby potatoes, I prefer to use a steamer basket. Add water to the instant pot steel insert. Place the steamer basket with baby potatoes in the instant pot insert. Pressure cook at high pressure for 5 minutes, then let the pressure release naturally.

Just like making pasta, this starch needs salt as it cooks, not just at the end. So, add a healthy pinch to your cooking water. Its an easy hackthe water not only cooks the potatoes, but flavors them from the inside out.

Ensure even cooking

Wed highly recommend peeling your potatoes. Russet skin is delicious when baked or fried, but tends to be unpleasant when mashed. As for chopping, to ensure fast, even cooking, quarter your potatoes before adding to the pot.

How To Cook Sweet Potatoes in an Instant Pot Pressure Cooker

I tested this recipe starting at 12 minutes. The potatoes were cooked but too firm for my liking. When cooked for 14 minutes, they were soft and fluffy inside. I used medium size potatoes. If using small ones, 12 minutes should be enough. If using large potatoes, add 2 more minutes of cooking time.

My Instant Pot took about 8 minutes to come to pressure.
