How to Make Instant Pot Creamy Chicken Noodle Soup

When I used to make this on the stove, it used to take hours. So when I was thinking about how to make chicken noodle soup in my instant pot, I made a couple of adjustments.

First, I saute the veggies and garlic in a bit of butter or oil. Then, add the frozen chicken , broth, herbs, and BTB. Ill cook my chicken noodle soup in the Instant Pot for 3-10 minutes depending on the thickness of the chicken! It really couldnt be simpler!

I make the homemade egg noodles while the soup is cooking and add them after pressure cooking. If I cook with whole chicken breasts, I just need to cut or shred them and add them back into the soup.

I finish it off my Instant Pot chicken noodle soup with a generous glug of heavy cream. AH SO GOOD.

Why Cook The Noodles Separate

I prefer to cook the noodles separately because they get mushy when they sit in the broth too long or when you reheat them.

Generally, I dont add them to the soup before I serve it. I let each person fill their bowl with as many noodles as they like, then ladle the broth and vegetables over the top to suit their taste.

Plus, the soup reheats much better if the noodles are frozen separately. Noodles require less time to reheat, and heating them separately keeps the noodles from absorbing all the broth.

As I told my friend Michele, I like to add a little dried dill to my chicken noodle soup. The dill brings a light, almost sweet, flavor to the soup. I got the idea from my grandmother. She didnt make homemade chicken soup. What she did make were those little boxes of Mrs. Grasss soup. She loved that soup and said more than once, I think theres dill in this.

To this day, I have no idea if Mrs. Grasss soup ever contained dill. My grandmother thought it did and thats good enough for me*.

Pressure Cooker Chicken Noodle Soup: The Noodles

Now lets get serious. Its time to talk about noodles!

It doesnt matter what kind of noodles you use in this soup. Use whatever you love. Personally, Im all about egg noodles. We do need to talk about how to cook those noodles.

Dont get mad at me. Please? Please dont get mad at me.

I dont cook my soup noodles in the pressure cooker. There. I said it.

Noodles cooked in soup makes for a cloudy soup. The starch from the noodles not only makes the soup cloudy, it also mutes the flavors a bit.

In this case, I think its worth the extra timeand potto cook noodles separately and then add them to the soup. As the pressure cooker builds pressure, I bring a pot of water to a boil and cook the noodles while the soup does its thing in the Instant Pot. My noodles are always ready at the same time as the soup. Then I drain the noodles and stir them into the soup.

If you dont feel like dirtying an extra pot, I totally understand. Simply make the soup under pressure. After releasing the pressure, turn the saute function on and bring the soup to a boil. Stir in the noodles an cook until tender. For egg noodles, this takes about 6 minutes.

How To Cook Chicken From Frozen In The Instant Pot

Cooking times are based on 1-2 pounds of frozen medium-sized boneless, skinless chicken breasts.

We found frozen chicken breasts are at a safe cooking temperature at 15-20 minutes using a quick release method. We always use the manual function . When cooking food from frozen in the Instant Pot, we recommend starting at the shorter end of the time range and then adding more minutes if its not done.

The only variation to this cooking time is when chicken is in a soup. We found that because it takes so much longer for the Instant Pot to come to pressure, the chicken takes LESS time to cook. Likely 5-6 minutes. It feels a bit counter intuitive since there is more in the pot when cooking a soup recipe but we consistently found that chicken was done quicker this way.

Instant Pot Chicken Noodle Soup (5 Minute Cooking Time)
    • First, use the Instant Pots sauté function to cook the vegetables for a few minutes. You want them to soften just a bit, as they will finish cooking during the pressure cook time.
    • Then, add the seasonings, chicken breasts, broth and water to the pot. The chicken breasts will cook whole and then youll shred them after cooking. This helps to make the chicken more tender and the broth more flavorful.
    • Pressure cook on high pressure for 7 minutes, followed by a 10 minute natural release. To do a natural release, just leave the Instant Pot alone once the cook time ends.
    • Release the remaining pressure with a quick release: carefully use a potholder, towel, or long spoon to move the steam release valve to venting. Some hot steam will escape. Once the steam stops coming out and the float valve drops down, the pressure has been released and you can carefully open your Instant Pot.
    • Press the Cancel button to turn the Instant Pot off. Remove the chicken breasts to a clean bowl, plate or cutting board and let them rest for a few minutes. When cool enough, shred the chicken using one of these easy how to shred chicken methods.
    • Then press Sauté and add the egg noodles to the pot. The soup will quickly come to a simmer. Let the noodles cook in the soup for five minutes, or until they are just tender. Stir the chicken back into the soup and serve.

How To Make Chicken Noodle Soup With Egg Noodles

My recipe has these incredibly easy, homemade egg noodles. You can definitely use dried noodles, but just promise me youll make these at least once sometime, okay?

The ingredients are super simple- just flour, eggs, water, white pepper, and baking powder.

The trick to the noodles is to flour generously and let them rest between stages. Mix up the initial dough, REST. Roll out once, REST. Roll out again, REST. Enjoy the most satisfying bowl of soup ever, REST.

When youre ready to roll them out, you need to dust with a little flour with every step- rolling, flipping, cutting, tossing. The noodles expand while they cook, so youll need to keep that in mind when youre choosing how big to cut them!

I add the noodles to the soup after pressure cooking on the saute feature. They take only a couple of minutes to cook up. Youll know theyre done when they float to the top! Make sure you taste one to make sure its done!

Pressure Cooker Chicken Noodle Soup: The Chicken

I grew up eating Campbells chicken noodle soup which, if memory serves, was made up mostly of mushy noodles and salt. Gosh. I loved that stuff. Even as a kid, I remember thinking there wasnt enough chicken in the Chicken Noodle Soup. My favorite spoonfuls involved bite-sized pieces of tender chicken. And it always seemed like those cans of soup had one, maybe, of those bits in them.

Not this recipe! This recipe makes a soup thats loaded with pieces of tender chicken. And I wouldnt have it any other way.

As I mentioned in the recipe for pressure cooker burrito bowls, boneless, skinless chicken thighs are my favorite cut of chicken to use in a pressure cooker. Theres enough fat to keep the chicken moist and tender under pressure. Chicken breasts tend to get rubbery cooked in a pressure cooker. So youll rarely see me call for boneless chicken breasts on this site.

However, if you want to use chicken breasts, this is a great recipe for them. The chicken gets cut so small that texture isnt really an issue. That said, I encourage you to try chicken thighs at least once. The flavor tastes so much better than chicken breasts that I bet youll love it!

Cook Fast, Eat Well Tip: Cut the Chicken Before You Begin

Most recipes for chicken soup call for you to cook the chicken breasts or thighs whole and then cut it up after the soup has cooked. I dont do this. To save time, I cut my chicken thighs into bite-size pieces before they go into the pot.

    Good question!

    Type Of Noodles To Use

    Instant Pot Chicken Noodle Soup

You can use any type of pasta for chicken noodle soup. However, wide egg noodles are a popular choice because theyre thin and have more surface area, so it cooks quickly in the simmering chicken stock.

I recommend using about 4 cups of dried pasta to 8 cups of liquid. Any more and the pasta will absorb too much moisture, not leaving much broth. Other noodle options include ditalini, rotini, or thin spaghetti broken up into short strands.

Instant Pot Chicken Soup With Egg Noodles

If youd like to add dried noodles or dried egg noodles to your Instant Pot chicken noodle soup, I would boil them on the stove in water as instructed on the package first. Then, add them to the finished soup

I recommend this vs. cooking your dried egg noodles or pasta noodles in the Instant Pot because boiling the soup for 8-10 minutes after it has finished pressure cooking may make the vegetables soggy.

You can experiment by adding the raw, dry noodles to the soup before pressure cooking, but I only recommend this if your cook time is 2-3 minutes.

How To Make Chicken Noodle Soup In The Instant Pot

The secret to good chicken noodle soup is to make the broth from scratch using chicken with skin and bones. My mom always made her soup with a whole chicken, lots of carrots, onion, celery and sometimes a parsnip for more flavor. The end result is always the best and tastiest broth and my favorite part was always the noodles. Oodles of noodles, the more the better.

This Instant Pot chicken noodle soup is similar but it takes a lot less time and the soup is just as incredible, loaded with tons of flavor.

I did not use a whole chicken, its not necessary, but youll need about 2 lbs of chicken with skin and bones. You will want at least one chicken breast, so that you have some to shred after to add back to the soup. The biggest advantage of using the Instant Pot to make this soup is of course time. It takes 7 minutes to cook the chicken for that delicious broth.

Someone asked me if the food cooked in the Instant Pot is bland and I think the exact opposite is the truth. I find the flavors richer and much deeper. When you open that lid after cooking and the aromas hit your nose, you wont be able to wait till you have a taste of this soup.

One thing to note is I didnt cook the noodles with the chicken on the soup cycle and that is because I didnt want to end up with mushy noodles, noodles cook quick anyway, so I didnt think its necessary.
