The Instant Pot Requires Water

Because an Instant Pot uses steam to cook with pressure, its imperative to have at least one cup of liquid in the pot, or nothing will cook.

Its not exactly dangerous if you dont get this right, but youll likely either burn the bottom of your food or end up with uncooked meat or rice, or both. No fun!

Water, broth, and juices from canned tomatoes all count as liquid, but please note that tomato sauce does NOT. Its too thick to create enough steam. If you have tomato sauce in a recipe, Id recommend pouring it in last on top of everything else and not mixing it in with the water.

If youre an experienced cook, you know that meats generally release a lot of juice during cooking, so can that count? Sometimes. Ive often gotten away with just a half cup of liquid when cooking a meat-based meal, so its something to experiment with, but youre taking a risk of your meat not getting cooked.

Cooking Any Type Of Pasta In The Instant Pot

We wanted to create a recipe that you can use for cooking any type of pasta. During our research over the last few months, weve tried out at least 14 different types of pasta using this recipe. Weve had large degrees of success with almost all of them, with some variables.

Before we go into this, we have a caveat: What weve learned over many years of developing recipes in the Instant Pot is that despite this appliance claiming it works the same across the board, weve found that not to be true. So while weve had great success using this method of cooking nearly any type of dried pasta, you may need to tweak our recipe a bit based on your specific Instant Pot or other brand of pressure cooker.

Weve tried this recipe with three different types and sizes of Instant Pots with success, but be open to the idea that you may need to slightly tweak this recipe to get your exact desired results for whatever recipe you are using. We really wanted this recipe to be fool-proof but in the end there are too many variables. The variable here is the altitude of where you live, the type of pasta you are using and your specific Instant Pot. But we are confident that this recipe is pretty close to perfect, and has worked for so many different shapes and types of pasta for us.

However, were sharing this recipe because weve found it infinitely useful for making pasta, and think you will too.

Ingredients Needed For Shrimp Boil

Heres the basic list of the ingredients youll need in order to make this recipe. As always, you can find the full list of ingredients in the printable recipe card below.

  • Baby Red Potatoes can use baby gold or a mix of the two
  • Andouille Sausage try different flavors like cajun, smoked, turkey, etc.
  • Sweet Corn fresh is best, but frozen can also be used
  • Onion you can use pearl onions or roughly chopped onion

How to Cook Potatoes in Instant Pot (Boil Potatoes in IP)

To achieve 15 psi in a pressure cook, you need to set the regulator to 15psi. To know how long it takes to boil water in a pressurized cooker, we need to know the volume of water required to fill the cooker. For a 1 liter cooker, the volume of water required is 0.5 liters. Types Of Lentils And How To Cook Them In The Instant Pot

Red Lentils: These are commonly used in Indian dal and soft dishes like soups and curries. Red lentils break down quickly and become creamy, making them the perfect thickening agent for stews, soups, and purées. If youre new to red lentils and open your pot to see a pile of mush, dont be alarmed. Thats exactly what red lentils do!

For a soup/stew/curry, I like cooking red lentils for about 10 minutes in the Instant Pot at high pressure. This gives them plenty of time to disintegrate and melt into the other ingredients, thereby naturally thickening the texture. But if youre just cooking red lentils in plain water, they need just 2-3 minutes. And theyll still get mushy in this short amount of time.

Note: At Indian grocery stores, you will also find split red lentils, AKA masoor dal. These are red lentils that have had their skins removed and therefore cook a bit more quickly. Brown and Green Lentils

French Green Lentils: These lentils also hold their shape when cooked, making them perfect in salads. If you find brown or green lentils to be too mushy for your taste or use, try these French green lentils instead. They have a pleasant, peppery taste.

French green lentils take 6-8 minutes in the Instant Pot and will stay nice and firm. I prefer to cook them for 6 minutes.

The Instant Pot can be kept on Keep Warm after cooking most foods. In fact, its very handy if you are finished cooking before youre ready to serve food. Some foods like rice, quinoa, or anything that has soaked up a lot of liquid should be monitored or warmed in a more moist environment to prevent dryness or burning. You can select Keep Warm cycle before you start cooking or after.

Adding Flavor To Lentils

But if you want to make your lentils more flavorful, youll need to add some more flavorings . Lentils are sponges, so they absorb the flavors of the ingredients in which theyre cooked.

I like to begin my lentils by sautéing some aromatics in oil, such as onion and garlic. And because I like things spicy, I often sauté some chili peppers too. If Im cooking Indian food, Ill also add in cumin seeds and ginger before adding the lentils. Or, if Im making Mexican-flavored lentils, I might sauté an onion, green pepper, and jalapeño pepper.

After you cook your aromatics, its time for more seasonings. You can keep it simple with just salt and pepper, or you can add an array of your favorite spices, such as cumin, paprika, or turmeric. The exact spices will depend on the flavor profile/specific cuisine you are cooking. I also love adding fresh herbs to the cooking liquid for more depth of flavor. Sturdy herbs like thyme, rosemary, oregano, sage, and bay leaves work excellently.

Finally, I like to cook the lentils in vegetable broth instead of water since it gives the lentils a little more richness and flavor.

The Truth About Instant Pot Recipe Cook Times

The most important note I think any new Instant Pot owner needs is this:

It doesnt really cook things in 30 minutes on those 30-minute recipes!

It really irks me that so many recipes are saying whole chicken in 30 minutes! and perfect rice in 10 minutes! because if you hung your hat on those times, dinner would be late.

It takes 10-20 minutes to get up to pressure, depending on how much is in the cooker, and some recipes call for a natural pressure release for another 15 minutes at the end which means your 30 minute recipe is nearly doubled.

Be sure to do that math on the whole process as you plan when you need to get started cooking something!

Can You Boil Water In An Instant Pot Without A Lid

Yes. You can boil 1-2 cups of water in an Instant Pot using the sauté function with the lid off. Larger amounts of water will boil faster using the lid on and utilizing the pressure cooking function.

But with the lid off, the sauté function works great for small amounts of water. And it will take about 3 minutes to boil water this way.

Perfect Rice In The Instant Pot

How to Cook Potatoes in Instant Pot (Boil Potatoes in IP)

Brown or white, you can get perfect rice every time in the pressure cooker. You can use the rice button that is included as a feature on almost all Instant Pot models, but there are a couple of nuances like rice variety, differing water requirements, etc, that make it a little more difficult than it appears at first glance.

Bonus: Rice Pudding

Ive been making extra rice all the time because my kids looooove rice pudding for breakfast. After I cook a batch of rice, I just stick the whole IP in the garage and then in the morning, I cover the rice completely with milk or dairy-free milk and set the Instant Pot to the rice function .

In less than half an hour total, with no stirring, babysitting or worrying about the pot boiling over, we have perfect pudding consistency. UPDATE: Ive since done it in a mere 5 minutes on manual!

Add a few big chunks of butter, a splash of vanilla or almond extract, and maple syrup to taste, and stir it all up. Serve warm with cinnamon . My kids like to add extra milk to cool it down and to add moisture to cold pudding.

Id recommend allowing a natural pressure release because dairy products foam up a lot, OR get this reusable mesh cover to keep the foam down. It just sits on the top of the liquid.

Can You Freeze Cooked Beets

Yes, you can freeze cooked beets and its pretty simple. Once the beets are cooked, allow them to cool completely. You can place them in an ice-water bath to speed up the process.

Once cool enough, peel off the skins and cut off the tops and roots. You can freeze them whole, cut them in halves, slice or chop the beets up into cubes. Spread them out on a flat tray, sheet or plate and place in the freezer to flash freeze for about 1 hour. This will prevent the beets from getting stuck together while freezing.

Once the beets are almost fully frozen, transfer them into freezer bags. Beets will keep for a long time but are best used within 6 months or so. Some people recommend vacuum sealing them due to their high water content, which will prevent freezer burn. You can also simply remove as much excess air from the freezer bag as possible and seal it very tight.

Defrost the beets in the fridge overnight or in a microwave and then use as you would any regularly cooked beets.

Instant Pot Uses: Natural Release Vs Quick Release

When you start reading through Instant Pot recipes youll see reference made to natural release or quick release. These terms refer to the way the pressure is released from the Instant Pot.

With a natural release, you let the Instant Pot sit for around 15 minutes after the recipe is finished cooking to allow the pressure to gradually lower. At the end of the 15 minutes, or after the pin has dropped, you can safely open the lid.

With a quick release, you move the nozzle from sealing to venting as soon as the recipe is finished cooking. Use caution. The steam can cause burns. I like to use a wooden spoon or similar utensil to move the nozzle from a safe distance. Once the steam has released from the Instant Pot , it is safe to remove the lid.

A natural release is better for recipes with high liquid content, like soups or broths, or for thick recipes like chili or porridge. A quick release is best for steaming vegetables or cooking other delicate foods at risk for becoming overcooked.

How To Cook With The Instant Pot

How you use your Instant Pot depends on what you’re cooking. But, many recipes — especially those involving meat — tend to follow this formula:

  • Set the Insant Pot to Saute mode. Add oil and brown your protein, like beef or chicken. Aromatics, like garlic and onion, are browned in this step, too.
  • Hit the Cancel button. Now tap Manual, followed by Pressure. Tap it again to go into High Pressure mode Use the plus and minus buttons to set the cook time.
  • Place the lid on the Instant Pot and lock it into place. You should hear a lovely little sound letting you know it’s locked.
  • Make sure the valve built into the lid is in the Sealing position.
  • When the Instant Pot builds enough pressure, the red button will pop up. Now the cook time will officially begin.
  • The above steps can vary quite a bit, depending on the recipe, but most of what I cook in my Instant Pot follows that sequence.
